We had leftover bean soup, with fried potatoes, corn on the cob and sliced tomatoes. Not bad.
DD had eaten the rest of her pasta dish from yesterday but there wasn't a lot and she ate it early. So she had a sandwich right before she went to bed.
I found a couple of really good sounding tofu dishes that I'm going to try for DD and I, hubs won't eat it. Both have baby bok choy and tofu. One has udon noodles in it with veggies, I think she will like them also. Have to go to the city to get some of the ingredients though.

Yes, your pups eat well. I can't get my kitties to eat people food, though I did get Tigger to eat some of the liver I had.

The pork chops didn't thaw in time for Monday's dinner. Instant pot risotto it is. That will use up the rest of the package of mushrooms in the fridge.
Good thing my new menu board is a dry erase one!!

work trip this week. I landed in time to get a "you up for dinner/drinks with the team?" message that ultimately resulted in dinner being served around 830pm. I'm only still awake so dinner can settle a little more before I pass out. anyway, tonight was Carrabba's for Italian food. dinner was chicken marsala w/sauteed garlic spinach. I don't love chains, but I'd order this again if I found myself at another location. tomorrow, I think I'm on my own. still trying to nail down details of my friend coming to meet me at the next location (with a casino) and me having to work on Wednesday. depending whether she heads up tomorrow or Wednesday, we're heading here ( Mama Nina) before hitting the casino Wed night.

On The Border tonight, walking distance to my new hotel. I was bummed to discover that the menu changed this year and fried things are now off-limits to me there. I had a cup of the chicken tortilla soup (without the tortilla strips) and it was tasty, but thin without the tortillas. I know, but I just wanted hearty broth. it's fine. for an entree, I picked the grilled queso chicken. they pour their queso sauce over a grilled (and saved in a warmer....) thin chicken breast and serve it with grilled veggies and rice. the rice wasn't cooked properly, so I didn't really eat that. but that's fine, because the rest was plenty for me. there was definitely a margarita with dinner, and without all the chips and rice, I'll say that cocktail will keep me snoozing til morning. I forget what the tab was, but it's getting expensed anyway.

I definitely should have thawed those pork chops earlier on Monday. I will learn that I have no energy or brain power left for anything more complicated than browning hamburger for tacos or spaghetti on Tuesday.
Pork chops got cooked and I made a from scratch skillet mac and cheese. I'll make the intended cherry sauce for the leftover chops another night.

last night, I was still on the expense report. I met my friend MC that lives in the area i was in, and we went to one of her favorite Italian places. we split a Caesar salad, I had spinach ravioli with sautéed veggies in a pesto cream sauce. she had penne alla vodka, and she brought a bottle of chianti as the place is BYOB. I split the tab between my corporate card and my debit card, since I can only expense myself and coworkers.
tonight, I reheated some minestrone that I made on Sunday. I just needed something light after stopping for a late lunch on my way home from the airport. I also have an order of rice noodles I got to go, to pick from for the weekend.
I picked up a couple things today while replenishing pup stashes, but I need a big shop this weekend.
Sunday, I'll cook a "half picnic roast" in the crock pot and assemble a carnitas verde casserole for next week's batch cook.

today, I picked up Chinese takeout while I was out to drop the pups off for the weekend. $40 plus tip, and I have leftovers for days (by design). PFR w/bean sprouts, baby bok choy in garlic sauce, and teriyaki skewers. I still have rice noodles from Thursday as well.
between the various Chinese takeout and tomorrow's crock pot adventures, I won't need to cook all week. 🥳

To heavy on meat lately. I need to make some vegetarian dishes and for me salmon.
So tonight, filet mignon on the grill, the green beans I picked cooked with bacon, soooo good, steamed carrots with Irish butter, so rich, and a veggy plate. Fresh tomatoes, bell peppers, and cucumbers. I think all will be pleased.

Last night we ended up having leftover Thai as a side with the salmon, so I'll make the lime avocado shrimp tomorrow. And DH's Garden is somewhat producing so I'll incorporate fresh veggies wherever possible.
Tonight: Slow cooker BBQ country ribs, fritters using neighbor grown zucchini, romaine with fresh cherry tomatoes, bacon and mozzarella with bacon vinaigrette Taco Tuesday: Cod tacos, shrimp, fresh cherry tomatoes, air fryer fries using eggplant from DH's garden and zucchini from a neighbor's Wed: Chicken crust pizza, sliced fresh tomato and mozzarella salad Thurs: Beef enchiladas, regular rice for DH, riced caul for me, sauteed yellow squash Fri: takeout from? Sat: Kielbasa, veggies Sun: ?

last night, I assembled a pork carnitas casserole to have for the week. I had some, and a smaller portion for breakfast as chilaquiles. I think most of the pan will be brunch than dinner this week. tonight, I'd like to use up some of the garlic bok choy from Saturday's takeout order. I'll pair that with teriyaki chicken breast and white rice, since I need to make rice for the pups anyway.

tonight I finished off the last of the Chinese takeout, while I chopped cucumbers and cooked BSCB in the Instant Pot for the pups. there's still two good sized portions of the carnitas casserole, and I'm okay with tossing some of it if I don't finish.
tomorrow I might get takeout again, idk. or make a huge salad.
I haven't thought too far ahead yet, but i did grab a package of thin sliced turkey breast cutlets. those will become piccata or a pan of Lombardy, likely during Sunday football.

We had veggie soup for 2 nights, it's all eaten. We talked about going out for dinner tonight and none of us wanted too, so I brought home Subway, sandwiches for hubs and DD and a salad for me. Just boiled eggs to put on top, need to see if I have garbanzo beans.
I bought ingredients for oriental, DD and I may have that for lunch tomorrow with pork in the stir fry.

tonight, I've thawed a small container of sauce I made when andi9899 was here. I'm currently boiling off a small bag of frozen spinach ravioli, and I'll be baking that off under a pile of mozzarella and provolone. there's at least another meal of leftover baked ravioli, and still more sauce to find a home this week. 💡 I need to buy more of these small containers, to allow for smaller use. bc the huge containers I generally use to freeze, I need to be making a tray of something to use all of it. andi - I know you're moving a kid this weekend, but lmk when you a zoom cooking session. 🙃

Preping dinner shortly before lunch helped snap me out of my "what's for dinner" crabbiness in the evening. What really helped was potato soup in the crock pot. And tonight, chicken nuggets, french fries and a corn, cream cheese, pepperocini dish.

I had what my grandson calls “shar-coot”. DH is out of town for work this week, no it was a nice no-cook meal. I had genoa salami, capocollo, sopressata; manchego, goat, & Iberico cheeses, olive medley, fig spread, naan, hummus, smoked almonds, cuke slices, tomato wedges, and crackers along with a glass of merlot.

baked potato night here! I'm sick of my leftovers, and freezer protein stash for the pups wasn't totally thawed for their dinner. I've got some shredded canned chicken left over from the cans I opened for them, to go with a frozen package of broccoli and cheese, the russet's got about 20min left. I just want to go to bed, it's pitch dark here already. I got a sunburn today, sitting outside. I hate winter.
