last night, I met a couple friends for the late game at a new-to-me sports bar. we had a basket each of fries and onion rings, and couldn't finish the pizza pan spread of pulled pork nachos. three heartily poured drinks apiece, and the bill came to $35pp including tip.
football season is now over for me, so its backto work on purging the house. last night was a nice break, even if the end result wasnt what I wanted.

had a friend stop by around 3, and I put out a platter of cheesy seasoned oil, pesto, and crusty baguette. I'm still full, but I feel like I should make a salad before calling it a night.

Saturday night DH picked up a pizza. Probably $20? Leftovers for Sunday lunch.
Sunday night I did a Boston butt pork roast in the instant pot. Mashed potatoes and gravy on the side. Didn't get to the vegetable. Homemade apple crisp with vanilla ice cream for dessert.
Maybe $4? Dad bought the apples for me and the roast was from last year's pig that he wouldn't take money for.
Monday night beef fajitas. Estimated cost $10.
Tuesday night DH says leftovers.
Wednesday night teriyaki pineapple chicken, rice and broccoli. Estimated costs $7.50.
Also on the meal plan for the week instant pot lasagna.
For lunch this week I'm doing Budget Bytes mini garden turkey loaves meal prep. I used ground beef since I have a freezer full and no turkey.

yesterday while I was out shopping, my mouth started watering with the smell of Red Robin. ugh. that means I'm crazy anemic again, which usually happens a couple days before shark week. sorry for TMI. lol..
sister gave me an idea to get some iron, that i can live with - tacos. I bought a sirloin tip at the neighborhood market last night, ~1/2lb so I'll get a couple meals from it. I'll thin slice it after cooking and load up the tortillas with veggie toppings.
cost - $5 for the beef. everything else is already on hand.

I'll totally do this up again, but with pork next time. also - I cut the amount of honey listed, and it was still a little too sweet for me. easy beef and broccoli

I have some BSCB I have to cook. Suggestions? that's a complete blank slate. what else do you have on hand? are you craving anything in particular? first suggestion is to roast some veggies, saute a BSCB and shred it, and toss all of it with some curly pasta and grated parmigiana.

dinner for me is a spread of pesto and cheesy dipping oil for ciabatta bread, and some pizza rolls I thought were a good idea this afternoon when I picked them up. I'm already feeling the pain from this afternoon's experiment with beef and broccoli, so I may as well go big with it. 🤷♀️

I use Mirin instead of rice wine or cooking sherry. I used to keep a batch in the fridge in shaker bottle, when roommate and I were cooking all the time. we did a stir fry at least once a week. I've gotten away from it, and I need to bring it back.

Decided to make this. I was transferring new ly ripened avocados from the paper bag they were in to the fridge and there are some older ones still in there. So I'm making guacamole with the older avocados and will have chicken nachos with the BSCB. Tomorrow I can do street tacos with the leftovers. www.thereciperebel.com/instant-pot-shredded-chicken/

I boil to package directions, saving some pasta water before I drain. throw the past back in the pot and add the roasted veggies and shredded chicken. drizzle a little olive oil, add some cheese and toss. if it looks too dry, add in some pasta water to make it a little saucy. veggies roast at 400 degrees for varying cook times. or, you can saute in the pan with the chicken.

I made stir fry for dinner with my BSCB. I decided to steam the frozen veggie mix I had in the microwave instead of letting it make a fuckton of water in the pan. Why it took me this long to figure it out is beyond me. Also put some of the chili oil DS made the other day in it. Sooo good.

My son had made avacado sauce for pasta. It was spicy, but very tasty.
He roasted tomatillos, a couple kinds of peppers and some onions and then blended them with a couple avocados and used it as sauce for the linguni or fettucini. No milk or cheese, but a very rich sauce.

I’ve been cooking full meals every night since before Christmas because the boys were home and YDS’ girlfriend was here for the past 5 days. Over the past few days, they’ve devoured a roast chicken, a huge pan of homemade lasagna, marinated and grilled BSCB, New York strips, and huge batches of assorted steamed/roasted/sautéed veggies. I went simple tonight. I breaded and baked some BSCB, steamed some broccoli, re-heated some baked potatoes and some roasted sweet potatoes and rice pilaf, and added some carrot sticks. Fridge is now empty of leftovers, so I need to start fresh tomorrow. 😱

I am still in the clean out the pantry and freezer stage, so tonight (since choir practice has been canceled) is going to be a beef stir fry with a couple handfuls of frozen peppers and onions.
For lunch today, instead of eating at the VA, it's going to be the small container of Wendy's chili with a french croissant.

tonight I'd like to use up the eggplant that is still in the fridge, that I hope is still good. I looked up some recipes online that aren't eggplant parmigiana, but nothing is really calling me. do y'all have any ideas you can share? I have a fairly well stocked pantry, but can stop as I drive by the grocery store on my way home if needed. thanks in advance
