Monday night southwest chicken foil packets. It makes 4 packets. The other 2 will be served Wednesday night. I am trying to cut back on unnecessary eating out aka because I didn't make a plan. We have plenty of eating out with our travel/schedule so we are not deprived.

Tuesday night chicken sausage bolognese with cheesy garlic bread. I loosely followed a Hello Fresh recipe. I used cavatappi for the pasta.
It's been awhile since I've made it because the cans of tomato paste I bought for it are close to expiring.

I made the chili Wednesday because I didn't thaw ground beef for the Loco Moco (I'll make that Sunday). The chili yielded 6 lunch and supper servings. Tonight is Thai, and tomorrow's appetizers will include a charcuterie board of bacon wrapped venison, crackers, cheese, and pepperoni slices. I look forward to seeing what our friends bring.

Lunch today is a piece of Quiche and a cinnamon roll.
Dinner tonight is going to be Loaded Veggie Soup - Costco soup with extra veggies added in.
Saturday is going to be sandwiches for both lunch and dinner - turkey for sure
I plan to do a Pork roast in the crock pot Sunday for a few days of yumminess. Salad will be on the side and the greens will work for wraps.

Kraft dinner, soon. this week has kicked my ass, and the kitchen is still in disarray from a liquefied spaghetti squash I discovered last night. I've cleaned up the mess, but still need to put the cabinet back together. I'm very ready for the weekend now.

Wednesday night we had the leftover chicken packets.
Thursday night we had quesadillas from the taco truck at the football game. Their food is so good.
Friday night we went out after the basketball game.
Saturday night I made mini pizzas and salad. I've been using the mini Naan bread from Aldi to make them. I scored some Rao's garlic pizza sauce marked down at Target to use for the sauce.

I did a bunch of cooking today, for everyone other than me. once I cleared that to-do list, I made myself turkey piccata and some spinach tortelloni.
there's a ton of leftovers, which means I don't really have to think for a few days. with 10 work days left, I appreciate that.

I don’t read here regularly, but I wanted to say that I tried the southwest chicken foil packets some time ago, after you posted about them. And must have provided a link to a recipe if I dared to try them lol. Mister and I both enjoyed them (thank you!), but I haven’t made them again, so now they are on my mind again after reading this post.

Glad you liked the chicken packs pink.
I hadn't made them in awhile because it had been so hot and hadn't cooled down until this week.
Sunday I pulled one of the smaller roasts from the freezer. It was marked as an arm roast which Google said was similar to a chuck roast. I put it in the crock pot with some beef stock and cooked on low for 8 hours. I dumped half a package of baby carrots in for the last hour. I made mashed potatoes and successfully made gravy.
It works for me that we don't have to eat the beef for days but I was disappointed at the amount of meat I got. There was a big bone that I couldn't see the way it was wrapped and I cut a bunch of fat off.
My family has decided we definitely prefer grass fed beef. This cow was not grass fed. While it was much bigger, the quality is not nearly as good.
I'm not going to be nervous about cooking the others if I'm going to lose half or more to bone/fat.

Still nice and tender, and there was enough leftover venison to make another batch for DH and me last night, so the Loco Moco was put on hold again. Had some for supper and there are leftovers for lunch. Our neighbors brought a 7-layer dip and a few other things. This week:
Tonight: Salmon, shrimp, veggies Taco Tues: Ground beef tacos made from shredded cheese, rice Wed: Gumbo featuring beef sausage and crayfish, leftover rice Thurs: Elk or venison, veggies Fri: Out Sat: Leftovers Sun: The Loco Moco

I'm kind of sick of pasta, I think tonight I'll roast a few tiny potatoes and pour some cheesy broccoli over the top. I'm still not brave enough for chicken yet, but I do have some leftover crispy bacon from most of a package I cooked on Saturday. that's a solid crumbled topper for the bowl.

Monday night a repeat of salad and mini pizzas using the mini Naan bread. I'm going to buy some and freeze for a future quick meal. I'm working on building up some options for when I haven't shopped or thawed stuff out.

I went in to the office one last time today, and realized I hadn't yet eaten anything except a bite of a way too old granola bar i found in my backpack while on the road 🤢 and not even coffee. my hands were shaking when I tried to sign off on something, not good. so I decided to hit the road a little early and get food. my MO in driving home is to get past the heinous highway interchange near Boston and then park myself somewhere with wifi and work another couple hours before I pick up the pups from daycare.
today, that meant Buffalo Wild Wings. I got nachos with chili and gave it the old college try haha. thankfully they didn't layer stuff well, I didn't go far before it was just chips. fine by me, I'm still stuffed.

Wednesday night the rest of the beef roast. I made fresh gravy and cooked more carrots.
Leftover enchiladas Thursday night.
Friday/Saturday something out as it's a football weekend. Probably chicken wings Friday night.
Even with just having leftovers, I'm over the dishes. Totally over it.

I hear you regarding the dishes, wvugurl26. Sunday night every single dish/pan/pot/glass/etc. in the house was clean and put away. Today, despite the fact I filled and ran the dishwasher last night, there are dishes in the sink and 3 dirty pots on the stove. Last night's gumbo was delicious. I loosely followed Family Favorite Recipes' instant pot recipe due to time restraints, but I cooked it on the stovetop. I made my own chicken broth from bouillon and omitted the peppers, celery, okra and chicken and substituted crayfish for shrimp. I also used only the 10 ounces of Rotel and not the fire roasted tomatoes. From the freezer, the rest of June's cornbread scraps were perfect croutons. Venison backstrap is in a Worcestershire red wine marinade for tonight's chicken fried steak. On the side will be sweet potato fries and side salads. Tomorrow we're going to a pub. Have a tasty weekend, everyone.

The kids said they were hungry, so I fixed hamburgers and cheeseburgers, beef rice a roni, fried potatoes, and a vegetable plate. So then they both said they weren't very hungry, did not make me a real happy camper. I ended up eating a lot of the rice a roni, can't remember the last time we had it. I'm trying to find some quick easy stuff for when I don't want to cook a lot.
I did find that kim chee tastes really good with a hamburger, but then I like it just straight from the jar! DIL buys it from a Korean store here and its good.
Now what to fix tomorrow.
This morning made pancakes and little sausages. I am not using a mix anymore will just make them from scratch, they weren't that great.

Today I'll finish some leftover soup I made earlier in the week. Tonight it is going to be pasta with spinach and walnuts. I'll add some ground turkey I need to use up.
Over the past few days I have eaten an entire pumpkin pie by myself. It is the recipe on the back of the Libby canned pumpkin label. I kept thinking it was okay to eat it with reckless abandon because it really is a vegetable.

tonight was a big skillet meal that was dinner and will be my lunch or whatever for the rest of the week. ~1.5lb ground pork, onion/garlic/Serrano pepper,and a family size package of Zatarain's dirty rice.
are the rest of you impacted by the IT breakdown with some supermarket chains here on the East Coast? produce and meat cases are empty here, with this sign that says nothing about any estimated time of resolution. makes it really difficult to plan to shop the flyer when the store doesn't have half the shit that's listed on sale. 🙄 <- see also, how I'm having dirty rice for the week instead of turkey breast piccata.

I haven't been to the store locally since last Thursday. The closest one to me is horribly hit or miss on their produce cases being stocked anyway.

Monday night we ordered bbq because I had stupid meetings and didn't get the steaks pulled from the freezer until noon.

Sunday was spicy chicken Caesar salads, with some tenders I took from the freezer.
Romaine lettuce = ~$2 (used about half the bag) Chicken tenders = ~$2 (package was $4.34, and only ate half) Parmesan cheese = $1 Homemade croutons from marked down bread = $1
$6 for 2 servings.
DH finished off the tenders Monday with some blue box mac and cheese. Still have a lot of lettuce left, debating taking out a protein for DH to finish it off today.

countrygirl3, I've made Spend with Pennies' pancake mix for several years and have been happy with it. I store it in a large Mason jar and use almond milk when cooking them. seriousthistime I'm with you on the pumpkin pie, LOL! Yesterday: The Seasoned Mom's Chipotle chicken bowl. I used Great Value mixed chili beans for the first time. Not too shabby! Tonight: Shrimp stuffed portobellos, sauteed yellow squash and zucchini Wed: Taquitos, bacon wrapped asparagus Thurs: Out Fri: Work function Sat: Something easy Sun: Chicken fried venison steaks, Eating Well's cheesy sweet pinto black bean casserole using lentils in lieu of black beans

I needed a Walmart run this afternoon, for the pups. that's getting messy and expensive with LD on a chicken restriction, but here we are. 🤷♀️
after cooking off 7lbs of ground chuck and wilted kale (currently cooling before I pack it all up), I nuked a container of Panera's mac and cheese that was just calling to me as I walked thru the produce dept. no idea why, I don't think I've ever had it before. its not bad, won't be a repeat purchase lol..
oh - I found turkey cutlets tonight. so I'll get that piccata at some point soon. lol... and I still have a lot of dirty rice in the fridge. the kitchen is pretty much closed for the weekend now.
