Turkey Cobbler. I noted to not make again because of time to make biscuit topping. Of course, H. really liked it. Using a premade biscuit mix would have gone faster. The biscuit topping makes the dish differ from chicken pot pie.

idk, I've seen ck pot pie with biscuits. tonight, I'm reheating leftovers. veggie lasagna and eggplant parmigiana. I made the lasagna yesterday, and it's probably the best veggie lasagna I've ever made. Thursday's sauce was definitely the best since I've been in this house with propane as cooking fuel. I expect to have as difficult a re-entry into "normal" cooking conditions when I leave this house as the learning curve proved to be since I've been here.

Brought home the crud from the big city and I've been down a week. Anyway: Last week: Monday: Leftovers Tues: I put together a pan of lasagna with homemade sauce. Thankfully, as it has been nice to warm up leftovers while sick. Wed: Slow cooked pork shoulder with horseradish crema and orange marmalade served on top of rice. Thanksgiving: Pizza and bacon wrapped shrimp Fri: Belated Thanksgiving supper including crab legs, potatoes and green beans Sat: My Incredible Recipes Crack Chicken Noodle Soup Sun: Football food including bacon wrapped asparagus and beef links This week: Tonight: One sheet beef links, asparagus, zucchini on top of sauteed baby spinach (focusing on veggies) Tues: ? Wed: Sweet n sour stir fried chicken and veggies Thurs: Teriyaki pork something Fri: ? Sat: Out after the parade Sun: ?

I badly needed a break from the red sauce marathon. it's all tasty, but jeez lol.... tonight I made a roasted chicken/broc/russet bowl with pepper jack cheese. I diced up a small russet potato and the end of a broccoli crown I used in the weekend's veggie lasagna.
commentary that went with a pic I posted to a FB home cook group - I love a fantastic topped baked potato, but I can't usually finish a decent russet baker spud. earlier this year, I had a 5lb bag of russets (typically smaller than what you'd buy individually) and I decided to just dice one up like I was roasting tiny potatoes. let me tell you, life changing! I can better scale toppings appropriately, and not waste food. I can't believe I'd never thought to do that before.🤦♀️

tonight, I'm making a big green salad, to be topped with the last two chicken tenders from the holiday fry bash.
as far as the rest of the leftovers - I've still got some un-sauced eggplant, but I think I'm going to just freeze that to use as a pizza topping sometime soon. I've got one portion of eggplant parmigiana and two of the veggie lasagna I made a couple days later. eggplant will get either eaten or tossed tomorrow as day 6. I'll be pushing my luck with the extra sauce for the lasagna, but whatever.

Saturday night we went out to a local Italian place.
Sunday night was the last round of turkey leftovers.
Monday night was taco salads.
Tuesday will be orzo with chicken sausage and green beans.
Wednesday something super quick and early because we have an evening event.

I think tonight's probably going to be another roasted chicken/broccoli potato bowl. I've had enough red sauce in the past week to last me a month or more, and I had a slice of veggie lasagna for breakfast so I'm not loving the idea of another sort of pasta.

I did takeout last night - a huge chicken Caesar salad. the chicken is fresh grilled to order, so the first thing I did when I got home was to remove all of the chicken from the salad (I have never come close to finishing a salad from this place in one shot lol....) I served myself a big salad bowl and dressed just that, with the dressing that came on the side.
tonight's dinner was the rest of last night's salad, with fresh croutons. $13 for two meals, that works.

tonight I'm making butternut risotto in the Instant Pot, to be a side for turkey cutlets and some roasted Brussels sprouts. there's enough turkey for at least three meals, but I'll figure out fresh veggie options each meal.
yesterday, I made a 6qt Dutch oven sized batch of minestrone soup for the week. I had a cup for lunch today, and I'm sure it will be dinner at least once this week.

Going to do a servings worth of ground pork in the skillet and toss some frozen veggies at it. Trying to use up the pork b4 it goes bad. Not sure about sauce or flavoring. TBD.
Need to eat or toss the rest of my discounted watermelon. Wish I had cans of chicken soup in the house, but cans are heavy.

The shortcut refrigerator biscuits turned out delicious! Fluffy on the inside and slightly crispy on the outside, they were much easier to make vs from scratch.

it is 28 degrees here today, the coldest day we've had since February. I spent about 20min outside with my landscape contractor, and I can't get warm. I'm still wearing my hat, a couple hours later. but Sunday will be 60 degrees. my backyard's going to be a mud pit after the 2" of snow from yesterday all melts. but hey, welcome to New England. if you don't like the weather, just wait 5min. in an effort to warm myself up at all, lunch was a can of spicy chicken noodle soup. it hasn't really made a dent in the chill. I think dinner later is going to be a big bowl of minestrone.

I picked up a package of three smaller BSCB this weekend. yesterday, I sliced cutlets with two of them to make chicken piccata and bowtie pasta. there's one serving left, likely for lunch tomorrow or another day. tonight, I'm going to slice the last one into a pair of cutlets and saute them. I'll chop and toss a big green salad. I've been snacking instead of eating an actual meal today, and I don't want anything heavy. the rest of the week? who knows yet. ETA - scratch sauteing the last BSCB. I'll be heating up a frozen chicken patty in a few minutes, instead. salad is still on, though. I'm clearing freezer space here. yeah, it's like that. lol...

I forgot all about the omelet for brunch yesterday because DH bought some bagels. We had egg rolls and cream cheese rangoons (I definitely prefer crab rangoons) before watching the NFL game, so we split a Jimmy John's Unwich for supper. Tonight: Flounder, veggies, leftover latke Tues: Ground beef burritos, rice Wed: I'll make the Spanish potato omelet (we're down to about 6 or so duck eggs-I've been using the float method to confirm they're still good) Thurs: Football munchies-Perhaps a pizza? Fri: Takeout Sat: Sleepover food w/ the neighbor kiddos including franks in blankets, bagel bites, green beans and canned corn Sun: Pancake tacos for brunch with the kiddos and possibly my first pozole for supper that evening Happy eating, everyone.

I picked up takeout this afternoon - 2 sushi rolls for lunch, and some Chinese food to have for dinner/leftovers. woof, did prices go up. I remembered the last time I stopped in for a quick sushi lunch that the rolls had gone up noticeably, so I grabbed a takeout menu that day, maybe a couple months back? anyway, here's a comparison between today's pricing and the previous menu I have. order old price new price6pc eel/cuke 8.45 116pc spicy yellowtail 7.45 10edamame appetizer 6.50 9lg rice noodles w/veggies 10.45 13spicy green beans 11.45 14
I had an Asian pear martini while I waited for the order I placed when I walked in, and today's total was $75. I mean, the food is fantastic quality, but wow. I know I don't eat out very much since COVID and everything, but has everything gone up that much? yikes. at least I've got leftovers to take me through the weekend here, mixed in with some home cooking.

it really was! I think it's even more shocking b/c the other Chinese place I go for takeout hasn't raised their prices at all over the same time frame.
today, I think I'm going to make teriyaki chicken breast to go with some spicy green beans and white rice. I need to make rice for the pups by tomorrow am anyway, so I'll just swipe some of that for myself. I have one BSCB left over from the package I opened for piccata earlier this week.

Maybe tonight I will crack open the brick of Grass fed ground beef. Yesterday when I went to prep everything, I realized I had Turkey Spam left, so I made that ... with something.
I know I went to the Spanish grocer to return spoiled produce.
My quest to use other tubers like cassava etc. is still in progress. Maybe in the new year when I am over this current sinus crisis.

Well, I knew there was a reason for popping over here to see what everyone is having for dinner. MarionTh230 just solved my problem. I had shrimp out to thaw but not sure what to do with it. Was thinking shrimp creole but shrimp and grits it is. Unless I change my mind by 7pm.

I cracked open a can of sliced white potatoes to go with the turkey SPAM last night. Really wish I had some cooking wine or wine in general. Used up my white wine isn't here cheat. sparkling white grape juice. Used it to deglaze the pan. I think peas and onions were involved too. Used some fresh thyme as well.
Think I bought small yellow potatoes, but may use the sliced up with the first .25 lb of the ground beef plus onion plus green veggies. TBD.
