Not hungry. I stopped by Publix today for the senior discount, and the guy giving samples gave me what I would call a full serving of ginger/apricot pork tenderloin with rice pilaf that had apricots and pecans in it. Yum. But I swear there were six or seven bites of the tenderloin and more than enough of the rice pilaf. DH wasn't hungry either. He has been really tired lately and just wanted oatmeal. Unfortunately, I had ground sirloin defrosted so I had to cook it, anyway. So we are having pasta or chili or a casserole tomorrow. I am not going to throw away $5 worth of meat.

working on leftovers today. lunch was a bowl of minestrone and some crusty bread. dinner will be some mixed greens with vinaigrette and a couple slices of pizza from Sunday. nope. had some returns to make a couple exits up the highway on my dinner, and there's a Chipotle in the same plaza. they were slammed, and it took forever. it also wasn't that great, so likely fixed any Chipotle cravings I'll have for awhile.

Chicken. Some way with some sides. That's as far as I've gotten. I sprained my ankle Saturday and so far it's what can I cook fast while sitting on a stool meals. Thank goodness for Walmart grocery pick up, it was that or send DH to shop and have him spend a fortune on crap we don't need. I hope at least there is a good story behind the sprained ankle... Sadly, no. Unless my lack of grace and balance is amusing. Which it kind of is. I was walking in my aunt's yard (the same yard I've been walking in since I learned to walk) & stepped down the tiniest slope wrong, twisted my ankle and went down. Skint my knee through the jeans, and the jeans are a little skint too but not ripped. It's still annoyed but at least I can hobble around and not use crutches.

Well, the chick pea patties were a hit! DH and I both liked them even though they weren't what we expected.
Tonight will likely be cavatelli or specialty ravioli we bought at the Italian deli we found in Dallas. Wish we had some cannoli for dessert!

www.budgetbytes.com/2017/01/herb-roasted-chicken-breasts/I did a bastardized version of this on boneless breasts for dinner last night. The butter and garlic, a seasoning blend that had most of the stuff in it and some basil. Covered and baked 30-40 minutes (I didn't really time it). Roasted broccoli, and black eyed peas with it and I didn't have to baby sit anything.

Leftover chicken sausage from the other night and I baked a sweet potato. Total cost maybe $3-4. I baked two potatoes and I'll have the second one with my lunch tomorrow.

I use legs and thighs, and instead of making the sauce separately, I just push the chicken aside when it's done, and add the onions, garlic, ginger, tomatoes and then coconut milk directly into the same pan, and let the whole thing simmer. The chicken absorbs more flavour from the sauce that way. Oh, and I used only a half teaspoon of cayenne pepper and use regular coconut milk, not light. It's extremely easy to tweak it according to your own tastes, as long as the chicken is coated in cumin, cayenne, ground coriander and turmeric. The aromas....OMG!

Brazilian foods are rarely spicy. beyond flavorful, yes. but rarely spicy. now I'm really intrigued.

Tonight is going to be bacon and pancakes so that I have pancakes for work next week --- I add cinnamon & vanilla to my pancakes so I can just eat them dry. Still really tasty but I don't need to worry about mess.
I am also starting a pot of Moroccan Veggie Lentil soup for the weekend. The spices make it really flavorful and I will throw in a extra can of beans to make it more hearty.

I'm not eating it anymore!" (He also hates mushrooms, and I cook my rice in mushroom broth. He doesn't know, and usually has 3 helpings.)

I shredded a huge chicken breast and chili seasoned it with a bunch of super hot pepper dust, then the typical nacho fixins. it was probably half a bag of Santitas chips.
<burp> if anyone needs me, I'll be curled up in a ball listening to the Patriots game.

Made sauteed roasted pepper raviolis and seared scallops for lunch/dinner. (My dinner, DH's lunch. Mid-day meal.) Had some chianti and now we're both going to sit on the couch and watch movies this afternoon. It's damp and warm here, so a good time to relax!
