I have salmon burgers in the freezer ... I will try to work them in next week. Were those a 'freezer finding?' Yep. And they are on this week's menu.

I sort of jotted down ideas for the week, I guess that counts right? Stir fry some kind of chicken (I generally cut it up and sautee it in some olive oil and whatever spices strike my fancy) Fish (that was last night, with cheese grits and baked beans, and it was yummy) meatloaf london broil in crock pot. I had a request for chicken Alfredo, I have to double check the amount of chicken in the freezer. I hope there's at least one night's worth of leftovers, but you never know. Some nights I have to hope there's enough for me to get a lunch out of it.

I sat down and figured out my dinner proteins for the upcoming week: 17 Sun ... toast "pizza" with cheddar and turkey pepperoni and sundried tomato 18 Mon ... Trader Joes chicken patty 19 Tue ... Trader Joes chicken patty 20 Wed ... Smoked salmon and lowfat cottage cheese 21 Thu ... Smoked salmon and lowfat cottage cheese 22 Fri ... Trader Joes sirloin 23 Sat ... Trader Joes sirloin 24 Sun ... shrimp This gives me seafood 3 nights, and limits beef to two nights, so that's right where I want to be. Into the week after (August 25) there will be grilled tilapia, Trader Joes sundried tomato chicken sausages, and probably Hebrew National all-beed Kosher franks. Maybe another attempt at toast pizza since I will still have turkey pepperoni!

Molly Did you know it is possible to make a pizza crust from cauliflower. Saw it on Rachel Ray as a gluten free option. Pulverize cauliflower in a processor. Add a beaten egg or 2. Spread on parchment paper or foil. Top w/sauce, cheese & whatever. Bake.

Iggy I have done ground meat (beef, turkey, chicken) crust pizza BUT I know Molly is trying to be about 80% veggies in her meals. Eating the minimum protein for a healthy diet.
Jeep Thanks for the idea of a tuna pasta salad. Think I will program that in for next week. Have not done that in a LOOONG time.

Week of 8/24
I did not realize today (8/24) is national waffle day (per Kellogg’s) when I planned waffles for breakfast today. I planned them because a local store had them on sale this week for 0.88/box.
This is a CRAZY week. I will defiantly be eating out at least twice – friend‘s open house and the day I get my mani/pedi. May be going out a 3rd time IF I hear back from my traveling friend.
Breakfast: waffles, cereal, yogurt x 2, cottage cheese x 2, Bread w/?
Lunch: veggie x 2, egg x3, ground meat, meat
Dinner: chicken x 2, tuna x 2, cottage cheese, out x 2

I've been slacking a bit on the meal plan thing. While I have a well stocked pantry and plenty in the freezer, I have found myself making things up at the last minute lately. Not really planning ahead. So I've been taking advantage of you all and surreptitiously making a list of what you all are eating here and on the "what's for dinner" thread. Right now, we're skating along on a salad and a grilled meat for the rest of August. Come September 1st, I have 20 different meals on the list. Edited to add the missing apostrophe in we're.

Yes, sometimes as my protein source. I happen to LIKE cottage cheese & will eat it at any meal. Those days I tend to eat a heartier lunch.
