Hi everyone! Last night's game night food: Egg rolls, taquitos, bacon wrapped cream cheese stuffed dill pickles, leftover fries from Friday's takeout. All warmed up and/or cooked in the air fryer. I love that thing! Tonight: Gimme Delicious' salmon with avocado salsa, shrimp cocktail and fried okra. Tues: Rotisserie chicken, bacon wrapped asparagus.Wed: Shrimp avocado salad including cherry tomatoes and cucumber slices on top of cauliflower rice. Thurs: Slow cooker elk roast with carrots, stuffed portobellos on the side. Fri: Takeout Sat: Brats, chili, veggies Sun: Something easy I didn't go to the store last night because it was the first of the month, so instead of buying the rotisserie chicken, I used what was on hand: Birds Eye veggie made Rotini Marinara, canned chicken, shredded mozzarella and parmesan were cooked and blended together and served with game day leftover cream cheese stuffed bacon wrapped pickles.

I hear you on avoiding stores on the 1st of the month. I had to make a Walmart (grocery) run today over lunch, and it was nutty.
tonight is leftovers, I mixed up fresh arugula salad for turkey cutlets and I'll be reheating the rest of the mashed potatoes. there's one cutlet left for another day.
as far as the rest of the week, I'm going to poach a BSCB from one of the family packs I grabbed today. the other has already been run through the IP and shredded. idk what I'll do with that just yet, but I'm also working my way through the freezers so I'll just check in once in awhile. 🙃

Last night's salad is worth mentioning. The recipe I followed was from FB, but I just researched, and it looks to be the Whole Lotta Yum's recipe. The dressing included lime juice, avocado oil (I used olive), agave nectar (or other sweetener-I used one Splenda packet), salt and pepper. I served it on top of riced cauliflower with a side of air fried beets and homemade aioli. Yes, my kitchen is trashed, but it was so worth it!

Trying to get back in a cooking groove.
Wednesday night I made spaghetti. I was going to make a stir fry but that would have required a grocery trip for the vegetables.
Thursday night chicken teriyaki with veggies and rice. I'm using a frozen deluxe stir fry mix.
Friday/Saturday I'll be gone. DH might try this newer place. They do stir fry bowls/salads. Their base recipes have too many soy beans for me to feel safe.
Sunday is TBD. If we are home, I'll try to cook.

I mixed up some bruschetta (with some prosciutto in it) earlier and let it sit in the fridge. I'll be tossing in a package of chicken and prosciutto tortellini later on. it's good hot or cold, so whatever I don't eat can be a quick lunch tomorrow straight out of the fridge.

It's been hotter than hell here for the past several days! So I'm gonna channel cooler thoughts and make potato leek soup for dinner tonight! It's a family fav!

earlier today I made a Sunday dinner of chicken Lombardy and mushroom ravioli. I'd had a slice of toast hours earlier and my fridge is pretty empty this week, on purpose. I'm going to roast a turkey that's been in my chest freezer since last January, next weekend. I've been making progress on clearing out the chest and upright freezers of older stuff also. this week will be um, creative.

It's interesting here as well. I need to go to the store but we are leaving Friday night for vacation. I was going to go today but I don't have a list together. I should just pick two meals and cook them and those can be lunch/dinner as needed this week.
My dinner the last two nights has been leftovers from earlier in the week. I need to get a rough plan together for vacation so I can bring any needed specialty things.

I got my act together today and went to the grocery store. Hopefully I didn't get too much fresh produce. I think I have a plan.
Monday night was a sheet pan dinner with chicken sausage and all the vegetables.

Holy crap, I cannot believe it's Thursday already! Happy Friday eve, everyone! This week: Sunday: Leftover brats from camping, air fried bacon wrapped asparagus. Monday: DH worked out of town, so bachelorette night popcorn. Tues: DH had slow cooker Mexican pulled pork burritos, and I had nachos leftover from a client lunch. The pork recipe can be found on Like Mother Like Daughter's website. Wed: Comfort food-Air fryer baked eggrolls and taquitos with shrimp cocktail. Thurs: Out with clients. Fri: The shrimp and veggie stir fry I didn't make Monday. Sat: Pizza Sun: Football food including air fried steaks. I've never made the latter, but a friend said her tenant shared one with her and it was delicious.

Tuesday night we ate out.
Wednesday night I had leftovers from Monday and I picked DH up Sonic. Ouch on the total at $13.
Thursday night beef cabbage stir fry. Leftovers will be Friday's lunch.
Friday night we will grab something on our way out of town to vacation.

I'm debating heating up a can of soup tonight. I've done that a couple times this week already. last night was canned chicken and a package of frozen cheesy broccoli over roasted tiny potatoes. I'm still kind of full from lunch, but should probably still eat something else. 🤷♀️

this weekend is Canadian Thanksgiving. my parents came down today, I roasted a turkey and did up a spread of veggies and sides. they brought some absolutely sinful "small bites" Italian pastries with them. Dad had a FB Messenger video call with his sisters (he's the youngest of 7) up in the Maritimes while I finished up cooking our meal. we had turkey, mashed potatoes, bread stuffing, and roasted Brussels and acorn squash. I sent them home with as much leftovers as I could get away with (I had Mom tasked with slicing the rest of the turkey while I packed everything else up). I've got probably half a turkey and whatever stuffing I couldn't give Mom left from today, and I'll just roast more veggies as I go.
I'll be up for awhile still tonight, as the heat to the stockpot just got turned off. the dishwasher cycle isn't done yet either. I'm going to toast some sourdough bread with cheddar cheese (a la the tuna melt) and add some sliced white meat turkey, and then go zone out downstairs to something other than football. I've already set the alarm on my phone in case I doze off in the next hour and a half.

Here's the week Monday - Pork chops and baked acorn squash Tuesday - Jazzed up mac-n-cheese (ground beef, onions, bell peppers etc) Wednesday - Bell peppers stuffed with lentils and rice Thursday (DH) - Beef Stroganoff from the freezer Friday - Tuscan chicken from the freezer Saturday - Braised lamb shanks and couscous Sunday (DH) - Meatballs in red sauce over polenta chiver78 Your Thanksgiving feast sounded amazing!

Yum to the Thanksgiving food! Last night's air fried steaks were tasty! Two slices of tenderloin were marinaded for hours and rotated a quarter turn every so often. I had a few tiny slices of homemade air fried banana bread while waiting for the steaks to cook, and air fried leftover fries were a side for DH. I followed the Recipe Critics air fryer steak recipe which included a flavorful herb butter. I also toasted up a few leftover sandwich rolls with butter and cheddar. This week: Tonight: Air fried chicken legs with shrimp and cheese stuffed portobellos Tues: Doctored up Caulipower pizza, side salad, air fried crispy sweet potatoes Wed: Comfort food Thurs: Plan to Eat blog's beef and shrimp gumbo with rice Fri: Takeout Sat: Goulash and au gratin potatoes Sun: Football food including bacon wrapped shrimp and beef something. I'm thinking perhaps slow cooked with BBQ sauce to make sliders? Still getting through the half beef we bought quite some time ago. First world problems for sure.

I've been snacking on bites of stuffing all day (this is why I don't ever make it except Thanksgiving!) and I have heartburn tonight. I gave my dad some grief yesterday for not taking any for the same reason, so I guess this is the universe telling me to have a seat and think about my behavior. lol...
tonight, I'm roasting some Brussels sprouts to toss with leftover turkey and some pappardelle with a little turkey stock and some shredded mozzarella. I might also have a small bite dessert, if I have any room later. TBD 🙃

Sunday night we had steak, baked potatoes and salad. We ended up having to just broil the steak which worked out. It was a big chunk of flat iron steak. We couldn't get the grill at the rental house to light.
Monday night DH made meatballs from scratch. We mixed the meatballs with sausage and served over spaghetti. Garlic bread and salad for sides. Lots of dessert options as I had brownies and ice cream planned and my extended family brought a couple more things.
The kitchen is all cleaned up and the dishwasher is unloaded. I'm not cooking a single thing today. We went out for breakfast.

Wednesday night my dad cooked cheeseburgers and I made a salad. Also served with chips.
Thursday night my brother requested to cook dinner for us. Lord if my grandma had only lived long enough to witness this.
Friday night we are going out for hibachi with my cousin.
Saturday some sort of take out because I will not be cooking after a 9 hour trip home.

heh, you'll be fine. last weekend's turkey was from last fall. it was fine tonight, I'm leaning toward having a veggie burger with bacon I'm done with turkey and all of everything else in the fridge, and this is a hard turn from all of that.

I had some grand plans to make pozole, but after walking the pups this afternoon, I decided to park my butt on the deck and soak in more sun. I still need to cook off at least one package of pork chops for the pups, I might just debone and cook off the 5 more packages of bone-in chops I picked up this morning on deep sale. I'll probably end up heating up a can of soup for myself. pozole will be the goal for tomorrow.

Last night I cooked up a big dinner before I cut my finger and had the kids over. It was good. Son took at least half of it home, okay by me.
Tonight DIL made shrimp fettuccine, sauce from scratch, it was delicious, kept enough for DD and grandson for tomorrow.
After that maybe fish sticks, hard to clean my kitchen right now.

Last night instead of bacon wrapped shrimp, I made tempura mushrooms using sliced portobellos, and tempura made with the usual almond flour in lieu of all purpose. Delicious. Tonight: Elk with sauteed yellow squash and zucchini Taco Tuesday: Shimp soft tacos, romaine, rice Wed: Budget Bytes chicken pot pie using canned chicken because that is what is on hand Thurs: Pizza with the ATV club Fri: Takeout Sat: Halloween party. Folks are bringing red and green chili, and a fruit or veggie tray. DH will buy fresh tortillas, and I'll round things out with cornbread, chips, chili toppings, mini franks in crescent rolls, a cauldron of BBQ meatballs, and devilish eggs. Sun: Leftovers

pozole finally got made this afternoon, I had a small bowl tonight. I picked up a package of thin-sliced chicken on a Walmart run-through this morning and didn't realize til I got home that it's dated tomorrow 🙄 so, tomorrow night will be chicken piccata, and Ill be picking from the leftovers of both for the rest of the week. my kitchen is closed except to do another batch cook of pork chops for the pups while they are still on sale.

Sunday night DH's brother hosted a family meal.
Monday night we had beef fajitas. I'm continuing to work on the remaining beef cuts in the freezer. I marinated a flank steak and DH grilled it.
Tuesday night I was fried when I got home so we made fajita bowls. I heated up the leftover meat and peppers in the skillet and dumped over a brown rice quinoa microwave packet.
Wednesday night something with chicken. I want that wrapper out in the trash tonight.
