I finally tried an Instant Pot risotto recipe. I love risotto but don't like to stand over the stove stirring and stirring it.
It turned out well. I added some boneless chicken breast and about a cup of frozen peas. It was good. I'll make it again.
I love one-pot meals.

I use the instant pot risotto recipe chiver has posted. It's pretty forgiving. I keep frozen peas and frozen shredded chicken in 1 cup portions to toss in. Makes for an easy meal when fresh stuff is getting low.
Friday night grilled filets, steamed broccoli and roasted baby potatoes.
I wouldn't have said it was a must have feature but I like the air fryer mode on the new stove.

Tonight was leftover Stove top and some hot dogs -- Tomorrow will be turkey with mashed potatoes and gravy. I'll add some veggies too.

I was going to get take out because I'm tired of cleaning the kitchen. We couldn't agree on what restaurant.
I made quesadillas with the last chunk of flank steak. I sautéed up a pepper and shredded a bar of cheddar.
That made 3 meals out of the flank steak.
More filets on Sunday because I couldn't tell there were two per pack when I pulled them to thaw.
I need to get to the store Sunday and get some better breakfast and lunch options.

Bought some good crusty bread yesterday that is perfect for some leftover French dip meat from the freezer. This leaves one pack. Planned to make some peach dumplings as well, but I leave tomorrow and won't be home until late Thursday, so I may save that for my return.

Tonight will be the beef noodle soup simmering on the stove now.
Tuesday - Tuscan chicken (leftover from freezer) Wednesday - Butternut squash, Brussels sprouts Thursday - Halloween, skip dinner Friday - Leg of lamb (freezer stash), some veggie? Saturday - Chili (freezer stash) Sunday - DH's day, tuna steaks and ??
I'm trying to thin out the freezer a bit.

whooo.....I woke up last Thursday with food poisoning from. the night before dinner. I swiped some previously frozen rotisserie chicken from the pup stash to add to a Bertolli skillet meal. the pups haven't had an issue,so I'm thinking it was the skillet meal. maybe it thawed and refroze before I bought it? the store has had some freezer issues lately, although not the particular case where I picked up this one 🤷♀️ idk, but im all set with chicken for awhile. whoo..
Anyway, as I ease back into real life, I made a small batch of spinach Mac 'n cheese yesterday. tonight, I think I might reheat a bowl of pozole before I have to toss it.

Sunday night DH wasn't hungry so he picked me up a salad.
Monday night I sliced the filets up and sautéed with bell pepper and mushrooms. Served over yellow rice.
I also need lunch for Tuesday in the office so I also made the planned chicken teriyaki.

Hope you're feeling better, Chive. Something didn't set well with me last Friday night and I ended up getting sick in the middle of the night. I don't like when that happens, but I was able to sleep better afterward.
Sunday night: Leftover pizza, toasted baguette with olive oil and Italian seasoning, cream cheese, pepper jelly Monday: Party leftovers including BBQ meatballs, crackers and dip Tonight: Air fried T-bones with Always Use Butter's homemade garlic butter recipe, side salads, leftover green chili for DH Wed: Delish.com's red beans and rice using JD sausage in lieu of ham because that is what is on hand. Thurs: Romaine based salad, air fryer eggplant with a parmesan and pork rind breading, toasted baguette with brie and honey. Fri and Sat: Unsure Sun: Hatch chili pizza Mon: The Recipe Rebel's white chicken chili using Northern beans. (ETA: I'll use canned chicken from the pantry because that is what's on hand.) Tues: Elk, veggies Wed and beyond: TBD
My cholesterol is in the "normal" range, but on the upper end of it. So, I'm going to incorporate foods to lower it further. Despite the fact I am a low carber for the most part, I'm going to start making a few bean dishes as noted above. I'm open to any of your ideas except for black- and black-eyed beans due to DH's tastes.

Tuesday night I made sloppy joes from scratch and sweet potato fries. This was my first time making my own sweet potato fries.
I think for the future, I'd pull out the air fryer versus using the air fry selection on the oven. They were tasty though. The rest of the buns and the last pepper were used up.
Wednesday night I have a 5pm appointment. Dinner will be the rest of the teriyaki chicken.
Thursday we are going out for Halloween.

Back then Andouille sausage wasn’t really a thing in grocery stores where I live. Which was one of the reasons she brought ingredients for her meals with her. I tried to make it myself a year or 2 ago, using a recipe I found online. It was horrible and we had to try to doctor it up to try to make it taste like something we were willing to eat. I may be “spoiled” because of the standard that was set by a New Orleans native when I first got a taste for red beans and rice. But I’d still like to learn to cook it myself, and am interested in good recipes for it. That is why I am asking about the recipe you mentioned.

Of all the places I've visited, New Orleans is on the top for food. All of the places we went were really good. Usually there's one or two misses.

How special to have authentic red beans and rice made for you. Last night was my first time making the recipe. Prior to that I would make it from the grocery store boxed stuff. My husband's family is from the south, so he is happy when I make it. As usual, I made some adjustments when following the recipe: -Used a can of red kidney beans instead of dry beans since it was a weeknight -Browned Jimmy Dean sausage then added sliced Hillshire Farm beef sausage bought in bulk -Used beef broth in lieu of chicken because that was on hand -Omitted the celery and onion and used powder for the latter -Amped up the flavor with Tony Chachere's Creole seasoning -Added the cooked rice to the above and let it simmer DH said it was delicious.

thabks, Iggy. it was a rough couple of days, but I'm human again.
re: recipes with beans. I make a knockoff Olive Garden minestrone soup with kidney and cannellini beans, the recipe also calls for chickpeas but I don't like them, so I omit. and, I cook and store the pasta separate from the soup, so you can serve with or without to stay lower carb as well. I can write that out if you'd like.

this afternoon has been an unexpected roller coaster. all is well now, though, and I'm gonna wind down with some mindless television and a prepared foods dinner. my choices were a frozen veggie pizza or a deli case fresh chicken pot pie. well, my food poisoning was from a frozen meal that had likely thawed and re-froze, with chicken. I havent actually eaten chicken since (I'll get there. just not there yet...)
I picked the pizza - it came from a different bank of freezers at the same store where I bought the frozen skillet meal, so I'm hoping this doesn't kill me tonight. I have a busy weekend lined up!
oh,it's Rao's fire roasted vegetable pizza, bought on sale. I'll update later if it's a solid option or not. I tried Rao's jarred sauce after some recommendations for a quick option, and thought it was way overrated and not worth the $. so we'll see how this goes.

I haven't been here in ages and was never a regular poster on this board...but it just struck my fancy today.
Last Monday, we had homemade pizza...sausage, pepperoni, bell peppers & onion. I load it with goodies. Tue. we had blueberry pancakes & JD sausage links...the pre-cooked kind of links. Wed. was left over pizza. Thur. was breakfast for dinner, but I did it an easier way...JD sausage patties (pre-cooked), canned sausage gravy (Libby's)(almost as good as mine), grits for DH, hash browns w/onions for me & sunny side up eggs....oh and frozen biscuits. Fri. we had taco soup from the freezer. Not sure what I'll fix tonight...but, leaning towards burger patties (ground sirloin), fried cabbage & fried thick sliced potato rounds/slices. If not, it will be a "whatever you can find in the freezer" kind of night.
I need to get the upright freezer contents down as much as possible due to....going to order a new one on Dec. 2 from Costco since they have it on sale for $150 off on that day only. Delivery & set-up included and there is a 90 day free return with Costco that most other places don't allow...most of them are just 30 days. Even the regular price of this upright is $30 cheaper than any other place close to us like Lowes or HD. Costco also has free haul away if you want it, but we will give my old one to someone else in the family or sell it if no one wants it. It still works, it's just that is is one of the first original "frost free", so it's not really frost free at all. It gets a build up & needs defrosted every year. I paid $100 for it used about 30-35 years ago, so I think I've gotten my monies worth from it.

I threw out the rest of the frozen pizza, it wasn't worth the calories and certainly.not the price tag for what it was. 🙄
Last night, I met up with friends after a kid's hockey game and we had pizzas cooked in wood-burning ovens. love that char! anyway, I wasn't allowed to pitch in, the rest of the group all had kids and we had ordered a bunch of atuff for the table to share. I tried to argue, but they said I'd only picked from the one veggie pizza I asked for, and didn't touch the fried apps for shared fryer oils with seafood. okay, thanks everyone! 🤷♀️
today, I pulled a small parcel of fried eggplant from the freezer. I thawed out some sauce on Thurs, so this should cover that, with pasta cooked when I bake off a portion of eggplant parmigiana.
I've also got a large pork fried rice w/bean sprouts that I picked up when I went to bring the pups home. $11 to have lunch for the next few days? yes, please.

I'm still trying to cycle through my freezer stash so last night was beef chili and tomorrow night will be lentil soup. DH is doing a rare tuna steak tonight with little potatoes and green beans.

Thursday night, the place we went to was having kitchen issues. They ended up pulling together a very small menu. We split a cheese pizza and a Caesar salad. The food, drinks for 3, and tip was $100.
Friday night I did taco chicken in the instant pot. I also had refried beans for the taco bowls we made.
Saturday night filets, sweet potatoes and salad.
Sunday night DH's sister cooked for us. I contributed a pan of pumpkin bars for dessert. I've been craving those.
Monday I don't know yet. Probably something with chicken.
I need to get my chest freezer cleaned out. There's probably still 10 roasts in there. I need to start just pulling one to thaw then I'll have to figure it out.

I returned from the weekend away yesterday afternoon. Of the meals, I bought one fast food and two restaurant meals for DH and me. Things are pricy, but Friday's supper and yesterday's brunch yielded three and two servings respectively. For the budget's sake, I'm glad we don't go out regularly.
