an errand brought me over near the fish market, so I picked up a piece of cod. it's actually about 1lb, so this is two meals for me plus a bonus for the pups. I'm going to cut into thirds, and pack up one piece to cook tomorrow or the day after for myself. I'll cook the other two tonight with one unseasoned portion for the pups to split in the morning.
tonight: baked cod with seasoned breadcrumbs, roasted tiny potatoes and Brussels tomorrow: either cod or leftover turkey piccata with garlic spinach over some cut of long noodles. there's plenty of sauce to top both proteins. Thursday: repeat Wednesday with the other protein Friday: late lunch out somewhere, either Italian (chicken Caesar salad) or sushi Saturday: my friend's pizza truck is going to be parked near the canal early. I'll pick one up when the pups and I go walking over there, and reheat it for dinner.
I'll figure out Sunday once I see the sale flyers for next week. there will be a batch cook of some sort during football, for the week.

Mon: Air fryer chicken legs, sliced tomatoes from the garden with sliced mozzarella Tues: Locally raised ground beef on a cheddar "tostada" with sour cream, black olives, and cherry tomatoes Tonight: There is a locally raised cut of beef in the slow cooker along with soy sauce, brown sugar, apple cider vinegar, fresh garlic, and low sodium chicken broth. This particular cut ends to be tough so low and slow it is. Sauteed yellow squash and baby spinach will be served as a side. Thurs: Take out from? Fri: Cod, shrimp, veggies Sat: Smoked pork tenderloin, veggies Sun: Not sure yet

I went to the grocery store and bought stew meat so I am doing Rosemary and Garlic Beef Stew from Budget Bytes...I always add stuff - not sure if I have any more barley but I do have canned mushrooms and quinoa if I want to bulk it up besides having baby potatoes for more yumminess.

Having BLT's tonight, I picked a bunch of wonderful big tomatoes from the garden. They are so good, so unlike store bought, but doubt we have many more. The one volunteer plant beside the house is blooming. I will cover it on cold nights and see if it makes it.

I was away for the weekend.
Monday night I had a milkshake. I had fillings replaced at the dentist and my TMJ was quite unhappy.
Tuesday night we went out to a local Italian place. Tuesday is my day in the office and it absolutely kills me. This has become our night to go out or get take out.
Wednesday night I made homemade hamburger helper. Estimated costs $7.
I'm still working on the rest of the week. I do know that there is a bottle of champagne in the fridge getting opened on Friday. Assuming we survive year end that is.

I baked the cod off for the pups and made myself a small plate of linguine marinara Thursday: repeat Wednesday with the other protein I need to make rice tonight for the pups, so I'll clear a bunch of veggies from the drawer and make a stir fry for myself with some of the rice. Friday: late lunch out somewhere, either Italian (chicken Caesar salad) or sushi Saturday: my friend's pizza truck is going to be parked near the canal early. I'll pick one up when the pups and I go walking over there, and reheat it for dinner. I ended up baking the last piece of cod for the pups, and having the last two pieces of turkey piccata for breakfast yesterday and today as an open-faced sandwich over a slice of sourdough toast. I got tired of it for dinners.

We ended up dining in at the rib place last night. Had a late lunch yesterday and wasn't too hungry so I ordered a loaded baked potato and ate half. It went well with the locally sourced shot of sipping bourbon. Have a fantastic weekend, everyone.

Rainy with a high of 50 heat today, so started chili on the stove. It is currently in the crockpot. Will likely make cornbread later.
Beans $2 Ground beef $3 Crushed tomatoes free $5 without spices and onions for what looks like 8 servings. We will eat it for a day or 2 and I will freeze the rest.
ETA : Decided to roast and add a poblano pepper that I got at a farmer's market last weekend for $1.

I made beef stew and on the side, thick tomato slices with balsamic glaze, micro green salad, and garlic bread. It has been chilly and rainy the last few days so it is a perfect end to the weekend. 🤤

I've been picking at things all day, including the chicken broccoli rice skillet I made as my batch cook for the week.
I still have a portion of IP risotto and sauteed chicken (likely a meal tomorrow) and I picked up deli turkey and cheese. my kitchen will be mostly closed this week, and I'm here for it.

Sunday night we had beef taco salads.
Monday night we were supposed to be at a baseball game. I'm not here for sitting in the rain in high 40s temperatures so we skipped it. Since it was cold and damp, I made Budget Bytes skillet Mac and cheese. I've been craving vegetables so I blanched a small head of broccoli and stirred it in at the end. I also added shredded chicken.
I keep 1 cup portions of shredded chicken in the freezer. I used Colby jack instead of cheddar because that's what I had.

We are having coldcuts tonight. I told hubs only going to cook a big meal about everyother night, he said that was fine with him. I'm tired of doing it and He doesn't care so should work.
He had pickle loaf and cottage cheese, DD ate at McD's and will have something else if she wants it. I'm having roast beef with brown mustard and whole grain bread and maybe a sliced tomato.

cold cuts here, too. except thrown on the flat top with some cheese melted over the top. shredded lettuce, tomato, red onion, and all rolled up into a wrap. I shared my chips with the pups before they passed out.

With Saturday's pork tenderloin I served air fried asparagus and bacon, sauteed yellow squash, and air fryer baked green diced chili cornbread. Sunday we grabbed a take and bake pizza on our way home after an afternoon in the big city. Last night: Locally raised ham with pinto beans grown a few counties away. Beets and carrots from our neighbor's garden were roasted, drizzled with butter and local honey, sprinkled with herbs, tossed, and roasted for a few more minutes. Heaven. Taco Tuesday: Spicy chicken with homemade avocado crema in tortillas for DH, on Romaine leaves for me, on the side will be cauliflower and regular rice, leftover asparagus and roasted veggies along with fritters made from a different neighbor's zucchini. I love this time of year with its fresh veggies. Wed: Leftover cheeseburger patties made from locally raised beef from the freezer, portobello mushroom bottom "buns," air fried zucchini fries, and side salads. For the fritters, I'm going to tempura them for the first time in the air fryer. We'll see how they do. Thurs: Chicken crust pizza with leftover homemade pizza sauce, side salads. Fri: Take out from? Sat: Cod, shrimp, veggies Sun: Traeger Cornish game hens, veggies

Tonight was cheeseburgers, fried potatoes, and sliced tomatoes. I cooked me a half bag of frozen peas with butter, I just love those at times. I didn't want any of the other stuff.

Lamb samosas and fries with green peas for dinner tonight. Have been splurging on the lamb samosas as it looks like my grocery store is dropping most of the Bombay Kitchen line. $3.99 for three meals on the protein side isn't bad for me.
Last night inspired by a post I started making chicken soup. Because I was tired and impatient it turned out more like chicken soup inspired brown rice, but it was good, and I finished it up for lunch. Used a can of chicken with cooked brown rice in chicken broth. Added some sliced carrot, celery, and even sliced garlic along with a dash of Herbs de Provence.
Tomorrow I will make either broccoli rabe with penne and cannoli beans or make the Korean inspired chicken with ground turkey instead of ground chicken. Need to get low sodium sauce for the latter as I am out.
ETA: I might try doing 1/4lb of the ground turkey with pinto beans as I forgot about the 1/2 can I have left open for Wednesday night

I picked up chicken breast tenderloins when I ran out for a quick pup produce run this afternoon. I figure I can use a couple here and there in recipes I feel like cooking this week.
tonight, it's still raining (4 days and counting 🙄) and I feel like I'm getting sick. I'm stuffy and have a sore neck, and I'm not sure if that's just that I have been standing at my counter "desk" a solid 8h yesterday and today. but, comfort food was in order. I sautéed a few tenders and shredded them, and threw that back in the pan where jalapeno, onion, and garlic were sautéing in butter. I tossed in some mini pierogis cooked separately to just coat them. I'm hoping the garlic and jalapeno help ward off whatever is trying to find a home.

I find myself cooking mostly once a week. I spend the rest of the week eating leftovers or having fruit and cheese or something like that. We eat out on Friday and Saturdays. Last night I had the rest of the mozzarella with tomatoes on a bed of spinach, balanced out with a few crackers.
DH's tastes are vastly different from mine (he is a plain eater), so without kids in the house any more, I just can't fathom full blown cooking on weekdays.

Seriously thinking about doing a veggie lentil soup for the weekend.
Tonight will be beef and bean burritos from the freezer. Possibility salmon tomorrow -- I have quina for a side with salsa and some baby potatoes I could roast with the salmon.
Not sure about Thurs or Fri waiting for the shop to call and inform me I can drop the car off to be worked on.

We had a big breakfast and a good lunch so tonight will be simple - black bean burgers with lettuce and sliced avocados, sweet pickles on the side.
DH is doing some sliced turkey kielbasa with lentils tomorrow night, Friday will be wine, cheeses and Speck ham. Saturday I'm dicing some chicken thighs to cook with cream of mushroom soup (yeah, I know) and mixed veggies to go over pasta. Sunday DH is doing Beyond Meat patties with stewed okra and mashed potatoes.

Tuesday night we ordered from a BBQ place. We loaded up the order including dessert. It was $64 but I had leftovers for lunch today and there's still a big side of green beans to go with something else. It was cheaper than going out to dinner and drinks though!
Wednesday night was pineapple teriyaki chicken served over rice with broccoli.
Most of my dinner leftovers become lunch. Especially this time of year when it's cooler. Salads and sandwiches don't sound so appealing.

Count me in with the I'd like to do less cooking crowd. Starting next week, the goal is to prepare less involved suppers more often. For instance, this past Tuesday I had three burners going which means that many pots and pans to wash. It would have been all four burners were it not for microwaving leftover vegetables. I love cooking, but dislike doing dishes. For years now, we've gotten takeout usually on Friday to give me a reprieve. Sunday's DH usually grills/bakes/smokes something in the Traeger. He indicated last night there is A LOT of ground beef in the deep freeze which will be a good ingredient with which to start my experiment. I also love graze/snack plate meals. We'll see.

I have tried to become more mindful in my meal planning of matching the level of effort involved in the meal with our schedule and my energy level.
After having done a few weeks of going in the office on Tuesday, I now designate that as a day to go out, have planned leftovers or something simple like tacos or spaghetti. No dishes involving multiple steps, a bunch of chopping, or lots of pans.
I try to limit eating out to those nights where it makes sense for our schedule. I'm not opposed to eating out or getting take out. I just want to fully benefit from it and not do it just because I failed to plan.

My ground turkey, pinto beans and corn ended up being large enough for another meal. I had that and am rounding it out a little as I was thinking of using it for lunch, not dinner. Still good even though I did not heat it up.
