Smoked, loaded baked potato tonight. It is huge and loaded with pulled pork, cheese sauce, shredded cheddar, bacon, sour cream and broccoli. $25 w/tip. Still within my total per diem for the day. I'm sick to death of burgers and sandwiches this week.
I loved our lunch the first day but I might have been the only one. It was a bowl type place and I got a squash one with chicken, rice, pumpkin seeds, butternut squash, maple chili roasted Brussel sprouts, carrot slaw, and ginger maple vinaigrette. They did have the ac so cold my food got cold before I was finished.

pending knowing what the carrot slaw was dressed with, that bowl sounds divine. I hate carrots though, so I could have also just left it out entirely. lol... after yesterday went sideways with work, I found myself on Cape for the afternoon to decompress. I brought home Chinese take-out and had some last night. tonight, if I ever get hungry, will be some leftover garlicky bok choy over linguine that I'll cook fresh. tomorrow, I'll take inventory in the fridge and see how the next week looks. there's a big bowl of egg salad (and some un-dressed diced eggs that I will share with the pups) and another half sandwich worth of tuna salad, that I'm aware of for quick bites. past that, no idea.

scratch whatever I said earlier. currently waiting on pizza rolls to finish cooking, they should be done by kickoff. I'm past done with this week.

Apparently I can't read. I went back to the description and it said carrot shave not carrot slaw. Basically it was just shredded carrots. It had a mix of orange and purple. I left off the raw onions. Very easy to customize as it's a setup similar to Chipotle. I wish we had something like it at home. We got a Honeygrow but they've got soy beans in way too many base dishes for me to feel safe eating there.
It also said the stuff was from local farms. Anyway it was delicious. My favorite lunch all week hands down.

Tuscan baked chicken is in the oven, a very old Cooking Light recipe that I love. Basically, chicken thighs baked in a mix of sauteed onions, diced bacon, cannellini beans, diced tomatoes and fresh spinach.

I've had some horrible heartburn all day, so garlicky bok choy over noodles wasn't happening. I've got a nice bland pot pie in the oven now, 20min more to cook.

Friday night we stopped and met friends for a drink on our way into town. The menu wasn't exciting me and our friends advised the service had not been great. We had a cocktail, they finished their food and we all left. They insisted on paying for the drinks.
We ended up at a local Japanese sushi place. It's been there for at least 20 years, we just forget about it for some reason.
We got beef and vegetable dumplings and steamed broccoli for appetizers. The broccoli was badly needed after a week of work travel. I got chicken teriyaki for my dinner and DH got salmon teriyaki and a sushi roll.
My leftovers were dinner Saturday night. I think it was $71 pre tip. DH paid. Given that two other local restaurants we tried to go to this weekend have closed, I'm good with supporting local places.

DH picked up a variety of steaks Friday to celebrate my promotion. He grilled t bones Friday and sirloin Saturday. I added sides - fiesta potatoes Friday, creamed peas and Knorr parmesan noodles Saturday. Not sure what the plan is for today, but rain comes in tomorrow for the rest of the week, so perfect time for soup. I can eat it anytime but DH is not a fan in the summer. I have a very rich beef bone broth to use up. Just have to figure out how.

DH is heating up some of the leg of lamb I cooked a week ago and nuking a package of rice. Tomorrow I'm doing tortellini with pesto, an easy one in case I have a reaction to the flu shot.

Instant Pot risotto tonight, using some fridge goblins. there's leftovers. tomorrow night will likely be bok choy over noodles again, since there's a bunch left and they are from Wednesday. I can swipe some shredded rotisserie chicken from the pup stash to add some protein. past that, I picked up a package of chicken breast tenderloins on a Walmart run today. they are dated the 24th or 26th, I can't remember. I'll open the package and separate into smaller portions to freeze on Tuesday, and do something for dinner with whatever I don't freeze. maybe tacos, just thinking about the other fridge goblins I should use up.

We are zeroing in on the beef inventory and have about 3 more steak and roast packages, and several pounds of the ground DH processed from steak. Instead of pork loin, I asked DH to make carne asada last night. SO good! We had leftover enchiladas and calabacitas with it. Also on the side were Hatch chile corn tortilla chips and fresh avocado
-Tonight: Sliders made of leftover BBQ pork from the freezer on leftover Hawaiian sweet rolls, bacon wrapped asparagus, side salads. -Tues: Grilled salmon and shrimp with avocado salsa, sauteed squash and zoodles. -Wed: Air fryer keto baked fried chicken, veggie made "pasta" from the freezer, side salads. -Thurs: Out w/ friends at a brew pub. -Fri: Leftover pork from the freezer, horseradish, riced cauliflower. -Sat: ? -Sunday football munchies: Eggrolls, shrimp cocktail, chips/pork rinds, dip.

Sunday night we got take out.
Monday night I made Hamburger helper from scratch. I thawed hamburger to be the protein and this required the fewest purchases at the store. And gives me leftovers for Tuesday's lunch.
Tuesday night black bean pulled chicken.
Wednesday I don't know yet.
Thursday leftover black bean chicken because we have the first play of the season and the start time has been shifted to 7:30 instead of 8.
We are getting cooler, rainy weather this week as well.

i checked the date on the package of chicken and it's the 26th. so I begged off cooking and dinner tonight was a package of frozen cheesy broccoli poured over a diced roasted russet and some chicken I swiped from the pup stash. today was a lot peopley and I'm exhausted.

I cooked cubed steak in the instant pot with mushrooms. I made mashed potatoes on the side. I was going to have green beans but I got a late start cooking.
I had to go to the grocery store before I could cook. And then I finally turned the peaches in the fridge into a cobbler and I made what the recipe called mcgriddle bites.
I'm tired of yogurt for breakfast so I was looking for something else.
I'm trying to get the beef used up out of the chest freezer so I can defrost it. Dad is talking about ordering another cow.
My kitchen is trashed. And I did a bunch of dishes up as I went and put stuff in the dishwasher.

dishwasher is pretty full already, and I'm just trying to stay awake to a respectable hour before I go to bed. skillet dinner tonight - a Knorr rice packet with a bunch of fridge goblin add-ins and the last of some fresh chicken stock I didn't pack up for the freezer. there's leftovers for quick bites the next few days as well. 🤷♀️

tonight's going to be some comfort food with some sort of pasta with red sauce from the freezer. I've got some thin sliced turkey breast with a sell-by date of tomorrow, I think tomorrow night might be turkey Milanese. will need to pick up some grape tomatoes on our midday adventure.

DH forgot to get a bell pepper or check the condition of the celery so dinner will be "interesting." He will learn by his errors or not, and supper will be edible. In all honesty, I've made more than one blooper supper too.

I'm looking forward to dinner tonight! it's going to be turkey Milanese with mashed potatoes. there's an open package of prosciutto in the fridge, so I'll chop a slice and add it to the arugula salad. the turkey was about ~1lb of thin sliced turkey breast, so there will be leftovers.

Hi everyone!
Last night's game night food: Egg rolls, taquitos, bacon wrapped cream cheese stuffed dill pickles, leftover fries from Friday's takeout. All warmed up and/or cooked in the air fryer. I love that thing! Tonight: Gimme Delicious' salmon with avocado salsa, shrimp cocktail and fried okra. Tues: Rotisserie chicken, bacon wrapped asparagus. Wed: Shrimp avocado salad including cherry tomatoes and cucumber slices on top of cauliflower rice. Thurs: Slow cooker elk roast with carrots, stuffed portobellos on the side. Fri: Takeout Sat: Brats, chili, veggies Sun: Something easy

This week is sort of "off" for a number of reasons
Monday - sauteed chicken tenders, spinach and tomato salad, potato salad (because DH bought it and didn't use it and I'm to frugal to throw it out) Tuesday - we had lunch and popcorn at a movie so he ate a bowl of cereal and I'm not hungry Wednesday - turkey tostado Thursday - DH's night, cauliflower pizza Friday - Chicken Italian sausage with pasta and marinara Saturday - Leg of lamb (leftover from the freezer) and a baked sweet potato Sunday - DH's night, beef Stroganoff, egg noodles
