Instant pot risotto for Wednesday night.
I accidentally thawed more shredded chicken than I needed. I'll have to figure out something to do with the other bag later this week.

I'll try to think of more, but I'm still not eating chicken yet. lol...

tonight I will be going high gourmet, pouring a bag of frozen cheesy broccoli over some pasta. stick a fork in me, Im done.
tomorrow, my friend and her BF are landing for the weekend. maybe more, they weren't sure, but it's not like I have to work on Monday. 🤷♀️🤣 Im not sure what meals plans are for the weekend, but if we stay in one night there might be some turkey piccata. if not, the package is dated the 26th so there's time.

I used the extra chicken in a chicken teriyaki of sorts. I made half the batch of my usual sauce and poured it over the leftover carrots and broccoli from last Saturday's tailgate. I roasted that in the oven. I heated up the shredded chicken and a bag of brown rice/quinoa mix. It came out pretty tasty. Good enough for Thursday night anyway. I'm usually done and over cooking by this point in the week.
Friday night will depend on when people get into town and the weather. Mother nature is handing us an early season snow storm for the last home game of the season.

Not cooking tonight. Leeann Chin is doing the work, and the clean-up. DH is going to take over the kitchen to make some holiday stuff early, and I'm working on Christmas cards.

-Last night: Leftovers from my road trip -Tonight: Leftover pizza with Eating Well's cheesy sweet potato black bean casserole. Because Dh doesn't care for them, I'll substitute the beans with lentils. -Tues: Lazy enchiladas i.e. enchilada casserole vs. rolling them up individually, rice, leftover casserole -Wed: Leftovers -Thurs: Thanksgiving turkey with all of the trimmings -Fri: Leftovers -Sat: Takeout -Sun: Chicken fried steak

minimal cooking this week, none tonight. I'm here for that! lol...
Last night - turkey piccata over linguine. there's two more meals here. tonight - pork fried rice w/bean sprouts. tons of leftovers, typically quick small lunches.
past that, idk. I bought a package of two thick cut pork chops dated Wed. I plan to stuff them with cheesy garlic spinach, sear and finish in the oven. when? 🤷♀️

Sunday night one of DH's siblings provided dinner. Not sure about a repeat of that meal. So many mixes are tricky with my allergies. I didn't get sick but it was sitting in my stomach like a rock.
Monday night I ordered take out. DH had a late work lunch for Thanksgiving so we were not on the same meal schedule.

I was going to punt the pork chops til tomorrow b/c I'm kind of not feeling it today. but the color is starting to change on the package. they smell okay, so it's fine, but I don't want to push off til tomorrow and find out they have turned. ugh. so tonight is going to be stuffed pork chops and roasted potatoes. I follow this blog for the cook time/temp for searing and then finishing in the oven. I use a small Dutch oven, as I find I get the best results with pork chops this way. my chops will be stuffed with garlicky wilted spinach and cheese.

the week caught up with me tonight. I've got whatevers left of a box of Kraft Dinner, waiting to get pitched when I go to bed in the next hour or so. sometimes, you just need a brainless meal. 🤷♀️

I've had luck adding a couple of days with a brine. for pork chops? I'm intrigued....please tell me more? Yes. I usually use an apple cider base (or a peach simple syrup), kosher salt, and peppercorns as a base. The salt preserves and my chops always come out juicy. A dry salt brine with end up with juicy chops but I have not used it for meat on the edge of turning. I also use your method of searing on the stove and finishing in the oven, or I sear on the stove and finish in the air fryer.

Woke up to 28 degrees and maybe made it to 30, so tonight was potato soup in the crockpot. Turned out better than I expected, but I need to figure out how pare it down. It looked like we barely touched it! I guess I know what we will be eating for the next couple of days.

I need to figure out what I'm doing this week. I'm only here til Thursday morning. I've got an open container of chicken broth in the fridge that needs to be used, so I think IP risotto is on the list. that will use 2c of the broth. I can probably use the rest in tossing sauteed veggies with pasta.

Wednesday night DH picked up subs. The kitchen was closed for Thanksgiving prep.
Thursday we had Thanksgiving. I did rolls, hot cocoa cookies and cranberry crumble cheesecake bars.
Friday night was Thanksgiving round 2.
I did Naan bread pizzas and salad Saturday night. We had to stop by the store for mozzarella on the way home but cheaper than ordering a pizza.
I need to figure out the upcoming week and do any needed grocery shopping outside of the Sam's Club run I'm doing. I have green beans and Brussel sprouts in the fridge. They looked fantastic when I did my Thanksgiving shopping Tuesday night.

well, there was less in that carton than thought. I had to add a little water to bring it up to 2c of liquid for cooking. no prob.
chopping is in progress while I'm watching centennial celebration pregame stuff for the Bruins. onion, garlic, mushroom, pancetta, and a chicken sausage link. I'll wilt in spinach after cooking, when I add the grated parm.

Sunday night I finished the leftover taco meat. DH went out with a friend to a sports bar type place on the way home from the football game. I gave my ticket to his friend. They hadn't got a chance to hang out in too long. It ended up being pretty cold so I was happy to stay home and be warm.
Monday night I did a sheet pan with pork chops, baby potatoes and green beans. I got the recipe from a Pioneer Woman cookbook I picked up Friday.
It used up half the bag of green beans in the fridge and was something different to do with pork chops and was pretty quick.

Sunday: DH ended up making homemade biscuits and green chili gravy. Yum. Last night: I was feeling funky all day, so I had 7-Up Zero, a few crackers and a string cheese. DH had leftover green chili. Tonight: Caulipower pizza and side salads if the romaine mix is still good. Wed: Ground beef soft tacos, rice, sauteed veggies Thurs: ? Leftovers? Fri: Takeout. Sat: Miso soup and stir-fry Sun: Chicken fried elk steak, veggies

Due to having to empty the freezer quickly, I put two bags of frozen garden tomatoes into the crockpot to simmer for sauce. I think that will be dinner tonight.
Last night was more freezer food, a chicken Cordon Bleu, along with the last of the creamed corn from Thanksgiving. Later in the week I'm making something for a Meal Train and expect to use more of the freezer food.

slim pickings in my fridge, and I'm sick of everything I've been eating lately. I'm currently thawing out a small container of black bean pulled chicken. I roasted potatoes last night, so I think I'll do some curly pasta tonight. there's a few meals in this container, but my mother likes this as well, so she can have the rest of it. or pitch it, I don't really care. there's plenty more of in the freezer. I started eating chicken again this weekend, and haven't died yet. lol...

Sausage rice and green beans. Some people would call it dirty rice, but I don't use organ mean. So I just call it sausage rice. And I throw a green vegetable on the side and call it good.

Called a stop on the potato soup leftovers last night. I had planned to hit the grocery store tomorrow since I was going to meet manager at a facility but plans changed and he can not make it for the snow (near Boston), so I will be later tonight. - when they changed our weather this morning to possible snow tonight/tomorrow morning. So tonight will likely be takeout. Today is $5.99 sushi day at the grocery store, and it is pretty good. DH will likely get chicken from the deli.
