I bought a large beef roast at the Fresh Market a few days ago. They cut it in half. Half # 1 is in the slow cooker and it all smells wonderful. I added a lot of onions and then carrots and tiny potatoes. Can hardly wait till 5 PM.

Give me some ideas too. I didn't thaw anything either. I'll probably end up throwing a fish fillet in the fridge to thaw when I go home for lunch today. not sure if this will help you or not, but I ended up picking up a rotisserie chicken for myself. I shredded it, and will pick from it this weekend before I leave. tonight, I roasted a bunch of veggies and boiled off some pasta. tossed the pasta, veggies, some chicken and parmesan cheese.

I found a whole chicken in the freezer. I'm hoping it will be thawed by tonight so I can put it in the instant pot for dinner.

I went out for a late lunch today, probably ate around 2? I went to the Italian place with huge portions, and ordered a pasta primavera aglio e olio off the dinner menu. I had a cup of soup and bread, and a little of the pasta dish and packed up the rest for two more meals with the leftover rotisserie chicken mixed in. I may saute mushrooms prior to adding the leftovers to the pan, just feels like it would be a nice addition!
dinner tonight will be a snack, much later. if I am even still awake that long. $21 for three meals. plus, great conversation with the bartender I know, and some regulars I recognized from when I used to stop on Mondays on my way to 2nd shift.

We went out for dinner. Had prime rib, baked potato, and salad. It was very good, brought DD home a cheeseburger. Heavy dinner tonight but so good. Then I just made sugar cookies, haven't for some time.

I don't know. I've eaten pears that were trying to go bad and kiwis this morning with coffee. That's it so far.
DD and hubs ate cookies, I did get 4 of them, they ate them all, LOL! that's why I don't bake them often.
I have a bit of leftover soup think I will eat. There's a couple of pieces of frozen pizza, DD can eat. Yeah a healthy diet. Hubs only likes fruit if its loaded with sugar and DD will eat apples, peeled. Need to make sure they take vitamins.

Finally made spaghetti Saturday night.
Thursday DH thought his mouth was still too sore. He had scrambled eggs and soup. I had a serving of the taco salad I made for my lunches.
Friday night pizza out with DH's family.
Spaghetti got cooked Saturday night.
Sunday night baked steak, mashed potatoes, gravy and broccoli. Estimated costs $5? The meat is from the cow my family got and I think I allocated all those costs to the ground beef packages.
Monday night we have an event that includes dinner. Our gift is $50 so I'll use that as costs.
I made applesauce with the 4 remaining apples. It was very good.

Since I was out, I picked up a rotisserie chicken from the grocery store across the street. I'll make mashed potatoes and fried mushrooms with onions and sour cream to go with it.

DBF found some deeply discounted corn beef at the grocery store. He was excited about it and is cooking one tonight. I vaguely remember my Mom making corn beef hash when I was growing up, but this doesn’t appear to be the same thing. I’m not sure what corn beef hash actually was, and I don’t know what this corn beef that DBF got so excited about really is. But him cooking it means that I don’t have to worry about what’s for dinner tonight. He told me what sides he’s cooking with it, but I’ve forgotten. Even if I don’t like it, I won’t complain.... I never do when he cooks. Even if it’s not what I prefer, I just say “Thank you baby”. If I REALLY don’t like this corned beef, whatever THAT is, I’ll just eat some leftover chili for dinner.

Last night I made roasted Brussel sprouts with bratwurst and potatoes with a honey-mustard sauce drizzled over it.
Pretty tasty.

last night was a Caesar salad with leftover rotisserie chicken and some crusty bread with cheesy seasoned oil.
tonight I am going to roast some eggplant and mushrooms to toss with the leftover pasta primavera from Friday. I may add some chicken, idk. I also need to cook for the pups tonight. 3lbs of ground beef from the village market, since I couldn't get near Market Basket - $13.49.

Last night I made a one dish meal consisting of sausage with sweet potato, mushrooms, spinach onions and garlic tossed with orzo. It was so good and I made so much we're eating leftovers for dinner.
I love coming to this thread for ideas when I can't figure out what to make for dinner.

Tuesday night is peanut chicken zucchini noodles. Estimated costs $9.
Wednesday night unstuffed bell peppers. Estimated costs $8.
Thursday night leftovers. This will work well since we have an event to go to Thursday evening.

I cooked a nice fresh pork roast in the instant pot, for some reason kept smelling like onion, will open it soon and see what is going on. It didn't smell like that when I put it in.
Probably roast, maybe mashed potatoes, peas, green beans or something like that.

The group of widowed choir ladies go out to dinner after practice. Last night was to a place called Tacos 4 Life. The food is yummy and not super expensive. As usual, the group of us do more laughing and story telling to catch up on our life then we do eating.

I still haven't gotten around to making my veggie soup but I will be doing that this weekend. I couldn't eat any more spaghetti so I broke down last night and got some Chinese food. My grocery store is having a special for CNY and I have leftovers for the next few days.
