Tonight I'm going to a friends house for a red neck surf and turf dinner.

No clue. We were going to go out for dinner, but an ugly cold reared its head yesterday, so I don't feel well enough to go out. I do not feel up to making anything either, so if I had to guess we are going to do take-out somewhere. It is just DH and I for the evening and he is going to SC to visit family tomorrow. I would have gone if I hadn't had some deadlines to meet by the end of the week. Now that I am sick, it is just as well that I am not going.

Put out crackers, meat, cheese, finger veggies, and fruit. No cooking, and people can nibble without need for a full blown sit-down dinner.

The only people in my house are DH and kids, who are all adults or old enough to feed themselves if I don't. The youngest teenager will be sure to eat ramen noodles if I don't feed him something else.

Tonight is nibbles. Tomorrow is black eyed peas with ham and spinach. I got a good price on spinach so am subbing that for collard greens. Thursday is salmon and sauteed cabbage. Some time after that will be crock pot chicken. I've got time do decide how to do it.

We are going out tonight. DH's parents wanted to go out. So we have a reservation for 13. Hopefully the food is good, it's a new place for us. Some of his family have been though.

I had dinner at Cracker Barrel with friend. Kids menu of 3 battered chicken strips and some mac and cheese. Total with tip $8.
Tomorrow night will be stew in the crock pot over Bob Evans pre-made single serve mashed potatoes.

I had a bunch of chicken, some shredded, so I made chicken tacos. Also needed to use up tomatoes and avocado I had. Going to use the rest of the chicken with my New Years collards and black eyed peas. Pork butt is frozen so can wait until later. I've been on a mission to waste less food lately.

Last night: Salad, meatloaf, mashed potatoes and corn. Cost, roughly $6.00 for two of us.
Tonight, last of end of year leftovers. (including last night) Friday: We have a memorial service, so will probably catch something out on the way back. Have gift cards... Saturday, Pork tenderloin, salad, sweet potatoes, green beans. Around $9. Will use leftovers when I go back to work. Sunday, thinking chicken... not sure yet.

tonight, I need to cook for the pups, since I'll use the last of what's in the fridge for their dinner tonight. that will be ground <whatever protein is on sale> with wilted kale. I have the kale already, the meat will be ~3lbs and in the $9 vicinity.
for myself, I've got Brussels, broccoli, eggplant, mushrooms, and a butternut squash half that need to be cooked. I'm not sure what I want to do with it all. what say you all? my ideas are below. I also don't have proteins for myself unless I raid the freezer or buy more. I'm not entirely sure what's in there right now other than the BSCB I threw in on Monday since I knew I wouldn't cook them before their date.
butternut squash soup eggplant parmigiana - can't happen tonight, I need the fry pan for the pups' cooking roasted veggies with pasta and cheese. would be Brussels, mushrooms, butternut and tossed with baby spinach roasted veggies, adding tiny potatoes, tossing in pesto mushroom risotto to pair with <something> - can't happen tonight, need the big fry pan.

Tonight pork chops, stuffing and salad. Estimated $3? I don't think my dad let me pay anything towards the pig last year.
I need to figure out what's left besides hamburger in the big freezer.
ETA: the pork chops turned out well. I flipped through my pork recipes looking for something to jazz up the chops. I ended up sauteing apples and making a sauce. It was delicious.

when I got home tonight, I checked out the condition of the remaining produce. I pitched a few things, including the butternut. I also marinated some BS chicken thighs I picked up when I stopped for proteins for the pups. black peppercorn, yum. I'm going to grill pan that in a little bit, to have for salads and such.
dinner tonight ended up being a couple slices of pizza that I forgot I had leftover from Sunday. I added spinach and some more cheese before reheating in the oven.

I made a bunch of things since my son was home and wanted to try quite a few things. We will be eating leftovers for the next week, supplementing with fresh veggies and fruits. I am so happy I don't have to think for a while about what to cook.

Tonight is probably chicken in some sort of way. Isn't that the truth! I'm trying to eat better and cut back the carb laden pasta dishes which is another challenge. And I want to come up with some lunch ideas for myself so that's more planning and cooking! There's definitely not enough reliable leftovers to just take those. Maybe if DH starts eating less. I had a super late lunch today. I'm thinking a grilled chicken salad for myself to balance out lunch.

I'm trying to waste less, and use up pantry staples so I don't have to move them. tonight I used up the remaining viable mushrooms and the rest of a package of diced pancetta, as well as a carton of chicken stock and a package of frozen spinach.
I made risotto, and added a black peppercorn grilled chicken thigh to my bowl. I grilled the chicken this am after marinating a bunch overnight.

I baked some greek marinated chicken with roasted broccolini and potatoes tonight. I love broccolini. I had a huge aversion to regular broccoli while pregnant with DD and I'm still not over it.

I picked up a half dozen fresh-out-of-a-wood-burning-oven bagels on my way back from my mammogram. I have smoked salmon, cream cheese, sweet onion, dill and tomatoes. Plus, I made Bubby's Authentic Jewish Penicillin Soup yesterday. A nice kosher supper, and I'm not even Jewish!
