DH is cooking breakfast - pancakes with strawberries and bananas, hash browns, scrambled egg whites. I have no clue how much the pancakes cost - a cup of flour and some baking soda and a bit of milk. He used 4 potatoes out of a $3 bag, and 4 eggs ($1.50/dozen). Bananas are about $0.10 apiece and I got a carton of strawberries for $1.99, so probably around $5 for the whole meal.
I'm bookmarking this thread, these recipes sound delicious! We tend to get into meal ruts so it's nice to have new idea.

POM, I am going to try to cook rice like that tonight. I tried to make sticky rice the last time I made Korean food, and it was an epic fail. Home 6, You want sticky rice? Then don't add the oil or butter and don't stir it. I think. I hope it turns out the way you want it!

I think eggs are .99 at Walgreen's this week. Or maybe it was last. I just saw it in the ad though. So, I lied about dinner tonight. My coworker that I work late with tonight came in a few minutes after 4 and asked if I was hungry and wanted to get pizza. The place by work has GREAT pizza and it's 4.50 for two huge slices and a soda. I can only eat one slice, so left the other at work for lunch tomorrow. So, 2.25 for dinner tonight!

I cooked a small chuck roast (on sale)in the crock pot with some brown gravy served over mashed potatoes with mixed veg. YUM!
I have enough left over for DH and my lunch tomorrow. I think everything came to under $4.

Lol POM, they didn't disappear - they just got all mushy and gross. Luckily I had another bag of baby carrots so I lightly boiled them. And I used noodles instead of rice.
I don't think I'm cooking tomorrow since we have leftovers, or if I have to cook, I'm throwing a frozen pizza in the oven. I like eating before 7pm.

It's really easy...just low & slow cook. Brown the stew meat, throw in the onions, careful with the chipolte peppers if you don't like it really spicy, add tomato sauce, add a couple of cups of water (or beef stock) & cook low & slow until the meat falls apart. Usually a couple of hours. Then just shred up pieces of beef into a flour tortilla & top with whatever you like.
The leftover sauce actually makes a GREAT spicy tomato sauce the next day with pasta. I've even used the leftover sauce to cook a roast in the crock pot the next day. I've used it to make chili too. It's a great leftover from the spicy beef.

Tonight, DH made chicken pot pies out of ingredients we had around the house, plus a salad of lettuce and peppers. He had to buy the pie crusts and the gravy for the chicken pot pies at the store. I'd say that dinner for both of us cost about $ 4.00 max. We have one chicken pot pie left over for another night.

Two microwaved veggie burgers and a big glass of milk For the past eight months I've been either too tired to arrange for food or unable to face the thought of eating. Never really thought of pregnancy as a weight-loss regimen, but at this rate I'm going to come out of the hospital skinnier than I was 8.5 months ago. But hey, total cost is under $2.50! Theoretically our small group is on the hook to provide food for Friday break this week. Thankfully we're missing 3/5 people so they'll arrange to swap dates with another group...because the thought of cooking for 50+ people right now is somewhere between "NFW" and "Maybe I'll just start maternity leave a week early." Normally I like doing break, but this group sucks. We have two that stand around patiently waiting to be told what to do while thinking this shouldn't be their job, one that openly brags about doing the least possible amount of work, and one department director who keeps playing a game of mental chicken figuring I'll take responsibility if he just procrastinates long enough

Soy ginger chicken stir fry over brown rice. First time I've made it, and that one's a keeper. We have an automatic rice cooker so you just the rice in, pour water in up to the mark on the pan, put the lid on, and flip the switch to cook. When the rice is done it flips to warm and holds it there until you turn it off, but it'll start to stick if you leave it too long. We buy organic brown rice by the 12 lb bag at Costco. No idea what two cups costs... less than a buck though. The stir fry was chicken tenderloins also purchased in bulk at Costco (a few bucks), broccoli, carrots, and white onion from the farmer's market (again a few bucks). The sauce was made from stuff we already had in the cabinet, soy sauce, powdered ginger, brown sugar, red pepper flakes, corn starch, and garlic. Best part is it's one of those 30 minute meals that I can actually make in 30 minutes including prep time, and it only leaves me with a wok, cutting board, and a couple glass bowls to clean up.
Next time I'll try it without the chicken and add mushrooms and potato for a vegan stir fry.

tonight we are either having leftovers (still have some lasagna, chicken teriyaki and rice, and pork/carrots/noodles left) or I'll put the supreme Freschetta frozen pizza in the oven. It was on sale for I believe $3.99.

We're having a crappy Jack's frozen pizza for dinner tonight (me and the kids) I think they were 4 for $10. I have no clue what DH is doing for his meal but I think it's involving ground beef.

oops, I haven't included DS's meals - mostly because they are either veggie pasta or a cheese quesadilla with sides of fruit, whole grain crackers, cheese if he isn't having a quesadilla, and/or plain almonds. Literally, that's about all he'll eat. If we have pizza, he'll probably have some crust. But that's about it.

Chicken pesto burger. 1lb of ground chicken is about $3, it makes 4 burgers. Mix with mayo, pesto, and Parmesan cheese that I had in the fridge.
Salad. $2.50 for a bag, and I can get a few salads out of it. Dressings on hand. Tomatoes and mini cukes in the fridge.
Stuffed mushrooms. Probably $3.

Steff, how do you make cilantro lime rice? I cook a good long grain white rice until done. I zest 1 lime & add it & then squeeze the juice of 2 or 3 limes into it & add a bunch of chopped cilantro. Stir it together. It's not quite, but close enough to Chipolte's cilantro lime rice. Sounds good.

I'm cooking Steff's spicy beef recipe now and it's very spicy as in hot! I already had a roast thawed and am using that and added salt, pepper, garlic, cumin and chili powder. DH will love it but I'm not sure I can handle it but I'll try. The rice should offset the hotness enough and with lots of water... I hope I can breathe. I had to cancel our dinner plans out tonight because my Boo Bear's urinary infection is getting worse today. I don't want to be gone that long in case he needs me or is urine soaked again. Poor baby. I hope the antibiotics kick in soon.

Like the captain, I live in metro Chicago & I seldom shop at our natl chain stores. I have 2 great independent (local chain) stores, BUNCHES of ethnic markets and 4 fruit/veg markets that have fresh meat, fish & deli. I almost always find eggs for 0.99/less.
Late DH was VERY much a meat & potato eating guy. HATED salads. Considered lima beans a veg (they are a starch). If one can ‘enjoy’ being a widow it is that I get to cook & eat what I want, when I want.
Lurkeyloo DD2 is having a pregnancy like yours. Her c-section is scheduled for 6/14 (barely a week-YEAH).
Last night was ½ can of tuna, ½ hard boiled egg over salad greens – Cost <$1. Tonight is Salisbury steak from my freezer, cauliflower and salad – Cost about $1.25
Fri I plan to make a strata- egg, bread, cheese, can tomato - cost about $1.50 Sat I plan on BBQ chicken legs + brussel sprouts - cost again about $1.25

Dinner last night DH's world famous Thai coconut chicken soup
2 Blocks firm tofu - $2 2 Cans straw Mushrooms - $4 (you could get away with one, but I loves me some fungus!) 1 package medium rice noodles - $2 3 stems lemon grass - .50c 1 bunch cilantro - .33c 2 cans coconut milk - $3 2 tetra boxes chicken broth - $4
So about $14 for 9 servings...
I love this soup! We usually make Thai cucumber salad to go with it.

I have a pork loin marinating in the fridge. I used A-1, maple syrup, soy sauce, mustard and orange juice. I'm trying to decide if I will make fried rice or just do rice and black beans to go with it. I'm thinking of making the extra rice, doing the fried rice tonight and making the black beans to go with the leftover rice tomorrow night, along with grilled shrimp.

Tonight is beef stew.
Roast - $12 but it was buy one get one free, so $6. Carrots - $1 for a whole bag, used half. $0.50 Potatoes - $2 for a whole bag, used four potatoes. Probably $0.75. Onion - $1 for two. Used one. $0.50 Beef broth - $0.50 Seasoning Mix - $0.50 Crescent Rolls - $0.50
$9.25 will probably make 7-8 meals (well, not the crescent rolls - only makes 4 rolls).
If I had time, I would have made my own rolls for super cheap. But the stew is in the crockpot and I am having a friend over for dinner and a late meeting at work, so no time to make my own rolls.

quesadillas are an old stand-by for us, but I make them vegetarian - black bean and corn instead of meat.
Tonight I'm baking a frozen pizza ($3.99 I believe) and serving it with a bagged salad ($2.50). So easy a Doxie can do it!
