I had a late lunch but got hungry. I decided on a fancy fast food burger. I'm a sucker for the mushroom Swiss burger at Hardee's. $6.53 for just the burger.

Because I failed to remove the Cornish hens from the freezer, Sunday we had American cheese stuffed and smothered burgers with air fried eggplant fries and spicy ranch. Last night was a take on low carb McGriddles including almond bread, locally grown country sausage, scrambled eggs and cheddar with a side of syrup. Tonight: In an attempt to finish various condiments, there is what is known as fridge door roast in the Crock Pot: Beef roast, the rest of a bottle of BBQ sauce, a bit of leftover chicken broth, some Worcestershire, soy sauce, a can of tomato diced chili Rotel, various spices, and a bit of minced garlic. I'll serve the roast in portobello mushroom caps with a side of homemade ratatouille. Wed: Cod with breaded shrimp, and a veggie. Need to remember to use the rest of the frozen lemon juice. Thurs: Club night Fri-Sun: Not sure yet

Iggy, did you make the almond bread? would love that recipe if you don't mind sharing. my sister and I don't get together nearly as often as we used to, but breakfast is an area where I'm generally stumped b/c of her food restrictions. TIA!

Hiya, chiver78. I baked the bread in the air fryer for 15 minutes. The recipe: Keto Bread Recipe
I didn't read the notes until after, particularly the one where is says "don't even think about omitting the chia seeds" which I did, and the bread was fine. If I had some on hand, I would've added flax seeds instead of the chia. You'll want to ensure the melted butter cools, of course, to ensure the eggs don't scramble.

thanks! that looks sis-friendly. I've never cooked with coconut oil before (dairy is a no), and wonder if it's similar to Crisco or more like a liquid.

I bought pulled pork at the amish butcher shop. I 'm sure they cook and season it on outside grills, it was wonderful with fresh bread from there. Thawed some of the 2018 corn and had it, not freezer burned, tasted like fresh, so not throwing it away, we will eat it first. Then picked bell peppers and tomatoes, washed, and sliced them. So dinner tonight was a win.

Thank heaven it's cool enough for 9 x 13" casseroles. Tater Tot hot dish for tonight.
I have 3 premade pizza crusts from Dollar Tree. I just need to get a few cut up peppers and some of the ground meat cooked for the hot dish. For lunch I have been sucking up my desire for low calorie and eating the high calorie chicken salad in a low carb/calorie wrap. H. is ignoring the chicken salad and the lettuce I bought at the farmer's market. One of my grips about him. I end up eating the stuff he overlooks on purpose.

So naturally, i would trade my black forest ham sandwiches at school for bologna, becuase it was exotic and forbidden. We haven't had bologna in years but always loved it. Back before anyone cared about cholesterol and sodium, we would get the whole bologna at the store, the 6" X 12" tube, removed the plastic wrap, make shallow cuts all over, slather it in BBQ sauce and grill until hot and lightly marked all over. We called it poor man's BBQ because we couldn't afford steak.

last night I used up some fridge stuff ahead of a week's vacation. I sauteed baby spinach and mushrooms, made a ricotta sauce, and then added some cheese tortellini to the pan. I had a family-size package of Buitoni tortellini that expires right when I get back, and I hate freezing them. there's a ton left over. tonight, I'm not sure what I'm doing. I've been snacking on things all day and I'm not really hungry. tonight might be a can of soup or a frozen turkey or black bean burger. idk. ETA - yup, a can of soup. Progresso has a new flavor in the past 6mo or so - spicy chicken noodle. they added jalapeno and seasonings to their basic chicken noodle. I'd actually keep a couple cans of this in the office if I were going, it's got a decent kick on its own and doesn't require extra seasonings. I did have to pick out the carrots, but that's nothing new.

Tonight was sauteed chicken tenders and brown lentils. Once a year, Aldi has these wonderful little packages of brown or green lentils. Tear open a corner and nuke for 90 seconds. Last fall I saw them and was that person who grabbed up all of them and dumped them in my cart. We have 13 packages left, 2 cans of lentil soup and 1/2 lb of dried lentils. Do you think we like lentils ?

Monday night I was traveling and just had a snack. I had a yogurt when I got home. My jaws were barking at me after a dental cleaning. Nothing like a trip to the dentist to remind you that yes you do have TMJ. Tuesday night I had big plans but I punted after being in the office. We went out instead. I need to think about this. Either we will go out that night or I need to slot easier things that don't require lots of prep and chopping for this night. Generally this will be the day both of us are in the office. Wednesday night I made the previously punted southwest chicken foil packets. I use regular rice and just soak for 25-30 minutes. I don't generally add the onion. I had a zucchini so I chopped half that and added it. I never add the olive oil. Basically I follow the measurements for rice and bake time. I use 2 chicken breasts and split between 4 packets. I used a whole can of black beans and 2 bell peppers. I think I measured the salsa the first time then I realized that was dumb just put a spoon full or two on the packets and move on. If you let the packets sit for 10 minutes or so, they slide right out. It also reheats well. I'm slowly becoming comfortable adapting things and using a recipe as a base starting point. Hazard of learning to bake first and a type A perfectionist personality I guess.

I've got a package of boneless chicken thighs to cook, and one each zucchini and summer squash. I think I'm going to make some mashed potatoes as the bag of russets in my cabinet is starting to sprout. I can saute the chicken and veggies after I make the mashed potatoes. that, and what's left of the creamy spinach tortellini should carry me through most of the weekend.

Left over tator tot casserole. Love the chicken recipes. Yum. I really over ate today with eating out at noon. I fell for the Combo. There was just one drink with no sugar tea and one diet cola. I had no idea how long the tea had been sitting so that was a no. We waited so long I had 3 medium sugar drinks. Oh well, can't undrink or uneat something.

Sunday night I made a sheet pan dinner with chicken sausage and roasted veggies. Topped with fresh grated parmesan. Veggies were red bell pepper, baby red potatoes, carrots, broccoli and zucchini.
Importantly there are leftovers to be my lunch on Tuesday when I have to go in the office.

-Last night DH grilled locally raised ginormous steaks. Mine will yield three servings. I sauteed up some asparagus, moon sliced eggplant with bacon and topped it all with melty shredded mozzarella. Yum! -Tonight: Since I thawed the incorrect chicken we'll have air fried almond flour parmesan breaded chicken drumsticks (though these, too, really are tasty!) with 7-layer salad on the side. -Tues: Cod, breaded shrimp, sauteed spinach and yellow squash -Wed: I'll make the Crock Pot spaghetti squash chow mein I was supposed to make today. It will utilize part of the bag of coleslaw bought a few weeks ago. -Thurs: From the freezer, leftover beef roast, steamed broccoli, and do something with more of the coleslaw. -Fri: Take out or graze/leftovers night -Sat: Out -Sun: Cornish hens on the smoker, veggies Have a delicious week, everyone.

I brought DD chicken tortillas home and some chips and cheese sauce.
Got stuffed bell peppers from Sam's for hubs, he said they were just ok. I'm going to eat one.
I had 2 pears and a banana for dinner, but like I said may eat a pepper.

Monday night I made ground beef taco meat and heated up a can of refried beans. DH had his as soft tacos and I made a taco salad.
Tuesday night I'm making instant pot risotto. This will be easy after my in office day. I'll add shredded chicken and peas.
Wednesday I'm considering options.
Thursday buffalo chicken dip and other snacky things. Our college football team kicks off their season. If the weather cooperates, we'll watch it in the backyard.

takeout tonight, although not what I'd originally planned. the really good Chinese restaurant is apparently closed on Tuesdays. 👎 I picked up a chicken Caesar wrap and onion rings instead. there's easily enough leftover that I can have a solid breakfast before leaving for the airport.
$19 and change. and my dishwasher is running the last load now. I'll unload in the morning and empty the trash.

something at the airport, that isn't a chicken Caesar salad lol... I finished my wrap for breakfast and out of habit ordered a salad when I sat down at the airport bar to watch tennis while I wait for my flight. oops. anyway, I have a 2.5h layover at JFK from 430-630. so I'll probably grab a pre-packaged sandwich I can just eat later when I'm hungry. it will be another 6h on the second flight.

Risotto was punted to later in the week. Maybe lunch one day. It took me nearly 3 hours to get home due to traffic jam from a bad accident that closed the main artery into and out of my county. I had leftovers Tuesday.
I have a pork roast thawing for tonight. I'll do some sort of mushroom sauce with it and probably mashed potatoes.
