I'll pick up a chicken shish taouk on pita at Amir on my way back home from swimming. $8 and it's good for 2 meals. Love the stuff. Sushi begs me for that chicken, but it's loaded with garlic sauce, so nope.

I baked some chicken and made Stove top. Will do some fzn veggies too. Working on getting opened stuff in the freezer eaten so I don't have to pack it.

I'm doing the pork chops, etc tonight. mashed potatoes will be made without garlic, so I can share with the pups.
ETA - delish, and I need to do this more often. roasted garlic broccoli, mashed Yukon gold potatoes, and boneless pork chops cooked on cast iron. yum

I toasted both sides of the sourdough with cheese. It was delicious. I lined out tonight's supper above as we'll have leftover Frito pie instead. I must focus on using leftovers. More baby spinach and sliced tomatoes will go on the side. I love the fact a light drizzle of balsamic vinaigrette goes such a long way.

Made tuna fish sandwiches for a early dinner. I bought a mini cheesecake for dessert sometime tonight.
Tomorrow is pita and hummus for lunch.

I made the chicken sausage vegetable sheet pan tonight.
I'm very glad I don't need to rely on grocery pick up services regularly. Today the sour cream was canceled which seems to be an odd thing to be out of. The tortillas are rock hard and things were not well packed. 1 romaine heart is pitiful.
I will be happy to go back to doing my own shopping next week.

Found a chicken thigh sheet pan dinner recipe today. Might try in the near future. It is done with a marinade, wedges of red onions, purple cabbage, and halved Brussel sprouts. Made something easy tonight as I had grocery delivery today. Raspberry containers are open and might eat the more damaged non moldy ones before bed tonight. Will put them in the fridge b4 bed. The one that had a couple moldy berries in it also had a small all gray tiny berry. It was in the middle bottom, so the shopper would have missed it, but the regular sized moldy berry was right on top. I think I'd sub out the Brussel sprouts as I like them thinly sliced or roasted with bacon. Watching Survivor right now, and I am amused at the phrase "nerd alliance".

Thursday night I made baked chicken teriyaki with pineapple using the recipe from Sallys Baking Addiction.
I served with over rice with steamed broccoli.

I was exhausted last night and just boiled off some linguine. top with mozz and red sauce already in the fridge, and I was done. tonight I'm making mushroom and asparagus risotto in the IP. I'll reheat a leftover pork chop to go with it. I ended up roasting half a broccoli crown, and I reheated some mashed potatoes as well. today, I IP'd some BSCB for the pups, and the SS insert is currently sitting in the sink. I saved myself one BSCB to slice up for whatever I decide to make. I'm debating that risotto tonight, if I can pull away from work long enough to wash it out. idk. I've still got one garlic/rosemary pork chop and one Northwoods by Penzey chop. if I do the risotto, that would take care of the garlic/rosemary one. I can find a home for the other this weekend, somewhere.

Well, so much for going camping. We received our first snow over the weekend, so we canceled ahead of time. Boo.
I've gained 5 pounds since bringing Halloween snacks and treats into the house two weeks ago. Time to refocus on protein and fresh vegetables. I'll restock the latter this evening.
Last night: Air fried chicken thighs breaded in a pork rind parmesan cheese mixture served on top of baby spinach with a side of breaded and fried okra.
Tonight: Monday Night Football food including shrimp and stuffed jalapenos.
Tues: The flounder I still haven't gotten to with a side veggie or two.
Wed: Sauteed beef sausage, yellow squash and zucchini Update: As per a post on the Declutter thread, I'm going to make Rachel Ray's veggie stew w/ added beef sausage.
Thurs: Air fried pork chops, veggie
Fri - Sun: IDK yet

One of my Facebook memories today is from about 12 years ago when NY/NJ got dumped on for Halloween.
Sunday night I finally cooked a rib roast I got on sale awhile ago. Served with mashed potatoes. I was too drained to come up with anything else.
Monday night FIL is taking us out to dinner. He doesn't cook and MIL is still out of town.

Yep. Snow in October. A 2020 FB memory a few days ago indicated we had received 7 inches and counting that day. This year, higher elevations already have a foot and a half in some places. I'm never ready, but it fills our wells come springtime, so it's welcome.

FB memories are always a mishmash this time of year, just because New England weather is so unpredictable these weeks. I love reviewing memories in the am while I'm trying to wake up. 2y ago, I was sitting at the CVS pharmacy drive-up to take my 96h COVID test before I'd be allowed to board a cruise. it was the 3rd appointment I had made, b/c we had a storm that knocked out power to my safe little house in the woods for 4 or 5 days. 3y ago, I woke up to snow under a layer of fog. I'd share the pic, but as I said in the caption, the pic didn't do justice to the actual. it was surreal. oh, and melted by that night! 10y ago, I was sitting in Dolphins Stadium, rooting on the Bengals. it was the night before yet another cruise, and the football game was my cabinmate's first NFL game. anyway, dinner tonight? I have no idea. I picked up a package of thinner-sliced boneless pork chops to change things up for the pups. I might grab one with something else for a side. or, I still have two chicken cutlets leftover from the weekend. I could have easily used the last of the IP risotto as a side, but I knocked the container over on the floor (open ) when I was putting groceries away earlier. oops. I could also just make more risotto. either way, I'm cooking off boneless pork chops in my Dutch oven, for the pups.

update - I found a package of Knorr "mushroom flavored rice" in the pantry. 🤷♀️ I sweated down some creminis in butter with minced garlic and thyme, and then threw in the rice packet with chicken broth to cook off. I also seasoned the last few slices of pork chops for myself after cooking the rest of the package for the goobers, and chopped up a couple to top off rhe rice. it wasn't horrible, but I won't buy the rice again. I can do much better on my own there. but whatever, it was 50c haha.

I'm trying to figure out who I thought was going to cook all this food when I placed this Aldi order last week.
Tonight ended up being instant pot risotto.
I needed ingredients to do everything else and I didn't want to drive out of the neighborhood on trick or treat night.

LOL. As usual, things aren't going as planned. The neighbor twins came over last night, so we nibbled on the charcuterie board I assembled, they drank hot chocolate, and their mom and I had "Witch's Cosmos." I'll make the flounder tonight since it's thawed served with homemade sweet potato fries. The vegetable stew will be tomorrow night.

Now that it is just DH and I at home and I WFH, I am trying to get back to cooking dinner daily. The last couple of years lunch has been my main meal and dinner was mostly grazing. This week had a couple of days eating chicken pot pie soup and last night I made spicy chicken caesar salads. I do not have the breakdown of the soup but I do for the salads:
Romaine lettuce = $3.79 2 large BSCB = $3.72 shredded parm = $1.79 flour, seasoned with McCormick Nashville Hot seasoning = $0.79 homemade croutons from a very large bag of day old marked down rolls = $0.98
= $11.07 for 4 servings. 2 eaten last night and 2 servings for today.
I caught onto a show called "Struggle Meals". The guy is a little goofy and the math can be wonky, but most of the meals are "from scratch" and he teaches a lot about basic cooking without a bunch of processed food. Definitely recommend.
And 4 meals for under $12 shows that I can still get a lot of bang for my buck if I try.
PS - It was my first time making croutons. I mostly did it because the marked down rolls are getting a little hard so I needed to do something with them and I already have a ton of homemade breadcrumbs, plus DH LOVES croutons. I have never been a fan, mostly because they usually have little flavor and are so damn hard. But I loved the homemade ones! I might just finish of the rest of the rolls that way and stick them in the freezer for future use.

homemade croutons are SO much better than store-bought. especially b/c you can play with the seasonings to tweak for whatever soups/salads you've got in mind. my sister makes a spicy lime vinaigrette for a salad and I'll chili-spice the croutons. she can't eat those, but they complement the salads nicely for the rest of us!
also - if you store them in an airtight container, they will keep for ~6mo. don't freeze them.
as for me, last night I fell asleep on the couch after dropping pup dinner. I never cooked or ate anything. oops.

Threw a pre seasoned pack of carnitas chicken thighs in the crockpot. Smells so good. Will cook up some cheesy rice to go with it.
This is for 6 servings: pre seasoned pack of carnitas chicken thighs = $5.06 Rice = .75 cheese = $1.50 Tortillas = 1.50 = $8.81

I should make my own bread crumbs. I have a horrible time finding store versions made without soy flour.
Last night I served the leftover prime rib with a gorgonzola cream sauce and made a box of yellow rice. I sautéed up a package of baby Bella mushrooms and added that to the rice.

There's nothing like homemade croutons! One of DH's coworkers gave him an 18 pack of duck eggs so they will be this week's focus: Tonight: Poached eggs with asparagus and salmon Tues: Air fryer pork chops, veggie Wed: Breakfast for supper using eggs Thurs: Duck egg quiche with locally raised pork breakfast sausage Fri: Takeout Sat: Leftover quiche? Sun brunch: Eggs and probably pancakes using a homemade pancake mix. The latter will use an egg or two as well. Sun night: Football food. Perhaps pizza since I've been craving it? Either that or frozen appetizers.

this week is the first of my working M/T, off W, working Th/F. and, Punk is going to daycare on Fridays for this stretch, instead of the Weds they had been. LD isn't going anywhere on his own still. routines are a-changing, and the learning curve is vertical! lol.... yesterday's errands brought me back to my old neighborhood, and I hit up the fish market. I came home and snacked over the early football game and wanted nothing to do with dinner. so, that gorgeous salmon filet will be on tap for tonight. I need to do some freezer food prep for the pups, also. and I'll yoink a BSCB over to my side along the way, for something I haven't figured out yet. Mon - roasted salmon and broccoli, maybe some tiny potatoes. Tues - BSCB, maybe chicken piccata? Wed - OOO, takeout! I'll figure out the rest as I go...

last night ended up being Kraft dinner. I was toast by the end of the day. turning on the OOO message for today was a nice cathartic 🖕🖕🖕 for me. lol...
I picked up Chinese takeout on my way home now, and am currently enjoying a very late lunch from the order I placed that will last me through the weekend ($45, including the cocktail while I waited. 😉)
the order was pork fried rice w/bean sprouts, chicken teriyaki skewers, and baby bok choy in garlic sauce (which I will pour over rice noodles another day)
