tonight I'd like to use up the eggplant that is still in the fridge, that I hope is still good. I looked up some recipes online that aren't eggplant parmigiana, but nothing is really calling me. do y'all have any ideas you can share? I have a fairly well stocked pantry, but can stop as I drive by the grocery store on my way home if needed. thanks in advance Moussaka

I had a late showing request, and I hadn't cleaned the stove since grilling some chicken in a messy marinade. stove grates went in the dishwasher immediately when I got home, and the stove top was off limits for tonight. I checked the eggplant, it will be okay for one more day. but it's getting cooked tomorrow for sure.
dinner tonight was a Caesar salad with rotisserie turkey. one romaine heart, croutons, cheese, and some reheated dark meat turkey from a package I picked up yesterday.
$3.98 for a big turkey thigh, this wasn't much from it. $1.99 for 3 romaine hearts ? cheese, croutons, dressing.

Last night I broke down a 5 pound uncurled ham that I bought over the holidays into several ham steaks and a ton of ham chunks (for Mac n cheese, soup, etc.). I Used some of the chunks to make a skillet dinner: I Sautéed caramelized onions, chopped green peppers, purple cabbage ribbons, baked potatoes cut into chunks, and the ham in EVOO with salt and pepper and red pepper flakes.
Tonight is burgers on the grill, big salads, and steamed broccoli.

I had DD put a roast and potatoes and carrots in the crock pot for dinner when she got home from school, around noon. Yay for not having to cook it myself.

another Caesar with turkey tonight. I got home late with the pups and didn't feel like cooking anything.
tomorrow I intend to make pork and broccoli (and some other veggies) over rice noodles, using the same sauce I made for beef and broccoli earlier this week. the pork is dated Saturday and I'd like to use it.
hopefully that eggplant makes it to Saturday. roasting it will hide much of the brown spots, I think. moussaka sounds interesting. can it be done with ground meat other than beef, though? I'm not a fan.

Instant pot lasagna tonight. Maybe $10? I had to get DH to stop and pick up another box of pasta.
Friday I don't know. DH said something about going out. We are eating out Saturday so I will try to come up with something. We ate out too much last week.

I'm not sure I have ever had lamb, either. I've been told by friends and family that I cook with, and who know my tastes, that I probably wouldn't like it. probably better that I try a bite off someone else's plate at a function or whatever, first. 🤷♀️
for moussaka, I was thinking more like ground pork/turkey/chicken, or shredded poultry?

Last night was the remainders of leftovers from the past few days. Tonight will be chicken stir fry and for dessert I believe that I will have sliced apple with caramel sauce.

Saturday night dinner out.
Sunday night DH is grilling steaks. Green beans and sweet potatoes on the side. Haven't bought the steaks yet but it's gonna be 60 so he wants to grill.

I skipped the frozen dinner last night and opted for spaghetti, sauce and 3 tiny meat balls with part cheese over the entire plate I think tonight will be frozen dinner $2.50

it feels like it has dropped about 15 degrees in the past hour, that's not okay. I'm about to make a batch of minestrone soup, today instead of tomorrow. the eggplant didn't survive til today, oops.
in order to make the minestrone, I needed to pick up a zucchini and some carrots (~$3?). everything else was already here. I'm trying to meal plan around what's in the pantry as much as possible, so there will be less to have to move. I'm making some great progress!

I haven't been grocery shopping yet this year. I need to go tonight. I will be doing a pot pie for dinner and tomorrow I will be making split pea and ham soup. Everyone will appreciate this --- I made scones and mis read the recipe and did 2 Tbl spoons of baking soda instead of baking powder. I ended up tossing the whole batch they were so bitter. They looked so good too.

cooking tonight will consist of ground turkey and wilted kale for the pups. turkey was 2-for-$7 this weekend, for 93/7 fat content. that works! I'm going to use up the last of the kale I bought last week, too.
for myself, dinner will be a bowl of minestrone and a small Caesar salad. I've got one romaine heart leftover from last week, so I'll probably have to pitch the outer layer of leaves. that's fine, to pair with soup.
ETA: I nixed the salad and just reheated more of the soup. i don't feel like emptying the dishwasher tonight, and the pile of pans would have been big enough when you consider the big fry pan and lid to cook for the pups. I'm tired lol...

I had lunch at the doctors office site. It's a fairly large office and inside by the shoe and medical equip store is a lunch place. They have good food, lots of salads, and various sandwiches, also dessert. It was really good.
Tonight I had spaghetti with left over meat balls and added mushrooms, not bad.

Thursday night will be spaghetti. Estimated costs $6. DH is potentially getting a filling so I needed something soft.
Friday we may go out or get take out.

Tonight is going to be spaghetti and meatballs. I am still attempting to clear things out of the pantry before I box them up in the kitchen re-model late next month. That should last me a few days and than I will probably make my Moroccan Lentil Veggie soup for the weekend.

I have no idea what I want to do tonight, and no protein ready to go. I need to stop to pick up something for the pups since they will use up the last of the kale/turkey with dinner tonight. I can easily add a package of something for myself. so, ideas welcome, please!
I have pasta, rice noodles and tiny potatoes for starches. broccoli, Brussels sprouts, cremini mushrooms and tomatoes for veggies. also, romaine hearts for salads.
