Last night: Leftover little smokies wrapped in crescent rolls, air fryer peach preserves glazed chicken thighs and leftover glazed carrots from the freezer. Tonight: Bear burgers with French bread buns, veggies Wed: Freezer leftovers Thurs: The parchment packet spicy shrimp and green beans I didn't get to last week with a cod fillet in each for additional protein Fri: Takeout Sat: Caulipower pizza Sun: Traeger smoked deer or bear
Still focusing on using freezer leftovers. Grocery/HBA/paper product goal for this month is $150.

thanks for restarting! BG picked up last time after we lost Sugi, but BG hasn't been around much either lately. here's to 2023! one of the things I did "for New Year's" was to clean out the fridge and freezer (of freezer burned things...) and I made up a grocery list today, to shop for tomorrow. tonight is still clearing out leftovers, but I'll go from there. last night: sushi, out with friends. spent way too much, brought leftovers home, and don't regret a second of it! tonight: leftover black bean pulled chicken, over some curly pasta with melty cheese the rest of the week? there will be chicken piccata (parsley and lemons need using), one other meal - that might not be dinner - with black bean pulled chicken, and per the grocery list from earlier, there's gonna be a still-TBD snazzy fresh pasta dish with mushrooms. for those with a Stop & Shop/Giant, Buitoni noodles are 99c this week. I'll post again when I figure it all out.

BG is here, and I think often about what is for dinner....in my case, Just trying to cook for one is usually worthless.

Japchae, sweet potato starch noodles stir fried with vegetables and meat. Not as good as my mom but close. She said mine was pretty good just a tad bit too bland so she doctored it up a bit

December was rough for cooking. Between our usual December Florida trip, my work trip and going to see my family for Christmas, I was gone 13 nights. I'm trying to get back into it.
I made a sheet pan with roasted vegetables and chicken sausage tonight. It used up the rest of the broccoli and bell peppers I had bought for Christmas Eve veggie tray.
The goals for January are to keep cooking and use up proteins from the freezer. With the grocery prices going sky high I want to really minimize waste. We were doing pretty good before December.

I use a lot of her recipes. She has great videos and I find it very easy to follow. Usually my mom will check on how I’m doing and critique my amateur skills. thank you! I'll def check out this blog. when I make japchae, I follow the recipe from the Korean Bapsang blog. I just omit the beef bc I don't eat it I love this blog, everything I've ever tried is fantastic.

I have been eating the last of the chicken tacos family meal that I got from costco. Really good go to, and I have leftovers that will be a large burrito for dinner tonight.
Tomorrow I will be doing a stir fry to help clear the freezer some.
Also taking out a container of soup for Friday or Saturday depending. I need to go grocery shopping and am thinking about a frozen pizza as a reward -- so Friday most likely.

this isn't dinner, but a mention/suggestion. yesterday, I mixed up a big airtight container of chopped salad greens. I had some with dinner, but it's my typical summer go-to instead of unhealthy snacking during the work day. I can grab a bowl of greens, a handful of croutons, and a little dressing and it's way better than cheese 'n crackers/ramen/whatever else I'm going to grab fast. today, I tossed a bowl with some cut up garlic parmesan boneless chicken bites I got from the grocery store hot bar, and a little bit of vinaigrette. quick, easy, mostly healthy, and tasty. my salad greens mix - 1 head chopped iceberg (minus the really bitter innards), 1 chopped romaine heart, 1/2 head radicchio - sliced super thin, 1 sm clamshell of baby arugula, handful of baby spinach

Another trip grocery shopping. I needed to hold back from frozen things as our freezer was full. Oooops. We had to bake the vegetable lasagna. I made a Christmas salad - broccoli, cauliflower, onion, halved small tomatoes, mayo dressing. Good dinner.
There is no room for the left over chili in the freezer.

today's errands brought me to my old neighborhood, so I ducked in to the fish market. I picked up a ~3/4lb piece of salmon filet for $10. I'll split this with the pups, theirs will be unseasoned and for breakfast after it cools. dinner tonight will be baked salmon with mashed potatoes and roasted broccoli. I haven't decided on salmon seasoning yet , and leftover mashed will go nicely with the leftover chicken piccata in the fridge as well.

I actually planned out this week (mostly...), so I'm feeling adulty! lol... this morning, I did a "big shop" for the first time in forever. I also pulled out some chili seasoned pulled pork from the freezer to thaw. I also filled a cart with a mess of produce for all of us, between greens and the 3/$10 melon sale, among other things. so we've got half each of a cantaloupe, honeydew, and personal watermelon chopped. I'll chop the other halves in a few days. in other news, I'm getting a chest freezer in the next couple of weeks. this will allow me more flexibility with pup proteins, with the limited freezer space in the kitchen unit, as well as the ability to better stock up on sale stuff. I'm excited about this prospect. anyway, I shopped this morning with plans to bulk cook. and tomorrow, I'll use the thawed pulled pork to build a carnitas casserole for a batch cook this week. there's also some pork chops I grabbed b/c the price was right. I'm not sure I want both my options this week to be pork. pups might be getting cut up chops for a couple days... tonight will be more roasted broccoli with leftover chicken piccata and mashed. tomorrow will be one portion of pork carnitas casserole and a small salad. past that? idk.

Mapo pork, I think it was called? sorry, I can't access it anymore since I declined the ongoing spam of repeat links. but it's a Korean recipe with gochujang and a bunch of other spices. I used to steam broccoli and pile everything over white rice. you could very easily stuff peppers with it, and put broccoli (or something else) on the side.

Friday night I cooked a chuck roast in the instant pot with baby carrots and baby potatoes. That was I think the last roast from that cow we bought. The newer ones are much larger.
I seasoned the roast all the way around but it didn't really come through. I wasn't impressed. I also needed way more cornstarch mixture to make the gravy.
Sunday night the leftovers are becoming beef vegetable soup. I have tomato juice my dad canned for me. In the past I would have just thrown out the leftovers on trash night. With the sky high price of groceries we are trying to use all up leftovers.

I ended up using some marinated chicken breasts this time, but will keep this in mind for the future. I got some ground pork in a meal kit that I have not yet used, so this sounds like a good way to use it. I love gochujang!

Chicken tacos.
It turned out okay even though I didn't exactly follow the seasoning package directions since the chicken was frozen. I needed to slow cook while golfing so I put the frozen chicken and seasoning in the crock pot with Rotel tomatoes. There is too much liquid. I shredded the rest of the chicken.
I'm usually at the point of it's cooked and eatable for a few days even though it's not the best I've made.

Last night's smoked backstrap was divine. We had it with neighbor grown carrots glazed in butter and brown sugar and homemade cornbread with pork rind cracklin's. This week:
Mon: Leftover lasagna from November and broccoli Tues: Cod tacos, shrimp and breaded okra Wed: Air fried breaded chicken drumsticks and mixed veggies. For the breading, into the new food processor Santa brought me, I'll add two sad bagels tossed last month in the freezer, pork rinds, parmesan cheese and Italian seasonings. Thurs: Cooked ham from the freezer and some of the many preserves we need to use up warmed up in the air fryer, and veggies Fri: Takeout Sat: Picnic date night using items on hand such as wine, cheese, etc. Sun: Bacon wrapped elk, veggies

I cooked a roast in my Ninja pot tonight on the slow cooker option for 4 hours. It wasn't quite done so put it on the pressure cooker option for 20 more and it was fine.
I had added a seasoning pouch and it really added a lot of flavor along with small potatoes, leftover onion, and a stalk of celery, and a whole package of carrots. I love carrots in a roast. DD looked at it and turned up her nose so she didn't eat. She and I had went out for a late lunch. If she wants something later I will put a can of tomato soup in the mircrowave, she loves it.
Leftovers will go to make veggie soup tomorrow.
I sure like the sound of all the asian recipes. If I were with DIL, she I and DD would probably eat it all the time.

Peeppers are $5.99 a pound here. Ridiculous! Everything is ridiculous anymore. I don't check the weight, but there were 6 large peppers in the bag. I have some leftover stuffed pepper mix in the freezer, so will likely have stuffed peppers one night this week. Only a couple in the bag were close to spoiling.
