DH rejected the frozen lasagna, so we are having chicken fajitas instead...I'd say less than $10 for the two of us if you include all of the ingredients. But we have everything on hand (it's a go to meal, and DH makes it, so that's a bonus for me!), so no one has to go to the store! Yay!

black beans are delicioso!!!! DH and I discovered beans when we were broke... or more broke than we are now. They have remained a staple in our diet. I can't tell you how many beany burritos, quesadillas, soups, and enchiladas I've made over the years - and not a single complaint. I don't know what the Puerto Ricans do, but the beans and rice we had down there was to die for. OMG. Tonight is either Chinese take out or spaghetti. If we go the Chinese route it's going to run close to $18, but I'm kind of craving it. Spaghetti is dirt cheap. A pound of hamburger at $1.99/pound. Chunky garden style sauce (on sale for .99), and a box of spaghetti for another $1 or so. We make garlic toast with just regular whole wheat bread that we have around. Another 50 cents maybe (we bought about 15 loaves for half off a while back and froze them) So either $18 for Chinese or $5 for spaghetti!

right? I wish I'd had my aunt teach me how she cooks 'em, way back when I was a kid, but damn. she's not around anymore, at least that I'm going to ask her now.
I will say that if you follow the recipe off the Goya can, that's the closest I've been able to come to making what she used to serve us back in the day. yum!

I don't know if the Black beans recipe I'm about to share is Puerto Rican too but a Cuban friend shared this recipe with me and it was excellent. For those of you that find olives vile - they add a great flavor and you won't even know they are in there if you chop them really fine. Ingredients 1 lb black beans (dried) or (Cans of Goya Black Beans which were really good) 1/2 Cup White Wine or 4 tbsps red wine vinegar (I use white wine – Chardonnay) Green Olives (I use about 4-6 olives chopped fine) Olive Oil 4 Cloves Garlic (finely chopped) 1 Onion (finely chopped and I prefer white Spanish Onions or Red Onions) 1 Green bell pepper (seeded and finely chopped) 4 tsp dried Oregano 4 tsp ground Cumin 2 Bay leaves Pepper Salt Directions: 1. Wash beans. Or in my case “Open Can” and then move on to #5. 2. In a large pot, soak the beans with the first chopped bell pepper in water until swollen. Overnight?. 3. Drain and add new water so the beans won't be so musical if you know what I mean. 4. Cook until soft about 45 minutes. 5. Heat oil in a medium pan. Add onion, bell pepper, chopped olives and garlic and cook until soft. 6. Add dry seasonings to the pot. 7. Cover and boil 1 hour (only if you used dry beans - Skip this part if you use canned beans). 8. Add wine. 9. Cover and simmer 1 hour. 10. If broth is too watery, uncover and cook until it thickens - or you can mash some of the beans and add them back in to thicken faster.

quesadillas are an old stand-by. or us, but I make them vegetarian - black bean and corn instead of meat. Tonight I'm baking a frozen pizza ($3.99 I believe) and serving it with a bagged salad ($2.50). So easy a Doxie can do it! Mmm... I made vegetable quesadillas the other night - baby bellas, zucchini, black bean and corn salsa, and ooey gooey bad for you cheese! Last night i made red curry in order to use up all the vegetables i bought over the past couple of weeks. I did have to buy two cans of coconut milk ($2.99 each) and cilantro ($1), but it made enough for our dinner and lunches today. I used the rest of the rice noodles and sweet thai chili sauce i had, so ill need to stock up soon. Tonight will be baked potato night. It's cool enough to use the oven so we might as well use them up!

Tonight I'm making burgers & fries. 1 lb hamburger @ $1.99 lb the buns hubby brought home from work this morning, so they are made fresh today and FREE! I have the lettuce, tomatoes, cheese, onions, & pickles already. I even have some blue cheese on hand, so mine will be a blue cheese burger. I have a bag of potatoes 5 lbs @ $2.99, I'll use probably 3 or 4 potatoes for the fries.
cheap, easy & better than fast food. Although, I would KILL for a Whataburger from Texas.

Oh well - more beans for me! There was a restaurant called Las Vegas 8 in Ft. Lauderdale....Omg, their black beans were to die for! And the plantains..... I would have eaten there every day if I could.

I'm working late tonight, so dinner will just be a bagged salad with sliced up grilled chicken, grated cheddar, and in mine I will add mushrooms, cherry tomatoes, and onions.
The grilled chicken is out of a bag of frozen grilled chicken, so the total prep time will be about 5 minutes.

I've seen 80% lean beef for around $1.99/lb on sale. We never buy it because we use at least 90% lean beef. Sometimes A&P will have buy 1 get 1 free sales on packs of 93% lean beef (we do buy that) but it comes out to be something like $2.50-3.00/lb.

I'm going to roast some cubed eggplant to toss with sauteed broccoli, spinach, and tomato with some curly pasta in a little bit of chicken stock. hopefully I'll be hungry by the time the eggplant's done roasting. I barely finished half of lunch, I was stuffed. I really hope that doesn't mean I'm coming down with something.

DS is sick AGAIN!!!!! making veggie pasta and meat sauce now -- beef was about $2.50/lb, sauce was $1, pasta was about $1.25.
On Monday I am calling a pediatric ENT doctor. He has had 3-4 ear infections since starting daycare in March.

see this last statement makes me so sad...
It's fine not to like beans because you don't like the taste or texture...but the social stigma associated with them being "poor people's food" I think plays a large part in keeping many folks from giving them an honest try.
There are literally 100's of types of beans out there. They are nutrient/protein/fiber loaded, very easy to grow, actually enrich the soil as they are growing, and happen to be easy on the pocketbook. They are also a very healthy staple in any diet.
Even DH who was not a bean fan is now a convert (have you ever had homemade baked beans made with smoked pork and myacoba beans!!!)
I have a white bean and escarole soup that my in-laws went nuts for! It's basic peasant food but let me tell you, I think the peasants ate better than the royalty in Italy IMHO.

It's Friday which is usually frozen pizza night here, but we had that last night after our AAA fiasco. So, tonight is Bell and Evans chicken patties stuffed with mozzarella cheese on sesame buns and Alexia onion rings. Maybe I'll throw some carrot sticks on the plate, too, but Friday night dinner is not usually a nutritionally complete meal here (the one meal all week that isn't). B&E chicken patties: $5 on sale Sesame buns: $2.49 on sale -- only using 4, so $1.25 Alexia onion rings: 2/$5 on sale -- using 2 bags carrot sticks: 2 pound bag for $2.99 -- will use 1/4 bag So, $5 + $1.25 + $5 + .75 = $12. Way cheaper than take out, fast food, Chipotle, or even frozen pizza. Score!!!!

wow, PB ate every piece of that post, including what I'd quoted. wth?? the gist of what I had to say was that you might find you like a certain food in a specific way. there are many posters who found their way to brussels sprouts after having them prepared with bacon/pancetta/rendered fat and now enjoy them in other ways in addition to the one that first grabbed 'em. I can't imagine my kitchen without beans as an available ingredient.

Our meat market has some great deals, but they don't do any advertising, you just gotta stop in OFTEN & see what's good that day. I pass by it 3 or 4 times a week & I'll go in and browse around. Some days I walk out with nothing, other days I walk out with 2 weeks worth of meat. I also live out in the country in Georgia. So we get some great deals at farmer's markets & meat markets over the grocery stores.

I picked up a rotisserie chicken tonight for dinner, made a big salad and picked up a baguette. This was dinner tonight. Ate about half of the $5 bird, so $2.50 (will pick the bones and make stock tomorrow), salad I put both avocados and red peppers in, so about $4 for the salad and we have salad for tomorrow too, so $2 for that. Half the baguette, so $1.50.
$6 for dinner, with about $1 for the fresh strawberries. $7 for 2.

I don't know how you feel about chicken salad, but I made a kickass one a couple weeks back when I found I thawed out more roti chicken than I needed for the recipe at hand. I diced some gala apple and red onion, and mixed with a tiny bit of mayo and a healthy couple shakes of garlic powder, onion salt, and sarriette. sometimes I add a touch of tarragon, but I have to be in the mood for it. tarragon's in the dill family, not high on my list of spices.

Hamburgers (no buns, I'm low carbing and the girls don't like them) and salad. The patties were premade so $5 for 4 (so I had 2, don't judge me!) and about $3 for the salad. LGW had popcorn for dessert, I think with the big box I bought it worked out to about $0.75 a bag.

Today is going to be a MAJOR cook day. I have a pkg of 3 boneless pork chops (3 meals) and a pkg of 4 chicken leg quarters (6-8 meals). After I add the carb side, salad and/or veg the deals on the meat portion were SOOOO good each entire meal will avg $1 per serving.
I couold use some ideas about cooking pork chops (no frying). i learned to cook by osmosis from my Mom & she NEVER cooked pork as my Dad was raised kosher and until his death the ONLY form of pork he ever ate was ribs out.

We went to Cheeburger Cheeburger last night - 2 waters, 2 milkshakes, I semi-serious burger, and 1 medium basket of onion rings and fries + tip = I think around $26 (I didn't see what DH left as tip). The item total was $22 and change.

I cook for two of us, and usually plan for leftovers so I don't have to cook as often (DS will be home for the summer, so I will need to make sure there is enough leftovers for him as well as myself for lunches--I don't want him to have a summer of hot pockets, hot dogs and sandwiches, plus, he likes to eat healthier than that).
Yesterday's lunch was black bean bisque with chicken and quinoa
box of bbb (organic, from Grocery Outlet) 99 cents chicken (pulled off the rotisserie chicken we had for dinner the night before) about $2 worth quinoa (that I cooked on Friday to try it), about 50 cents worth
We have enough leftovers for at least two more lunches, so $3.50/4, around 88 cents a meal (add spinach salad or bread, if wanted, for about 25 cents...)
Last night's dinner was chicken stir-fry. I didn't cook rice/pasta/potatoes, so that knocked the price up, but will have one of those with leftovers once, and another for the second set of leftovers.
2.5 pounds boneless, skinless chicken breasts, $5 Bag of frozen italian vegetables (I use an italian or asian mix, whichever I have on hand), $1 Snow peas from the garden, labor only Rice for leftover meal #1, about 50 cents Potatoes for leftover meal #2, about 20 cents (will probably grill them) Teriyaki sauce, soy sauce, oil, had all on hand, but probably 50 cents worth
so $7.20, but will get six servings from it, so $1.20/person/meal

Actually rice is one of the things that I will admit to still trying to master... That and pie crust. I leave that to DH. I'll have to look up the vodka recipe and see what that is like. I can't do the pillsbury or other pie crusts, something about them makes me feel ill Easiest pie crust I've made is one Pepperdoo posted forever ago. You're only supposed to use it as a bottom crust since it's too "tender" to transfer, but one of these days I might try. Even if I don't, I tend to like a crumble topping (like in dutch apple pie) more than a crust topping. You don't have to roll it or anything. I made all my pie crusts this way for Thanksgiving (I made 7 pies? Two were on accident, I didn't read that the recipe I was using made two, but, I was at work on an "only needed in case of emergency" job, so I gave a couple of the pies to the crews that were working the holiday with me and took the rest home for the family dinner). VARIATION: For a 10-inch shell, use 2 cups all-purpose flour; 2 teaspoons sugar; 1 teaspoon salt; 2/3 cup vegetable oil; 3 tablespoons milk. "Quick, crisp but tender, it needs no rolling out. I highly recommend this pie crust, especially if you think you can't make a good pie. This recipe can only be used for one-crust pies - you CAN'T double the recipe and roll out a top crust. I am not even going to try to price out tonight's meal- suffice it to say that it was exhausting! I made dolsot bimimbap and paejon. I phoned it in with the frozen dumplings. But for everything else, it was homemade all the way. I was in the kitchen from 2 to quarter after 5 cooking. The beef for the bimimbap and pork for the paejon came from the freezer, so I guess the only things that I had to buy from the store were the dumplings, the marinade, and veggies (carrots, spinach, cukes, zucchini, and green onions). I can't cook like this every week. Need more wine.

Tonight we had mini tomato pizzas on whole wheat flatbread. Flatbread - $1.99 Shredded Mozzarella - $1.99 3 plum tomatoes - $1.69/lb Olive oil and spices we already had on hand.
I mixed garlic salt and Italian seasoning into some extra virgin olive oil and brushed that onto the flatbread. Then I added the cheese and slices, topped with basil, and sent into the oven at 400 degrees for 11-12 mins. Crispy perfection!
