Monday night I was traveling and just had a snack. I had a yogurt when I got home. My jaws were barking at me after a dental cleaning. Nothing like a trip to the dentist to remind you that yes you do have TMJ. Tuesday night I had big plans but I punted after being in the office. We went out instead. I need to think about this. Either we will go out that night or I need to slot easier things that don't require lots of prep and chopping for this night. Generally this will be the day both of us are in the office. Wednesday night I made the previously punted southwest chicken foil packets. I use regular rice and just soak for 25-30 minutes. I don't generally add the onion. I had a zucchini so I chopped half that and added it. I never add the olive oil. Basically I follow the measurements for rice and bake time. I use 2 chicken breasts and split between 4 packets. I used a whole can of black beans and 2 bell peppers. I think I measured the salsa the first time then I realized that was dumb just put a spoon full or two on the packets and move on. If you let the packets sit for 10 minutes or so, they slide right out. DS came home with a dozen freshly baked bagels. Supper will be smoked salmon, cream cheese, and thin slices of sweet onion and tomato on a bagel. Maybe two bagels. I love this stuff.

Three nights a week the kid has an extracurricular activity. I'm also not too pleased with our more recent grocery bills. Because of those two things, I am back to meal planning.
Tonight is fake-grilled shrimp (just using the indoor George Foreman grill), coleslaw, and lemon butter orzo. Tomorrow night is chicken enchiladas. I'm not in the mood to make rice, so I'll just do a simple green salad. Friday is leftovers.

They don't bite me back. I read too fast and missed the sweet onion. I'd do red, and actually also add capers. but a properly dressed bagel is fantastic, whatever "properly dressed" means to you. I found a tiny little tuna salad wrap at the layover airport, for $13. 🙄 but I made my connection, even with the crazy delays leaving Boston. woo hoo!

Left over vegetable lasagne. The big Stauffers kind. I need to cut down significantly on our stored groceries. This will require some interesting combinations. One I really liked was any cooked pasta with any spaghetti sauce and meatballs baked.
My GF said she is making simple meals like baked potatoes and/or grilled meat. She eats like a small bird then appears to be weak. There are health issues.

Hamburger steaks with caramelized onions, mashed potatoes, gravy, and some yet-to-be-determined-vegetable. Made a meal plan for the next two weeks. Just finished putting in the grocery order for pick up tomorrow. Once I get the order and see what was actually available, I'll plan the menu for specific days.

Beefy pasta and I made rowies (a very buttery roll/biscuit). The rowies came out great, I ate two and had to stop from eating more. I didn't even have any pasta at first. Filled myself up with bread

Made a pasta bake with what I had at home (ground turkey, two sauces, short pasta and lots of mozzarella and Parmesan cheeses). I have a small pork loin (bought on sale about a week ago) marinating in the fridge to serve with corn on the cob (also on sale) tonight. We will have hot dogs on pretzel buns, beans and sauerkraut for dinner tomorrow. The beans were on sale, the kraut just a small can (it's two of us). The hot dogs were not cheap, since I buy them individually from a local specialty market, but it's better than wasting money on a large package.

Nostalgia. We are online looking up people we used to work with 20 or more years ago. I also did this with some estranged cousins. Two I didn't know were my cousins until later in life.

Tonight is pan seared tilapia with lemon cream sauce, roasted asparagus, and buttered orzo. Sauce was a new recipe and I don't think I'll bother with it again. It tastes fine. It's just, we eat well seasoned pan seared tilapia without sauce pretty regularly and enjoy it. Doesn't seem worth the effort - or calories - to make the sauce again.
Tomorrow is fake chimichangas (I don't deep fry them, I just brown them in a skillet), Spanish rice, and southwest chopped salad. I've planned the meals for the week, but not real clear on what we will have each day yet. Waiting to see how Tuesday goes.
Grocery order had everything available except the zucchini. Which I need for vegetable soup sometime this week. I'll find time to make a quick stop at a store eventually. And, since it was grocery day, lots of meal prepping and batch cooking. 8 jello fruit cups for DH and the kid to have with their lunches. 12 bacon breakfast burritos for the freezer. 12 sausage kolaches. I will put at least 6 in the freezer when DH isn't looking. Two pans of chimichangas, so the other is in the freezer for a future meal. Two pans of Spanish rice so one to the freezer. 4 bacon wrapped stuffed chicken portions for the freezer. We will use two portions for a single meal which means two meals out of that. One batch of corn pudding divided into two pans for the freezer for future meals. 8 individual apple cinnamon oatmeal portions in the fridge. One batch of chocolate-chocolate chip cookies which yielded 2 dozen. 4 packed for the kid's snack for the week. The rest are packed away in the pantry for now, but, I may go ahead and freeze some by the middle of the week.
I haven't prepped the produce yet. But, tomorrow is a holiday so I'll get it done then. I always kick myself when I don't prep the produce. A lot of our produce is fruit, so having it washed and ready to go just seems to make things go so much easier.

Tuesday night quesadillas with the last of the leftover bacon, mushrooms, shredded chicken and Colby Jack cheese.
To be cooked after I snack on the last of the buffalo chicken dip. I starve to death on the day I go into the office. It has to be the getting up at 530am. I had my Chobani yogurt cup, a dry serving of vanilla honey cheerios, an iced coffee, a small 8" pizza, a coke, some honey roasted peanuts and ice water.

I used frozen meatballs and made a ginger miso sauce. I also made carrots and green beans sauté in sesame oil and chili oil, with some shallots, garlic and ginger. Put all that over rice. I am still trying to figure out how to cook for 2. I thought I was making enough to eat the leftovers for lunch, but apparently not. My husband snarfed it all. 😀

-Sunday, we ended up making steak with leftover andouille sausage, green beans and ranch beans for DH. -Monday DH smoked a ham for several hours and I baked cornbread in the air fryer. -Last night I stuffed halved zucchini with leftover beef from the freezer, riced cauliflower, leftover diced tomatoes, and two types of cheese. SO good. Served it with leftover ranch beans and diced potatoes from the freezer for DH. -Tonight: Shrimp in homemade Alfredo sauce in order to use up a canned of evaporated milk with a tomato mozzarella bacon salad drizzled with a homemade bacon vinaigrette. -Thurs: Romaine avocado tuna salad -Fri: Leftover 50/50 burgers, sauteed asparagus -Sat: ? with veggies -Sun: ? with veggies

takeout tonight, on the way home.from picking up the pups. I'll go grocery shopping tomorrow.
yup - lg pizza for me to pick from the next few days (red onion/pepper/mushroom), an order of chicken tenders for the pups, ans 2 rounds of drinks for the twins and me. I need to stop on the way home and grab a bag of shredded lettuce to bulk the pup bowls. big shop will be tomorrow, and I'll do a BJs run over the weekend for rotisserie chicken to shred for the freezer.

We are going to be eating out less. As son says 3 6 inch Subway sandwiches, $28 and for us $25 is getting pretty bad. I swear each time I go to the store everything has gone up again.
But also I'm not going to waste food, like all the stale dated stuff I got rid of. I'm going through and look at what we have and what we actually need and go from there.
But tonight was cheeseburgers, hubs and DD's favorites, baked beans and corn on the cob. I think this is the last they have locally, it was sooo good. And I made me liver and onions again. Some of the wonderful Odon meat for all of us. I absolutely crave that at times and more so lately. I will finally get enough and may not even want it for a year. Must be something my body needs.

last night, I used the fresh sage Malarky brought me a few weeks back. I made a brown butter sage sauce for butternut squash ravioli. it was divine, and I've got leftovers for another small meal.
tonight, I reheated some leftover pizza and called it good. tomorrow's agenda includes a BJs run as well as another grocery trip (the sales run F-Th here, so I'm getting 2w of sales between yesterday and tomorrow) to fully restock the fridge. I'll be away again next week, but my mom is camping out with the pups. so, produce will get used up while I'm not here.

I haven't made it to BJs yet, that will be tomorrow. I went south today and restocked dog treats. I also picked up a beautiful cod filet at the fish market, about 3/4lb. I'll bake that off (pups' portion will be unseasoned and they will have it for breakfast tomorrow) and pair with roasted Brussels and maybe some tiny potatoes.
