kadee, what about garlicky kale? I love that as a side. dinner tonight will be a stir fry. I had cut up a bunch of veggies to tempura fry last night and things went a little differently than planned. I still made the japchae I planned, and have leftovers for lunches. no idea on costs, I know I spent $14 on chicken and veggies at Market Basket on Friday but I bought more than what's cut up. and I won't use the whole package of chicken either. I may venture out to see if the fish market around the corner is open. I like salmon in a stir fry. EEEWWWWWWWWWWW, NO!!!!!!!!!!!! Kale is worse than collard greens. I can tolerate mustard & turnip, but we prefer spinach...but neither of us will eat kale or collards. And I've grown kale so I know for sure I don't like it at all! I'm with you on the kale but I do love the rest of the greens. I'd be hard pressed to tell you which was which if you set the 3 versions down in front of me. They all looked the same and tasted the same to me after my great aunt was finished cooking them. I'm thinking there may be pizza for dinner tonight. I'm feeling lazy. lol

LOL! I went to post in the '16 thread and didn't realize we'd started another until there was no reply box at the bottom. Tonight is enchiladas Wed is smoked beef sausage w/ sides Thursday IDK yet Friday is take out night Sat and Sun: IDK yet. The Raiders are playing one of the days. I'll post costs later, when it's not my Monday here at the office.

One of these days I'm going to have to learn how to cook for one. it sucks, but once you get in the swing of things you'll be okay. I find if I aim for "one" I make enough for two fat kid meals and I have leftovers. YMMV.

tonight was our last "family dinner" for awhile since I switch to 2nd shift tomorrow. roommate hasn't really been eating dinner lately, but lamented the loss of actually having dinner, so I said well, let's do it up one more time. so, tonight was taco night. I did up a batch of black beans, rice, and all the taco fixins. he had beef, I had turkey, both on crunchy corn shells. and we both have a bunch of leftovers.

Sauteed pork chops with mushroom sauce and roasted brussel sprouts and potatoes. Total cost $10 or so. I have leftovers for another meal and a new recipe. It was from hello fresh in December. I would chop the potatoes thinner next time.

DD and I had a late lunch at Starbucks courtesy of a nice gift card from her brother.
It was so good, I had some chicken with chili type sauce rollups, very spicy but good with a slice of banana bread and a latte.
She had a tomato, mozzarella Panini and a gingerbread cookie with hot chocolate with peppermint.
So tonight we just had luncheon meat with cheese and salad for she and DH. I didn't even eat anything. DD was tired as she had to meet with a new provider today, the behavior one and then we went to the city and shopping so after dinner, she took her meds and went to bed. She wears out easily.

Probably chicken since the freezer is slim pickin's, LOL. I'll post costs later, when it's not my Monday here at the office. As mentioned yesterday, costs have been input above.

Rinderroulladen ( German beef rolls) Round steak cut 1/8th inch thick. lay it out and put on a strip of bacon, apply a bit of mustard and a little wouchestershire sauce and 1/2 pickle (dill) roll it up and either pin the roll with toothpicks or tie with string. brown the roll in butter in a pan then place in a crockpot in mushroom sauce/gravy and let simmer/slow cook for 8 hours or so. serve with either red cabbage or do pasta in alfredo sauce. Goes well with wine, or beer

I looked at the clock for the first time in awhile and damn, it was already 7pm! this 2nd shift thing is a pretty sweet setup. dinner tonight turned out to be a salad w/chicken from Panera. cost was free, since I had a gift card. but $9 and change for a salad?! no wonder I don't go there much...

I made earlier this week a big container of vegtable antipasto- green, red, and yellow peppers, onion, olives, shredded carrots, a little cheese in some oil & vinegar. Tonight I ate it in a whole wheat wrap. It was really good, but really when I got home from work, I kind of wanted something hot.

One of these days I'm going to have to learn how to cook for one. andi9899 America's test kitchen annually publishes a cooking for two magazine. They test all the ways to cut down recipes to size so that you still get great results. I find that I can work with those recipes quite well. I either cut down on the amounts used or deal with a one day leftover (and I can handle that)

Made budget bytes unstuffed peppers. I loosely followed it. I cooked my rice separately as even cooking and the evil demon spawn ceramic flat top stove don't go together. Probably around $10. Got the bell peppers used up, they were getting to the toss stage. I'm trying to waste less and be more creative with what we have.

I completely forgot about budget bytes. dinner tonight was most of the leftover Korean glass noodles I had made on NYE. there was more than I thought, so I'll have the rest tomorrow night and pick up a chicken teriyaki appetizer from one of the Chinese restaurants near the office, to round that out.

I just used Budget Bytes last night to make her enchilada sauce. Tonight is going to be chili, it's a good day for it. Rainy and getting down into the 20s. I hate days that start with the high temp and go down from there.

I just got the plain old regular shells. I'm the picky one in my house. 😉
Mostly we do taco salads with tortilla chips. I do make burritos from time to time and freeze leftovers. I'll let you know how they turn out.

I have one that doesn't want crunchy because they poke him in the gums/hurt his teeth but only likes flour tortillas, one that likes corn tortillas (ok, a couple of us), one that mostly likes corn tortillas but might not today, one that makes her own version of Taco Bell's gordita with a crunchy Nacho cheese shell & a flour shell glued to the outside with melted cheese..... I'm a little too nice sometimes.

Let's hope you can teach him what good food is My BIL is one of those who likes about 6 things and refuses to even try other stuff. He will literally go to McDonalds instead of eating something I've cooked.
