I love blue & white on dishes, and I found there a seller of Polish dinnerware in the King of Prussia mall in PA. Not that close, but also not ridiculously far away. I need to pack up my grandmother's blue and white dishes and send to sister B. Sold them to her for money to pay bills. She's been patiently waiting. While I need the space in my cabinets, perhaps one serving piece would be OK for this year?

I am on the 3rd night of leftovers from take out I bought on monday.
Tomorrow I am thinking of Stirfry veggies and shrimp. Friday I am going to do Pita and hummus as a lite meal with some chopped veggies. Not sure about the weekend.

Tuesday night was smash burgers and tater tots.
1/2/lb ground ribeye = $1.50 2 buns = $1 tater tots (less than 15 from a huge bag) = $1 Cheese = .25 + various condiments
= $3.75 for 2 servings

I'm still kind of full from lunch, but that's all I ate today. so I should eat *something* tonight. I might reheat a chicken cutlet and dress a sandwich. the remaining pieces are small rounds from the thicker part of a BSCB. I sliced them thinly.
tomorrow, I'm not sure if I'll have company tomorrow night or not. if I do, I'm not sure what I'm going to cook yet. if I don't, I'm going to use up some russets that are on their last gasps for some mashed potatoes. I can reheat another chicken cutlet and roast a veggie of some sort.

Wednesday night I ended up baking the ribs. They turned out delicious and falling off the bone. I served them with green beans.
So far the week is going according to plan and we are getting stuff used up before vacation.

Reporting back air fried tempura fries are understandably not as delicious as fried in oil. Still flavorful, but they aren't as "fluffy" or satisfyingly crunchy.

no company tonight, but I didn't feel like peeling potatoes. I boiled off some pasta instead, and swiped a little of the container I thawed for the weekend's batch cook. oh, and a reheated chicken cutlet.
this weekend's batch cook is going to be a veggie lasagna. I found an unopened box of lasagna noodles the other day, and I have a bunch of veggies that do well in a lasagna. as long as I leave out the mushrooms, my mom will eat whatever is still in the fridge after I leave on Wednesday

Found a small can of baked beans that was best by this month. So decided to make a lazy person's turkey chili because I needed to use up the ground turkey. So simply ground turkey with some chopped onions and dumped in the small can of baked beans. Since it was 1/2 lb. ground turkey, half of it is being saved for another meal.
Tomorrow hopefully, broccoli rabe, cannelloni beans and penne pasta.

Thursday night I did the sheet pan with vegetables and chicken sausage. It's always good to get a solid serving of vegetables in before vacation.
Game day/road trip snacks made today were pepperoni rolls and chocolate salted caramel chip cookies.
I had some green beans left from last night and I mixed those in the leftover risotto I had for lunch. That was a tasty addition.

tonight I'm making a small veggie lasagna, as my batch cook for the week. I'm using sauce I thawed, that I made back in August when I hosted a few YMAM ladies here.
I also have a package of B/S chicken thighs that I'm wavering between just sautéing or using them in arroz con pollo.
this week is short for me, as I leave for the airport Wednesday afternoon. the baking dish I plan to use should be 6 portions. if I don't get to them all, it's not the end of the world.

Left overs from my birthday family lunch at Cracker Barrel. My DD and 2GrS and 2GrGrS came from 3.5 hours away. I was surprised. 14 people. The interesting thing was one GrS was late. He said he didn't need to order anything and proceeded to finish the biscuits and corn muffins from one end of the table! Followed by water! So delighted, I also took a couple of cake slices and scones from a pickleball potluck mixer from yesterday. For years,the tennis club would host a kick off the same month as my H's birthday so we counted that as his party since most of our friends could attend for free. The tennis social was also for signing up for leagues and the club.

Pulled some french dip from a batch cook from the freezer, along with some garlic onion rolls. The rolls were a day old special. I paid $1 for 12. These are the last 2 and the last of the french dip. This will be a staple for us. Will add some provolone and horseradish when I toast the rolls.

Ate my turkey and baked bean other serving for lunch. Now ruminating about dinner, laundry and running the dishwasher. Have not gotten to the broccoli rabe yet.

Did end up using some broccoli rabe as I realized it probably wasn't faring well in the fridge. It wasn't and I tossed something else. Sigh.
Ended up making penne pasta with the broccoli rabe, chicken bourbon sausage and some olive oil, cooking wine, and garlic sauce. Even put a little cracked pepper on top. May have only one more meal out of the greens instead of the four I would have had, had I been up to using it sooner.
Oh well. Perfection is something I do my best not to worry about.

Not exactly sure what I will be doing for dinner. I just don't have the brain capacity to worry about. Probably a canned soup or sandwich. I will be chopping veggies for nibbles so that should help. I ended up making a rice and veggie dish for dinner and it was decent. I need to re-work some of the seasonings for it to really shine.

I'm making the arroz con pollo tonight. over the course of yesterday, I took care of two portions of the lasagna. there's two portions without any mushrooms or asparagus (she hates both) that I will be leaving for her. she sounded excited about the idea when I asked if she was interested. I'll get through enough of the rice skillet between now and Wednesday that I can live with myself if Mom doesn't end up having any of it. there's also still one piece of lasagna *with* the veggies she doesn't like.

I used to make that fairly regularly although mine is light on the tomato aspect.
Need to start using my good marked down ground beef brick. However, being exhausted and underhydrated I saw reason and did something else. Made my last two Praeger Fish Fillets in the oven along with the last of the whole onion Walmart Onion Rings. Bought one of those salad kits things on sale planning to stir fry some of it with protein. Ended up making it as a raw salad while things were in the oven. Did not use everything, but the salad dressing was very good as was the pumpkin seeds and sesame cracker pieces combined with a sort of coleslaw looking salad. Green and Red cabbage along with small bits of green kale, slivered carrots and I think even some onion? IDK, but pretty good.

Yesterday was on the cool side so I made beef chili and will be having that for the next few days. It's okay I used Darn Good Chili Mix by Bear Creek but the chili I do from scratch is just nicer. I wasn't in the mood to make chili from scratch so this is a compromise I can deal with.

I picked up a few interesting/different things on my grocery run just now, trying to break some cooking ruts. I need to clean up my act a little and stop eating and drinking like a college kid. this afternoon, I've got some food prep to do for the pups while I'm still on vacation. luckily sheet pan meals clean up easily and don't require a lot of dishwasher space Monday - roasted turkey breast tenderloin and acorn squash, with mashed potatoes. I'll share the squash and mashed with the pups Tuesday - large green salad with leftover turkey Wednesday - bok choy-heavy veggie stir fry, over rice or rice noodles. I need to pick up more veggies to add to this. Thursday - turkey piccata or Lombardy, over leftover mashed or some fresh pasta Friday - takeout

Back from vacation and I need to cook. I enjoyed the break but my stomach is over it.
Monday night is beef cabbage stir fry. I picked up a coleslaw mix, bell peppers, carrots, zucchini and green beans for the veggies. I'll have lunch for Tuesday.
Tuesday night something out. I'm brain dead and physically exhausted from a day in the office.
Wednesday will need to be quick as we have a play at 8pm.

Back from vacation and bachelorette time featuring a blur of pizza, pasta, a steak house wedge salad with beef tips, and a Waffle House build your own biscuit. Saturday's Halloween party featured chili made of locally raised beef, meatballs, beer cheese in a French bread bowl, deviled eggs, a friend's 80 jalapeno poppers halves, various chips, homemade caramel popcorn, raw veggies and a cream cheese-based dip. Oh, and a full bar. This week: Tonight: One sheet pan sausage and home-grown veggies Tues: Ground beef enchiladas w/ veggies Wed: Air fried chicken legs w/ veggies Thurs: Out w/ friends Fri: Caulipower pizza Sat: Finger food Sun: Smoked pork tenderloin w/ veggies
