week of 9/28 to 10/4--
Breakfasts: 4 cottage cheese w/fruit, 3 peanut butter sandwiches, 7 cups of tea. lunches: 2 peanut butter sandwiches, 2 veggie soup over rice, 3 cottage cheese w/fruit. suppers: 2 sloppy joes-french fries-baked beans, 4 chicken-steamed veggies-mashed potatoes/rice, pizza. snacks: 7 rice krispie treats, 7 cups of fruit or pudding, 7 cups of yogurt. work snacks: 5 Fiber One bars

K, over the weekend my butt was planted on the couch due to toe surgery. With that extra down time, I've gone hard core in regards to finding recipes to use up pantry odds and ends.
This week: Breakfasts: The usual boiled eggs w/ mayo Lunches: Spinach w/ either canned tuna or chicken, and whatever trimmings we have on hand, including tomatoes from the garden.
Dinners: Tonight: The last of the leftover low carb eggplant lasagna from Thurs Tomorrow night: Cabbage (need to use the cabbage!) and beef sausage "Crack Slaw". This will make at least 3 servings. Wed: Leftover low carb pizza from the freezer Thurs: Shrimp fried in a corn meal (there's a few TBS left, not enough to make cornbread) and pork rind crust (about 1/2 cup has been in the pantry for awhile, going to grind them up in the food processor), then sauteed in Alfredo sauce (there's about 1/2 cup left in the fridge). Friday: Take out from? This weekend: At least one serving leftover crack slaw.
Condiments I need to use up: Bottled 1,000 Island dressing which someone brought to one of our parties earlier this year. I'll mix it with ground turkey and some of the pork rinds and make meatballs. I also need to use up the bottled Italian dressing DH bought and used 2 TBS of for a smoked meat marinade.

MON ... tilapia TUE ... chicken sausage WED ... chicken sausage THU ... sirloin FRI ... sirloin SAT ... smoked salmon and cottage cheese SUN ... smoked salmon and cottage cheese
Dinner veggies this week (cooked): fresh corn on the cob, fresh asparagus, beets, baby bok choy and radicchio Dinner veggies this week (salad): romaine, red/orange/yellow pepper, hearts of palm, mushrooms, tomatoes
Dinner starches this week: toast, Gala apples, Amy's vegetarian Shepherd's Pie
Breakfasts are the same: orginal Fiber One, banana, protein shake Lunches are the same: cooked Greens, turkey or ham with eggplant hummus on tomato wrap (or toast), salad with 6 veggies

My menu is the same as last week because I have steamed veggies and chicken and pizza in the freezer. I also have frozen fries in there so I am good for the week. Maybe next week I will change things around some.

I almost begged off posting until Mon BUT as I waited for some coupons to print I did my plan. It helps a LOT to have a basic plan in place like I do. Also, it is starting to get pretty chilly around here so I will probably start making some soup/chili/stew every few weeks and chuck is on sale this week (beef, barley, veg, mushroom soup?). As per usual, it is written in pencil in case I hit a GREAT deal at some store or get a Jones on for something.
Breakfast: cereal, cottage cheese x 3, yogurt x2, pancakes Lunch: salad plate, tuna salad, chicken, veggie, egg x 2, soup Dinner: chicken x 2, veggie, Tuna, ground meat, red meat, junk

Week of 10/12 to 10/18 meal plan:
Breakfast: cottage cheese with fruit, peanut butter sandwich, rice krispie bars, and tea. Morning snack: fruit, yogurt. Lunch: ham and swiss sandwich, peanut butter sandwich, soup. Afternoon snack:yogurt, fruit. Supper: sloppy joe sandwich, french fries, baked beans, pizza, chicken/veggies/ rice-mashed potatoes. Snack at work: Fiber One bar.

So I planned on making a beef based soup this week. NOT going to happen. The chuck on sale at my independent grocer was so full of bone, fat and gristle it was NOT worth buying even at 1/3 off any recent sale price. I don’t think either of my DDs’s goldens could even chew the stuff. Also, it is going to warm up a bit over this week so not soup weather to me. When I do make it I will sub chicken for the beef. Interesting experiment as I grew up with & always made it w/beef.

Dinner includes 2 starches (multigrain toast, 1/2 an apple, it varies), cooked veggies (lately: asparagus and greens of some sort), salad: romaine, hearts of palm, red pepper, mushrooms.
Breakfasts: Original Fiber One, unsweetened Vanilla Almond Breeze, a small banana blended into an Extend Protein Shake with ice.
Lunch: turkey, eggplant hummus, pickle, romaine on a tomato wrap, cooked greens (spinach, mustard, collard and turnip greens) and a salad with cucumber, carrots, radishes, tomatoes, kidney beans and garbanzo beans. (Slightly altered on the days I go to Petco)

More possible/probable changes:
In spite of my having said it is too warm for soup I may do soup & something 2x this week:
I have some soup made from powdered bullion & broccoli & cauliflower stems There is an Olive Garden coupon for their lunch soup & salad & breadsticks deal for only $5-good this week only. On the other hand a can of Progresso is $1, a BIG salad about 0.50 and a can of Aldi biscuits 0.49 = $2 (bisquick even cheaper).

I do have a menu pretty much planned for this week BUT it is WAAAY more likely than usual to go up in smoke (eraser dust) as I frequently go trick or treating w/the grands near DD1’s house and I am thinking about a beauty day (haircut and mani/pedi) on Wed AND I do NOT cook after a mani. Also, the beginning of the week is forecast to be WAAAY warm and the end a bit cooler than usual (wish it was the other way around).
Breakfast: bagel w/cream cheese, cottage cheese x 3, yogurt strawberries x 2 Lunch: chicken x 2, tuna salad, egg x 2, ground meat, junk Dinner: leftover steak, veggie x 2, tuna, chicken, soup, ?

Lunches- dh had a veggie pasta bake I have 10 bean soup and salad.

singlemominmd, The total of calories per day are between 1600 and 2000, depending on the serving size. I eat the whole bag of steamed frozen veggies, over 10 oz. Sometimes I have 2 rice krispie treats or 2 cups of fruit.

12 Chicken and veggies 4 Sloppy Joe's and fries 2 Chinese meals 1 Baked potato with chili 22 Fiber One bars 24 Rice Krispie Treats 7 Cottage cheese w/fruit 11 Yogurt cups 37 Fruits and puddings 4 Pizzas +peanut butter sandwiches. I think I am set for the next couple of weeks for meals.
