this weekend snuck up on me, Monday is Canadian Thanksgiving. I'm going to see if I can find a fresh turkey breast tomorrow morning, that I can roast on Sunday with all of the vegetables. if not, I'll figure something else out. I also want to better organize the freezer, which may include getting a chest freezer for the basement. this smaller fridge/freezer still has the crappy freezer layout of a bottom-freezer unit, except worse b/c it's even smaller. I legit have a frozen pizza laid out over my ice bin, b/c that's the only place big enough for the box. dinner tonight is probably going to be that frozen pizza, which I will top with aging veggies from the fridge. it's way easier to reorganize when there is less to move around, no?

I always buy a small turkey for me and DS for Thanksgiving. We're going to my sister's but she never gives me a doggy bag to take home. I can't roast one this year because how am I going to get it in and out of the oven with one hand? How do I baste it? Pisser. I LOVE turkey.

Check out the upright freezers, too. They are so much easier to organize and see what you have.

Not a big fan of the breast, but thanks anyway. I'm going to look for some turkey drumsticks and wings.

one of my local grocery store puts cut up turkeys on the rotisserie. I love it when they have thighs on the hot rack. maybe your store can do the same? even if it's a regular thing, they might make a special order since you're hurt. worth asking, anyway. 🤷♀️
I woke up this am and decided I'll wait til after my FL vacation to roast a bird with the winter comfort sides. lol... I also had a super craving for chicken Milanese. so I'll be frying cutlets during football tomorrow and having chicken Milanese for dinner alongside broiled asparagus and maybe some roasted tiny potatoes. I'll have leftover cutlets to use for lunches during the week.
tonight, I'm waiting on a baked potato to finish cooking. I'll top it with half a can of chicken and a package of frozen broccoli and cheese sauce. I'm tired, this is mindless.

Haven't bought more ls soy sauce so I made my 1/4 lb. of dark ground turkey w. sliced new potatoes, 1 clove garlic, thin green beans and used some of the sherry cooking wine I just bought on sale. Seasoned with herbs de Provence. Wish I had had enough patience to slice the potatoes into smaller chunks in some cases, but it came out good,
Moon shadow is in timeout in his box top and towel, so I can eat. He's had all his food today except topping him off with hay which he's spreading around the liner more than he seems to be eating.

With the freeze warnings last night and again tonight, I'm in soup mode. Found some southwest flavored chicken in the freezer yesterday, so tonight is chicken tortilla soup. I wanted to use up all of the chicken, so there will be plenty to freeze for me to take for lunch as desired.
This will not free up freezer space as intended, but it will likely keep me supplied with delicious soup until Thanksgiving (with the chili I froze earlier this week).
Chicken = $20 Black beans = 2.50 Corn = $2 Onion = $1 Garlic = $.25 Mushrooms = $.50 Bone broth from the freezer ?? Spicy taco seasoning = $1 Dry Ranch Seasoning = $1 Rotel = $2 & other spices from the stockpile
= $30.25 for what looks like 10 servings. (Won't know exactly until I pack it up, but it's at least 10 1 cup servings. Though DH eats 2 servings, but he isn't a huge soup person so he likely won't eat any after tomorrow. Soup is one thing I have not mastered in making in small amounts.)

I broiled some asparagus wrapped in prosciutto to go with the chicken Milanese tonight. it was divine, and I've got leftover cutlets as planned. I cooked off three BSCB worth of cutlets.

weltz wish we were closer, I cook a Thanksgiving dinner with lots of food. I need to look for a small turkey soon, just want a little one so have to buy early.
I make turkey with dressing, baked beans, mac and cheese. And then we have some veggies, sometimes I make home made noodles too. I love all that stuff and can see me gaining weight and I don't wanna.

Ya'll got me wanting to make a turkey. I likely will at some point this month. Talked to the ILs last night about our TG. They liked the Cracker Barrel meal we did last year and suggested doing it again. We doctored the sides up a bit. It was a LOT of food!

It should be kind of pancake-y and apple-y I have not made it before, but I googled after reading your post. Boy that sounds good! Just so I don't leave you hanging, I did make it, but it didn't turn out as I was hoping. Maybe I didn't let it cool down long enough because it just wasn't solid when I tried cutting it. It was more like cooked apples with a little bit of cooked batter, and the apples released a lot of juice, so I cooked it longer. I added some cinnamon to it was very tasty, just not cake like. Since it was going to be our breakfast, I scooped up some in a bowl with some vanilla ice cream for everyone. What, it's fruit and dairy Kids very delighted! Bacon on the side added the saltiness, yum! I have the leftovers in the fridge so will see how's that but don't think I will be making it again.

daisylu, our overnight temps are going to drop into the 30's later this week. Your soup inspired me to make a comfort meal or two. ~~~~~~~~~~ Fall is here and I'm loving it! The full moon last night was brilliant. I made 7 dozen pumpkin chocolate chip cookies yesterday which will be distributed among friends, office building mates and DH's shop coworkers. For our first time, last night DH and I worked with bear a neighbor harvested and processed into ground. DH grilled up bacon cheeseburgers and they were delicious. Steamed broccoli and leftover rice were served on the side. Cheese lovers, if you haven't tried it, I recommend Land O Lakes sliced cheese. There is a meatloaf in the slow cooker for Monday Night Football tonight. In keeping in line with simplicity, I'll cook a steamer bag of veggies, and we'll have pork rinds and salsa. I'd like to make a baby spinach salad with warm bacon dressing, but again, don't want to get fussy. Tues: Shrimp and veggie stir fry with air fryer tempura zucchini fries. Wed: Air fryer cod, breaded shrimp, veggie Thurs: Not sure yet. Fri: Steakhouse with the family Sat: Tailgating food Sun: Pizza

Sunday night we ate at the stadium. The beef sandwiches were a perfect medium rare and very tender.
Monday night we are grilling steaks.
Tuesday night we are going out somewhere. This is my in office day and it just drains me.
Wednesday night grilling ribs. This package is left from the half pig we had. I'm trying to work through the last of the old stuff in the freezers.
Thursday night I'm making a chicken sausage and veggies roasted sheet pan meal. Likely also a small batch of buffalo chicken dip for game time snacks.
Friday leftovers or something take out. Vacation begins Saturday.

I didn't want to fuss too much for dinner last night so I made some Far East mushroom and wild rice pilaf. I put it over a bed of baby spinach and topped with a bit of crumbled goat cheese. I mixed together chopped mushrooms and tomatoes seasoned with Italian seasoning, putting it over the rice. I added a bit more crumbled goat cheese on top of that. It was a pretty yummy experiment. when I fried off a bunch of chicken cutlet, I had split a family pack of BSCB. I think that's going to be my plan for the winter. I can wing it for myself a little better, and sometimes just saute a chicken breast for the pups when I've run out of protein. (see also, tonight)
anyway, I used up baby spinach and cremini mushrooms tonight that were on their way out. I sliced a BSCB and made a small pan of chicken Lombardy, and boiled off a package of wild mushroom ravioli. I had half tonight, the other half will be tasty another day.

Tired, so I went easy instead of making what I need to.
Baked Praeger fish filets with some Walmart waffle cut fries. Sprinkled some garlic salt on a couple of the latter and sprinkled the others with some herbs de Provence. Since I've been using parchment paper to lessen the cleanup the fish filets take longer to back then they would at 450 degrees F.
Then had two TJ nondairy bon bons (should have stopped at one for weight reasons)
and am currently eating some thinly sliced cucumbers with some apple cider vinegar and a small sprinkle from a packet of Truvia. Not sure if the onion in the fridge is that safe to eat raw, so skipped putting sliced onions with this.

All of my pieces are different patterns. I also have a much less expensive cream set (not Polish dinnerware) to make interesting more formal place settings for the holidays. 😃 IMG_0486 by Fl Cheesehead, on Flickr
