a spin-off of the direction that the "saving money while eating out" thread took. I'll just paste my addition to that thread to start:
Tonight is pork loin (put loin in crock pot, add a bit of water, sprinkle some sea salt, fresh ground pepper, rosemary, and onion powder on the meat, set it to LOW for 7.5 hrs) with baby carrots (just dumped the carrots in with the loin - it's one of those nights where we need a quick dinner) and brown rice. The carrots were $1.50 for the bag, the loin was $1.99/lb (bought a vary large full loin, cut it into 3 pieces, and froze them for later easy meals), and the rice I believe was around $2-2.50 for a 2lb bag. Easy, yummy, and will yield lunch (and probably dinner) leftovers.

I think tonight I am having salmon, brown rice, and kale (or maybe green beans).
Salmon - big bag from Sam's Club is like $20. It gives me probably 10+ good-sized pieces of salmon. So let's say $2.00. Brown rice - bag is probably $4. I probably use the bag 10 times before it is empty, and I make double servings each time. So 20 servings - let's say $0.25 per serving. Kale - it is $.99 per pound. I just bought a little less than a pound and it will last me two meals. So let's say $0.50.
$2.75 total for 1 person (DH is away for work).

no idea....may make a tiliapia recipe that I have or everyone may eat the ledo's pizza that I brought home for them last night after I went to dinner with my friend. If I don't make the tilapia (2 lbs for $9.98 frozen) I will still cook the asparagus ($2.99/lb I think).

I am making a bean/rice/tomato mess up. NOTE: I am cooking for 1.
beans are from a $1 bag of dried - prob 0.10 worth tomatoes are from a can I bought on sale & opened Sun - prob 0.20 worth rice is from a $1.69/2 lb bag - prob 0.08 worth add 1 oz cheese bought for 0.99/8 oz - 0.12 season w/cumin, cilantro, hot sauce LONG on hand top w/half an avocado - 0.25
Dinner = $0.75 cost

I made a potato, chick pea, and green bean curry. Beans were .67 each can, so $1.34, and I used 5 potatoes at about .60 (5lb bag for $2 on sale.) Chopped an onion, maybe another .30? I opened a new bottle of curry that I got for $3.99, but most of that is left. My sister brought over roti skins to wrap it in, don't know how much that was. We also steamed another bag of frozen vegetables ($1.00) that had broccoli, cauliflower, and carrots.
Mom chipped in for cake and ice cream for dad, it was his birthday. That's where the budget got blown. Black forest cake was $12.99.

We had fried fish last night that my husband caught over the weekend. Motel rooms were $180, drinks and snacks came in at $50 and the buddy he went with covered the gas.
That makes my fish dinner around $100, but the sides were cheaper with a baked potato and some salad coming in at 50 cents or so.
Fishing is his passion, but it does not help the grocery budget.

Homemade Chicken and Feta pizza. Crust- $1.50 ($3 for two pack, we'll use the other crust and make it in to garlic bread to have with dinner tonight) Feta- $2.35 Chicken- $2.00 (we get the big bag of pre-cooked chicken strips from Sams club for $7.99/bag. We used maybe 25% of it with the pizza tonight) Salad- $1.00 ($2 per bag and we had half the bag) Pineapple for dessert - $1.00 (we buy whole pineapples and cut them up ourselves. Ate maybe 1/4 of it last night- $3.99 per whole pineapple) Total cost: $7.85 for 3 dinners and one lunch (or $1.95 per meal) It was our fast meal for the week. DH didn't get home until 6pm and he had to leave by 6:20. He texted me when he was leaving the lab so I had time to have dinner nearly ready when he walked in the door. 12 minutes from start to finish

We had sugar smoked brats that we discovered in the in-house smoke case at SuperSaver. $3.50 for four. Brat buns were $1.99 for 8 of them.
Served with broiled aparagus that I got at the farmer's market. That was $3 a bunch but still cheaper than the supermarket and worth every penny.
And I made home fries using russets from a 5 lb bag I got for $1.99
So total $10.49 for dinner for three and lunch for me today.
The bag of russets of course will go to more than one meal and the leftover brat buns I am going to turn into bread crumbs. I save a ton making my own out of leftover bread bits. Taste better too.

DH is fighting a bad case of bronchitis so ate nothing. I had Chinese food left over from the night before, served on a bed of shredded sauteed lettuce instead of rice to save calories and add fiber. The Chinese food was $28 and I'd say I ate 1/4 of it, so $7 and maybe 50 cents worth of cabbage.
I've been doing 5:2 fasting (2 days a week I sharply restrict calories) so tinight's dinner will be practically free. Broth DH makes from leftover vegetable parts and pieces of meat that most people would throw out, a handful of pasta and a lot of sauteed brussels sprouts, with a dash of hot sauce. The brussels sprouts cost maybe $1.50.

Today probably isn't typical for me cuz I work til 7 on Tuesday, and I'm a "dinner at 5" person, so, by the time I get home at 7:30 I am usually famished but don't feel like cooking anything. If I have leftovers, I'll warm up a plate. If not, usually grilled cheese and sometimes soup. I do try to eat something small at work around 4:30 to hold me over, like a yogurt or something. Once in awhile if I have leftover that are easy to microwave, I may take those and eat at work at 4:30, then don't really eat when I get home. Maybe some cereal or something.

8.34 for dinner for three and lunch for one tomorrow. That's about 2 bucks each for a pretty darn healthy and tasty meal.
Plus we will have leftover salad dressing for next time.

Chicken Tikka Masala with a side of roasted cauliflower and herb crusted potatoes. Maybe some quinoa - instead of rice - if I feel industrious.
I made a double batch of the chicken tikka masala and froze several family meals a few weeks ago. Not sure exactly how much it cost, but each batch ends up feeding the family about 2 1/2 times, so a double batch would make around 5 total meals.
The expensive ingredients were the organic chicken (4 pounds @ $5/pound) $20, organic fresh yogurt $4, various specialty spices $2, canned organic diced tomatoes $4, fresh ginger and garlic $1.50. The organic cauliflower came out of our weekly veggie bag ($25 for over 25 pounds of organic fruits/veggies, but you don't get to pick you get whatever's in the bag) and the organic potatoes I had to buy at Publix, so they were expensive at $5 for a 5 lb bag. Don't remember what the quinoa costs, but I buy it out of the bulk bins at the local hippy store.

She honestly doesn't believe that a meal has been served unless it is piping hot and contains a large hunk of meat. Doesn't matter which meal - breakfast, lunch or dinner, doesn't matter how hot it is outside - must be piping hot and primarily meat. You can imagine how appealing a piping hot hunk of meat is in SW Florida in August. Blech. Oh, and let's not even talk about how much small children love, love, love their food to be hot enough to burn their lips. Fantastic stuff there. Anyway, for the first 10 years of marriage, DH did a good job of training me that this is how food should be and that it was my job to make it so. Having our first son (yes, the one that was incredibly colicky/irritable for the first year and didn't sleep through the night for the first 2 years) while still working 70-80 hours a week and still being responsible for all household chores and all cooking made me reevaluate this premise. I still do most of the cooking mainly because I don't like the few foods he makes and want to prepare healthy foods, but now I cook what I think is right for the family and what I like. And that's salad several times a week, ethnic foods, and tons of fresh veggies. When I first started making the switch, DH would make passive-aggressive comments asking where dinner was (while sitting in front of what I'd prepared). I learned to smile sweetly and let him know that the kitchen was right over there if he was interested and that I'd be glad to eat whatever he was making. The comments have stopped. He can still be a little nasty about some of it, but I honestly don't care. I make what I like and what's healthy. If he wants to make something different... have at it. Hasn't happened yet.

Of course the ones I make have some meat on them. I've done a cheeseburger salad, buffalo chicken cobb salad, a grilled chicken/fruit salad on spinach and one with turkey. We get farm fresh eggs from a friend. I only use them in stuff liked baked goods or fried rice. My egg allergy has gotten worse so eating a whole egg will make me puke for sure. I do hardboil them and put on side salads for my brother.

where do you get eggs for $1 a dozen? I live in the Chicago Metro Area. I usually shop at local ethnic Italian or Hispanic stores. My Italian place actually had them for 89c dz two weeks ago so I got three dozen (eggs keep a long time). I can usually get them for less than a dollar a dozen at least once a month. We do eggs for more than breakfast (look up impossibly easy hamburger pie - like a quiche) and I try to incorporate them into at least one dinner each week.

I am VERY PROUD to say DH has come a loooong way since we first got married. He actually looks foward to salad night. It helps that he is working on slimming down a bit, and so far has lost close to 40 lbs (yea him!!!). Salad nights give him enough leftover calories that he can have his cookies and milk for dessert and not feel guilty at all.

Halibut, mashed potatoes and asparagus. Fish was on sale for $8.99 a lb, so bought 2 lbs, mashed are $2 and asparagus $4.99. So $25 total for the 2 of us for dinner, but I will have lunch tomorrow as well. If adding in the wine, then $40. Still WAY cheaper than going out to eat!

Last night we had pigs in blankets, a can of baked beans and a pound of green beans - followed by Popsicles. I think the whole shebang cost about $5.
Tonight we are having canton noodles, which costs more, so a pound of ground turkey, the noodles, the sauce, cabbage, onion, carrots and edamane. I can't remember how much any of it costs, but more than $5!

I really shouldn't say anything - two of the meals DH looks forward to are salads, they're just not very leafy (Mexican 3-bean salad and almandine couscous salad). My DH came a long way too. His father is an immigrant from Lebanon. His family came here to escape persecution. Eventually he became all "I'm in Amurrica, where it's not a meal unless there's beef and a fountain of Coca-Cola, and you're poor if you can't have that every night." So every meal had either chicken or beef - he HATES fish and I don't think is a big fan of pork - and very few vegetables. Due to budget reasons we had quite a few meatless dinners starting out and we still have them (partly for budgeting reasons, partly for health/ease of cooking). And he doesn't ever complain.

FWIW - I checked the ad for this week and eggs are 1.29 dz. caputomarkets.com/specials/department_id/3This store and another one like it have spoiled me for life. I can't shop at Jewel or Dominick's anymore without cringing at the prices... The one thing I have noticed recently is the price of some base staples has increased dramatically. I used to be able to buy dried white, navy, kidney, and black beans for .79c a pound. Now I can't find them for less than 1.29 a pound. Same thing for dried split peas, barley, and lentils. That's like a 63% increase in less than a year. The only thing holding steady is pinto beans, I can still buy those in bulk for .79c a pound.

damn, that is low for eggs. The lowest I've seen a dozen eggs around here is $1.99/doz. They're usually around $2.30. We were talking about that the other day - food got expensive all of a sudden. I may stalk around the farmer's market we used to frequent and see if they raised their prices too.

Wow! $1.59/doz is usually the highest I go, and that's only if I wasn't doing a good job watching inventory levels and shopping the sales.
I think eggs and milk are considered strong loss leaders around here (Walgreens frequently sells eggs for 99c and milk for 1.99, not that I would drive/waste gas to make a special trip).
My sister considers 3.49/gal a good price for milk. I seldom pay more than 2.49 and often pay 1.99.

Tonight will be a chef's salad for dinner.
Romaine was $1/head and we'll probably eat the whole thing. Cukes 0.50 ea. Maybe another 0.50 in tomatoes and half the red onion 0.50. Rest of the rotisserie chicken, so $2.50, I'll shred up some of the huge chunk of cheddar in the fridge, so maybe $1. I'll boil up 4 eggs for the salad, so another 0.50 and make some croutons with the stale chunk of french bread that was left over from a meal a few days ago....so maybe another 0.50. Need to make some more salad dressing, so will say $1 in ingredients for this.
Max will be about $8 for dinner tonight for 2....with likely leftovers for lunch tomorrow.
