I grill(pan)ed off some marinated BSCB, that I sliced in half before marinating. packed most of it up for use in meals this week. for tonight's dinner I diced up half a BSCB and 2 plum tomatoes, sliced 2 cremini mushrooms and some red onion, and topped a rolled-up pizza dough from the grocery dairy case with some mozzarella off the block and that pesto from this morning. idk if I would use this dough again, but it works for tonight. and I have leftovers for another meal.

I just put a roast in the crockpot with veggies. DH doesn't eat beef so it's hard to justify, but Publix had a sale. I'll freeze some of the leftovers.

I have some pork roast that was in the slow cooker on Saturday. Tonight I'll slice some off and get a container of potato casserole from the freezer. That will be dinner for the next couple of days.

LOL at the nacho talk! I had a small plate of them Sat and again last night. I used leftover ground beef and tortilla chips from Thursday's chamber of commerce meeting and added my own cheeses, sour cream and taco sauce. Delicious!
I'm trying a few new slow cooker recipes this week.
Tonight is slow cooker stuffed chicken breasts: 4.03 2 large chicken breasts each sliced in thirds stuffed with 0.66 spinach 1.00 feta 1.00 roasted red peppers 0.27 black olives-Sam's Club multi pack 0.05 spices 1.50 chicken broth poured over the top 2.50 fried eggplant on the side (eggplant, almond flour, parm cheese, spices) Total:$ 11.01 for 6 servings
Tuesday night is beef and cabbage chili style. I browned the ground beef, bell pepper and spices last night. I'll assemble everything tomorrow morning into the Crock Pot: 3.49 Ground chuck-coupon save $2 if you spend xx on meat 0.05 garlic, other spices 0.99 bell pepper-loyalty savings 0.90 diced tomatoes-e coupon 0.60 tomato paste 1.29 cabbage 1.00 beef broth Total: $8.32 for 4 servings

Saturday I started to make a roast (thanks Publix) in the crockpot and decided to make it in to a soup instead. Used red skinned potatoes that needed to be used plus the celery and carrots that I already had instead of using rutabaga and parsnips.
Sunday I made two 9 inch ham/broccoli quiches, which I froze and will cut up for lunch/dinner this week along with the soup/rice. I also roasted 2lbs of parmesan/garlic chicken.
DD is on another health kick so she bought turkey burger and brown rice, so I cooked that up for her since I was in the mood to cook today.
I'm loving my decision to cook just for me and if the kids want to eat, they can either eat what I cook or they can fend for themselves. There's plenty of food, they just need start cooking for themselves or if I'm being really nice tell me what they would like. I'm tired of cooking things and they decide that they don't want it.
It's a great feeling that I can make/try things that I want without having to worry about whether they will eat or not.

do it up, Sue. your kids are old enough (I think?) to fend for themselves if they don't want what you cook.
dinner tonight was a chicken stir fry. usually it's veggie loaded with a little chicken. tonight was probably half and half, since there weren't many veggies in the fridge and the chicken breast was another mutant. used up the last of the base sauce, added some l/s soy and sriracha before cooking. poured the lot of it over some white rice.

suesinfl, I think we had the same sale at Publix. . I hope your soup was as good as my roast was. Now I just need to figure out several other things to make with it. But it's ok. I'm looking forward to a sandwich for lunch. I can't cook for DH so I understand your frustration cooking for your kids. He will like something one day, and he will tell me the next time that I cook it that he wished I wouldn't cook that again. For example, he liked Butterball's smoked turkey sausage until one day he told me he really didn't like it. It is very frustrating so I just cook for myself and invite him to eat some of it if he likes. He knows how to cook. I imagine your kids do as well.

I need to go grocery shopping soon. I need vegetables. I've done a great job of using up what I had though. I'm proud of myself for salvaging things I would have pitched before.

a tasty chicken sandwich I would never enjoy at the office on first shift grilled black peppercorn chicken, with arugula, tomato and red onion, and easily 2T of a blistering garlicky pesto. I would definitely have the office to myself the rest of the day if I brought this in for lunch haha.

Ended up making breakfast tortillas last night instead of the corn dogs. I didn't want to mes up the kitchen any more than I had to before today's realtor tour. I did bake chocolate chip banana bread for the realtors. It used up chocolate chips, some flour and sugar from Christmas baking, and 3 sad bananas. I'll make the corn dogs tonight.

Tonight is a pork roast sandwich. I did my pork roast w/ peppercini and ital seasoning in the crockpot Tuesday and the meat is so yummy and tender. What I appreciate is that pork loin has less fat than a beef roast so it just separates better without having lots of bits of fat.

I think I'm making cajun chicken pasta for dinner because I don't want to let the mushrooms hang out in the fridge too much longer. I had spaghetti last night. I wonder if anyone will fuss about pasta 2 days in a row?

I diced up another grilled chicken cutlet and tossed it into a box of Kraft dinner. I'll pack up what's left, but will likely end up tossing it in a few days.

Beef with snow peas served over rice. Total cost $8 or so. The London broil had been in the freezer for awhile. The snow peas were $2.50. We had to buy new rice and my brother picked this one that was like $6.99 for a small bag. Time to hit up the Asian market for a 50 pound bag.

Wednesday night is happy hour and the rest of the week is likely take out. I have a ton of errands to do Thursday and Friday I'm leaving town for the weekend.

I made broccoli/cheese soup and mushroom/ barley soup yesterday, so we had soup and salad for dinner.
Tonight we are having pasta Bolognese and a salad.

I found a winner! small strip mall pizza shop, it had popped up when I searched "restaurants near me" on google maps. I've driven by it many times on my way elsewhere, and decided to check out the website since it actually had one. call me impressed - they touted their ability to provide both gluten free and vegan products, and also indicated which pizza toppings they couldn't guarantee would be clear of cross-contamination. I decided to wait to order my salad until I actually walked in, wanted to check the place out. I've got my own issues (seafood) and decided to ask about separate fryers and the like while waiting for my order. had a good chat with the owner about how his wife has some issues and they have always been vigilant about accommodating allergies with excellent results. seriously though - little Greek pizza shop that has vegan cheese AND uses spring mix in their salad blend? done. I took menus with me for the stack in my office.

As someone who has been on this journey for 17 years now, I must say how relieved I am now that soooo many places are starting to understand food allergies. dinner tonight will be the other slice of pizza I bought on my way in to work (guess I should be eating more if a single slice from Whole Paycheck makes me stuffed... ) and I will likely grab a basic salad to supplement from Panera since there's one right next to my office. $3 slice of pizza $5? cafe salad

Thanks for the recipe link. Has anyone tried these weird noodles: Shirataki Noodles ? They're not grains, but made from a type of yam native to Japan and have like 10 calories per serving and no carbs. I made them the other night with a chicken and broccoli stir fry, and was pleasantly surprised. Even my picky family liked them.
