We pay well beyond $2 for a gallon of milk - it's usually around $3. our local crops aren't too bad - strawberries are down to $1.49/lb and tomatoes start getting around $1.49/lb and less. Lettuce is almost always on sale around $0.99. Pork prices have been high for a while, so I jumped at the chance to buy a loin at $1.99/lb. It was a huge loin though so it wasn't really cheap.

Eggs are always dirt cheap around here too. Our local gas station has them for 99 cents all the time and the grocery stores aren't a whole lot more. Maybe $1.50 I don't think I've ever paid more than $1.89 dozen. Plus, my aunt has about 15 hens and is always dumping eggs on us.
Still, I'm considering getting some chickens of my own. Dumb decision from an economic standpoint, that's for sure!

who are these husbands that consider a leafy salad a main course, and can they please tell my DH that you CAN have salad as an entree? This is one of those things I curse my English MIL for. She honestly doesn't believe that a meal has been served unless it is piping hot and contains a large hunk of meat. Doesn't matter which meal - breakfast, lunch or dinner, doesn't matter how hot it is outside - must be piping hot and primarily meat. You can imagine how appealing a piping hot hunk of meat is in SW Florida in August. Blech. Oh, and let's not even talk about how much small children love, love, love their food to be hot enough to burn their lips. Fantastic stuff there. Anyway, for the first 10 years of marriage, DH did a good job of training me that this is how food should be and that it was my job to make it so. Having our first son (yes, the one that was incredibly colicky/irritable for the first year and didn't sleep through the night for the first 2 years) while still working 70-80 hours a week and still being responsible for all household chores and all cooking made me reevaluate this premise. I still do most of the cooking mainly because I don't like the few foods he makes and want to prepare healthy foods, but now I cook what I think is right for the family and what I like. And that's salad several times a week, ethnic foods, and tons of fresh veggies. When I first started making the switch, DH would make passive-aggressive comments asking where dinner was (while sitting in front of what I'd prepared). I learned to smile sweetly and let him know that the kitchen was right over there if he was interested and that I'd be glad to eat whatever he was making. The comments have stopped. He can still be a little nasty about some of it, but I honestly don't care. I make what I like and what's healthy. If he wants to make something different... have at it. Hasn't happened yet. Wow - I could have almost written this same post! My DH is the same way. Problem is, now that it's just he and I my grocery bill seems to have increased because we don't eat any of the same things. Not to mention the fact at he has a large appetite: if I cook a package of 6 chicken thighs he figures that's 2 meals. He'll cook a pound of bacon for breakfast; eat half then and then have BLT's for dinner with the other half. And, no, he doesn't have a weight problem. Sigh...

Tonight I'm making spicy shredded beef tacos.
2 lbs stew meat $5.28 1 onion $.98 1 small can chipolte peppers in adobe $1.48 1 16 oz can tomato sauce $1.00 1 package flour tortillas $2.48 cheese & sour cream (already on hand)
Cilantro lime rice long grain rice $2.00 a bag (at least 6 meals from bag) 2 limes @ 3 for $1.50 cilantro from my garden
dinner for 3 and at least 2 leftover meals for $13.74

I think i am going to try Mexican potato tacos from the betty crocker web site for dinner tonight. Meat is getting insanely priced around here. I'm on the look-out for vegetarian recipes he'll eat. He was also raised to believe no meal is complete without a giant slab of meat. Egggs are always dirt cheap around here. Hy-vee had them on sale for 88 cents last week. Milk is crazy. Hy-Vee seems to think it's Whole Foods, milk is $4.69. We bought it at SuperSaver for $2.89. Aldi's is advertising milk for $1.99 a gallon but they're way out of our way. Walgreens will sometimes have it that cheap for card holders which we are.

So easy even Doxie could make it...lol It's stupid easy. Just use a good quality long grain rice so it doesn't get sticky. no, you can fuck up rice. I've done it once. I've made that cilantro lime rice before - it's delish and goes well with this crock pot recipe I found for chipotle pulled pork.

I've found that the cilantro rice goes great with anything with chipolte peppers in it. It's the perfect "cool" to the spicy main course.

that's because Chipotle's rice has a shit ton of salt added. I salt the water when I cook the rice, but I don't add any extra salt. It makes a good cool side to the spicy tacos. I don't add any salt either. so tasty though! the reverse combo is good too - cilantro lime chicken/fish tacos with spicy rice. yum. I may have to do that soon.

I always run the can of chipolte peppers (w/o the can obviously) thru a small food processor to get it into a chipolte paste. I use what I want & put the rest into a small jar in the fridge. I can then add a spoonful of chipolte peppers to anything I'm cooking if I want it to have a little kick.
It's great to add some to bbq sauce for chicken on the grill.

Tonight is a recipe from Julia Child, Chicken Breasts with Mushroom and Cream
Chicken $6.14 Whipping cream $1.40 half the container Mushrooms $1.99 Green onions $.50 Butter (half a stick) $.35 The lemon juice, salt and pepper, sherry, chicken stock- had that all on hand.
So $10.38 for the entrée.
I will probably serve it over rice ($.50?), and cook up some frozen broccoli ($2.58).
$13.46 for supper tonight and at least 1 lunch tomorrow.

The liquid vodka gives the dough enough pliability to kneed and roll out well without cracking. However the alcohol cooks off when you bake the crust leaving a very light and flaky dough. Man I love those people (along with Alton Brown).

Some of you have really cheap dairy products. Here eggs are a minimum of $2.50 doz & a gallon of milk is pushing $4.
That chicken with mushrooms & cream sounds amazing.

Turkey burgers ($16 for 4, we will have 3) with cheese on English muffins and a side salad. Probably $20-$25 for all of it...for 2 people. Last night was pork chops ($7) and corn on the cob ($3), so $10-ish for the two of us.

If anyone was wondering, don't cook carrots in the slow cooker for 8 hours.... Yeah, now I have no vegetable. LMAO!! Where did they go? Mine never vanish and our crock pot runs too hot and cooks too fast. Are you sure you put them in there? I'm not a big rice eater but it's really easy to cook. I hate sticky rice. I put in olive oil or butter then add the water with a few dashes of salt. I bring it to a boil BEFORE I add the rice. When it starts a nice boil I add my rice (1/2 the rice to the water measurement). Stir the rice in the boiling water to mix it a little bit and let it continue to boil for a few seconds. Then put the lid on the pot and turn the burner down to a simmer. Don't open the lid for at least the first 15 minutes. At 15 minutes check to make sure it's not sticking to the bottom of your pot and you can stir one more time if you think it needs it. Turn burner off after 20 minutes total simmering and Walla! Perfect rice. I am trying Steff's spicy beef recipe and lime cilantro rice. That sounds so good!
