the massive veggie buying did NOT happen.
Just NOT feeling the love this week. I suspect I will do a bit of freewheeling BUT one goal is to use up stuff from the freezer. It is WAAAAY overloaded, like open the door & eat whatever falls out. I am thinking about a NO cook week but not this week.
I still need to pickup a few thing locally: a couple veggies, salad stuff and cottage cheese.

Similar to marvholly, I have begun focusing on the freezer contents. I do this when we start to run out of plastic containers, LOL. Last night: Chili beef spaghetti squash casserole. This took care of a 1/2 can leftover tomatoes and a bit of chipotle chili en adobo from the freezer. Tonight: Fried chicken legs from the freezer, and a side veggie. Tuesday: Halibut, Flounder, veggie Wednesday: A ground turkey dish Thursday: Homemade chicken eggplant from the freezer Friday: Take out from? Saturday: IDK as we'll be coming home from ATVing all day Sunday: IDK yet. Perhaps BBQ some boneless pork chops?

I REALLY liked how my meal options plan worked last week. Did NOT fall off the wagon until Sat. I am going to do the same this week but include more than 7 options (basic plan) per meal type.

I need to get back to this as we're going on vacation at the end of the month and I'd prefer to limit eating out beforehand. And also because I brought home a fair amount of beef from my mom's house this weekend as she's getting another half beef in 3 weeks and she needed to free up some freezer space.
Tonight: Swiss steak in the crockpot with rice and green beans
Tuesday: probably sandwiches/picnic in the park before swim lessons
Wednesday: leftover Swiss steak stuff
Thursday: grill out? We have steak, burgers, and chicken in the freezer to choose from
Friday: leftovers
Saturday: party shindig at DH's aunt and uncle's house so whatever they have on the menu :-)

I am doing a no oven challenge this summer in another savings group. The goal is to use your oven as little as possible. Lots of crockpot and outdoor grill cooking. So far, it's been a great challenge to do. I've cut my oven use down to 1 time per week or less! That, combined with the mild temps we've had so far, is doing WONDERS for my electric bill.

The upright freezer is cleaned and new inventory is ready to tape of the freezer door. Found some chicken from Jan. 2015 and 7 # of bacon. 29# of butter (lol). 3 dinners of country ribs for the crockpot, and 2 packages of grass fed ground beef, and DH doesn't like it....think I will make double batch of chili and freeze it, he will eat it that way.
Have added a nice beef roast that Walmart had marked down & saved $4 on it.
I cleaned the top, sides and inside the freezer. it looks almost like new, even thought it is 10 years old.

i am on my 5th week of just making a basic meal ideas list and picking what I feel like on a meal by meal or daily basis. I really like this approach. It works MUCH better for me especially on a week like this when I am out for lunch 1x, and dinner 2x.

Last night: I had a "grilled cheese" on low carb tortillas, DH had cottage cheese and fruit. Too late, hot and tired to prepare anything substantial.
Tonight: In the big city for a comedy show, so we'll eat out somewhere. Wednesday: Am going to make a pan of ground turkey and beef enchiladas. It's been awhile. Thursday: IDK yet Friday: We are going camping again. I guess? We'll see if we've recovered from last weekend. Saturday: Camp food or ? Sunday: IDK yet

Tonight: Flounder en papillote (parchment paper), roasted turnips, and homemade flax seed muffins if I have time. Last week was my happy week, so no meal planning for me - traveling 2 days for work, then my birthday, and then my anniversary two days later. All meal planning was DH's responsibility. :-) Last night - chicken stir fry ; this recipe, but I added extra veggies from Farmer's Market (summer squash, zucchini, onion and mushrooms, plus the broccoli) www.gimmesomeoven.com/chicken-broccoli-recipe/ Monday - leftover chicken stir fry Tuesday - sandwiches for picnic at park Wednesday - grilled something with corn on the cob (something from freezer - probably burgers or brats) Thursday - leftovers from Wednesday's grilling out Friday - leaving for vacation after work, so eating out somewhere

Already planning for next week. Several of my independent markets have red bell peppers on sale. Just need to decide if I want them filled with meat (ground whatever) or veggie (lentils) with the rice. I will make enough to freeze some for lazy future meals.

The weather is still warm/hot enough that I will NOT use the oven. I do have about 3 cooking projects planned but will do them in the toaster oven (stuffed peppers) or pick recipes I can do on the stovetop (salisbury steak vs. meatloaf, esp sinccce Aldi has mushrooms CHEAP). I am also going to saute some chicken vs. roasting it. That will cover a LOT of meals over the next 9-10 days after I add on a couple fish & a couple veggie.

Last night was breakfast for supper: Corned beef hash, eggs, and cheddar with fresh strawberries. Tonight: DH is smoking a pork roast on his Traeger, fried zucchini on the side. Tuesday: Homemade stromboli, green beans and corn niblets. Wednesday: Freezer leftovers of some sort-it's getting full in there again! I can usually plan for 1 day, and I just did it for tomorrow.
Meat Loaf Mashed potatoes Frozen Green beans 2 Frozen dinner rolls if I remember to take them out and let them rise in time for dinner.
What I really need is more ground beef to make some of the individual mini-meat loaves for the freezer, then some for chili(gotta have that for upcoming Husker football games) and then some for the freezer also. DH would like some homemade marinara sauce too.
If it would cool down just a little I might feel like spending a day in the kitchen.

Oy, I need to get back to this. I know things are and will continue to be crazy when DH made the comment this weekend that we need to create some more freezer meals since we'll be traveling so much this fall. Now to find time where we can do that without the kiddo too much underfoot.

Last night: chili with leftovers for lunch one day Today: baked ham, potatoes, veggies Tomorrow: I'm traveling, and DH & DS going to sister's guise for skinner/playtime with cousins Tuesday: still traveling; picnic sandwiches in park before swim lessons for DH/DS Wednesday: still traveling; leftover ham for DH/DS Thursday: grilled something or teriyaki chicken Friday: all traveling so dinner on road (repeat for Saturday and Sunday)
