When I made the bacon on Monday my son was watching TV. He said "What's that smell?" and I told him I was cooking bacon. He jumped on the couch for 5 minutes yelling "Bacon! Bacon! Bacon!" His enthusiam for life is inspirational!

Breakfast food should be chewy. Crispy bacon is like biting into a cracker with fat dripping out of it.

Sounds like you don't like bacon no matter how it is cooked - so I don't think your opinion holds much weight.

First off, I don't consider bacon a breakfast food. In fact, it used to be a very cheap product and was eaten as a main dish during all meals. It wasn't until the pork industry started losing sales and bacon in particular was doing poorly (in the 40's) that they did a massive marketing push to make sure people connected bacon with breakfast, because they were losing the dinner market. That said, bacon is still used almost 50% of the time in non-breakfast meals. BLT's and putting bacon on other sandwiches, as well as using it casseroles and other multi-ingredient dishes makes bacon a versitile food. Not to mention, it is used as a topping for salad or potatoes. Different forms of bacon are used all around the world in meals at all times of the day.
Seoncd, I don't agree that breakfast food should be chewy. I don't like chewy cereal, I prefer that crunchy. I don't like chewy eggs, that seems dangerous. I don't like chewy pancakes, those should be soft and fluffy. Because bacon has such a high fat content, it should be cooked past the point of "chewiness" to render off the inedible parts of the fat. That fat, however, is very flavorful. But, it is best when it is liquified first, because the texture can be unpleasant otherwise. The reason that bacon is well suited as a breakfast food is the complimentary texture to eggs or pancakes. While one is soft, or even runny (as 3 minute eggs were popular when bacon really gained steam in the breakfast arena) bacon provided a contrary crispness. To put two soft or mealy textures together on a plate can be a culinary no no.

Thyme you sound like my DH. He works for a bacon plant as a QA technician. I hate taking him to the grocery store because he insists on inspecting every single damn package on the shelf and for some reason he feels the need to explain to me everything he is doing. Just find me a package of bacon so we can leave, please?
