Dinner was baked ham, carrots, cauliflower, and hominy, neither one thought that was very good, also couple of baked chicken quarters and rice aroni. DH tried to get me to bake a cake and ice it, said nope they didn't need it and he and DD will get DQ tomorrow with his mom. That's enough.

Garlic Lover's chicken- Perdue Perfect Portions chicken -$4.99 (sale and coupon) Parsley - .99 garlic- beats me milk-1.39 bread crumbs-no idea butter-?
Leftover potato, carrot and onion bake with some leftover fried rice thrown in-?
I generally buy the stuff and then about an hour before they die, I do something with them. That and since the trash goes out tonight I do what I can to use it up.

Garlic Lover's Chicken Recipe The garlic and lemon are great together on this breaded chicken. I've served this several times for special-occasion dinners. —Janice Steinmetz, Somers, Connecticut Ingredients 1/2 cup dry bread crumbs 1/3 cup grated Parmesan cheese 2 tablespoons minced fresh parsley 1/2 teaspoon salt, optional 1/8 teaspoon pepper 1/4 cup milk 6 boneless skinless chicken breast halves (1-1/2 pounds) 1 to 2 garlic cloves, minced 1/4 cup butter, melted 2 tablespoons lemon juice Paprika TOTAL TIME: Prep: 15 min. Bake: 25 min. MAKES: 6 servings Directions 1. In a large resealable plastic bag, combine the bread crumbs, cheese, parsley, salt if desired and pepper. Place milk in a shallow bowl. Dip chicken in milk, then shake in the crumb mixture. 2. Place chicken in a greased 13-in. x 9-in. baking dish. Combine the butter, garlic and lemon juice; drizzle over the chicken. Sprinkle with paprika. 3. Bake, uncovered, at 350° for 25-30 minutes or until a meat thermometer reads 170°. I can't remember where I got it from. I want to say the Taste of Home site but don't quote me on that. I added an extra garlic clove and skipped the paprika. Only because we never use it so I didn't feel like buying it. Good thing is you can tweak these to fit your tastes. Tagging GRG a/k/a goldenrulegirl as she wanted the recipe as well.

Black bean pulled chicken. Around $8. Hoping I get some leftovers to freeze. It's 15 here this morning so I wanted something nice and warm for dinner.

I ended up filling up tortillas with last night's pork (are we now calling it porn? tee hee....) loin and toasting them in butter on the stove. Nummy! I decided I'll brown the ground beef tonight and add leftover Alfredo sauce and broccoli if we have it, and if not, green beans. I need to make the sushi tonight before the avocado goes bad.

I'm working on getting better about not wasting food. last night, I picked up a clamshell of both baby romaine and baby spinach, since they were on sale. I blended the packages and put the mix into a large container for the week.
tonight's dinner will be a salad with those mixed greens and some chopped veggies that needed to be used or pitched tonight, and I'll top with chopped chicken teriyaki that's leftover from Friday night.
cost is minimal.

I defrosted thick cut, boneless pork loin chops for dinner tonight. But I have no real plan for what I want to do with them. Any suggestions?

how thick? cut a pocket and stuff with garlicky spinach and cheese. sear the outside in a frying pan, then move to the oven to finish. look it up to confirm (I always have to) but I think 375° for 20-30 minutes.

Chicken sausages sauteed with onion served over orzo. Side of roasted broccoli.
Cost somewhere between $5-10. I'd rather be drinking my dinner so it's something.

A small Black Forest ham, homemade home fries, steamed broccoli.
Simple and quick because I had a crazy stressful day.
Cost? $12 with leftover ham for sandwiches or reincarnation. :-)

Chicken. Some way with some sides. That's as far as I've gotten. I sprained my ankle Saturday and so far it's what can I cook fast while sitting on a stool meals.
Thank goodness for Walmart grocery pick up, it was that or send DH to shop and have him spend a fortune on crap we don't need.

Depends on if I'm eating alone. If it's just me I'm going to have a sandwich. If not I'm going to try making pinto beans in the electric pressure cooker. Cornbread on the side.
