I was going to go buy pork chops for Tuesday's dinner. I have a small pork loin roast I could cut into chops but that would give too many leftovers. We leave Wednesday night for an extended weekend trip.
DH has been asking for pork chops but we are out. I found a pork shoulder blade steak in the freezer left from the half of pig we got awhile ago. Probably still hanging around because I didn't know what to do with it.
I went to Google and I'll probably grill or pan saute it. It was paid for long ago and one more thing used up out of the freezers.

I think I got the idea to fold the tortilla in half when making quesadillas from Budget Bytes? So much easier! Before I was using our biggest skillet and trying to get the spatula under the edge. I did the fold method too, so easy!

I ran through the grocery store to grab some rolls. Glad I walked through the meat section - scored a 5 LB pack of ground ribeye marked down to $14.77! I had a 1/4 LB smash burger last night, and brought 1 for lunch today. The rest got frozen into 1/2 LB packages, which is enough for DH and I.

I did some pup cooking this afternoon, and then didn't want any of the leftovers in my fridge for myself tonight. so my dinner was a big old bowl of linguine marinara, since there's an open jar of marinara hiding out in the fridge. I'll be in bed in the next hour-ish, and I don't really care tonight. lol...

I'm doing a baked tilapia Veracruz with couscous left from Wednesday. The fish is baked on a bed of sauteed grape tomatoes with garlic, chopped green olives, golden raisins and lots of spices. Topped with cilantro too

I'm doing some food prep today, including another zucchini pie for the week. dinner tonight will likely be some of that plus the last piece of chicken breast leftover from a few days ago.
tomorrow, I'll do more prep. romaine hearts were BOGO at the store today, so I have 6 in addition to the 2 that were still in the fridge. the pups can help, but that's still a ton. I'm going to saute more BSCB and prep a bunch of veggies to pick from in Cobb salad bowls. as I say this, I realize that I forgot to grab frozen corn earlier. oops. 🤦♀️

pizza at the patio with the pups. 3/4 of it is coming home to have on hand for munchies this week/weekend. onion/pepper/mushroom. chicken tenders for the goobers, and a couple cocktails for the adults while we watched the epic lightning show from under out patio awning. I'm soaked now, but don't care in the least bc we so badly need this rain.

Was supposed to go camping this weekend with the neighbors, but at least one family member came down with Covid. Therefore, this weekend suppers have been adjusted.
The next week and a half: Tonight: Portobello pizzas, sauteed zoodles and baby spinach Thurs: The ginger garlic shrimp I didn't feel like making last night, eggplant fries with horseradish crema Fri: Canned cobb salads or take out Sat: Cobb salad if not Fri Sun: Steak, tuna zucchini cakes Mon: Keto baby back ribs, veggies Tues: Enchiladas from the freezer assembled last month served on a bed of baby spinach Wed: Air fried chicken legs, mashed cauliflower Thurs: Crock Pot spaghetti squash chow mein Fri: Out Sat: ? Tonight DH is doing hot dogs (actually all beef sausages) with lentil soup. Tomorrow I'm doing a chickpea curry that will use up the coconut milk and pumpkin puree that's been lurking in the freezer as well as red bell pepper and cilantro from the veggie drawer.
Saturday is plant-based burgers and a pasta salad I'll make with the last of the grape tomatoes, some olives, red onion and who knows?
DH cooks again on Sunday and he's going with grilled chicken thighs and cauliflower

leftovers tonight. pesto rotini and the last piece of sautéed BSCB. my fridge is pretty empty other than pup stash.
andi is here this weekend, we are likely eating out a bit. I think we are trashing my kitchen on Saturday though.

It used up the mushrooms and half a bag of green beans I had in the fridge. I'll make this again. I served it over a brown rice/quinoa mix. Chicken thighs were on sale for $0.99/lb at the grocery store. The other half of the package will be air fryer chicken later. I used half and half with some cornstarch to thicken it. The only heavy cream at the grocery store was organic for $6.79/pint. That was a big no.

that sounds tasty, wvu. I just saved that link (maybe again, idk if you've shared it before).
tonight will be basic plate of pasta with red sauce and a solid Cosmopolitan, once the pasta finishes cooking. I'm going to relax on the deck with Sunday Night Baseball til I need to go to bed. that won't take long....I'm tired, but happy. this weekend was a blast, hanging out with some of the fine ladies of YMAM here at my house. I've got a ton of leftovers already in the freezer after trashing my kitchen yesterday, and I got andi safely back to the airport to head home to KC.

I made a pot of Vietnamese-type soup. Chicken broth, chunks of chicken breast, broiled ginger and sweet onions, string beans, garlic, enoki mushrooms, rice noodles, fish sace, hoisin sauce, mirin, chili oil, cinnamon, green onions, basil, coriander, and lime. Very good.

tonight will be chicken Milanese with a Caprese salad. I've got a bunch of leftovers to work through this week. I'm kicking myself for not thinking to grab arugula on Saturday when I basically ran through the grocery store. we could have had some vegetables with all the carbs and fried stuff. oops.

It's going to be warm the next several days so I have macaroni salad and cottage cheese for snacking along with x-sharp cheddar to go in crackers with grapes as a side dish. I also plan on doing a caesar salad and bulking it up with 5 cheese tortellini. Really need to get some veggies so I can nibble on wholesome things. (I have 6 carrots, romaine, 2 red potatoes, apples, grapes and 1 roma tomato in the fridge.)
I also need to work on my ice cream stash because the freezer is stuffed and cooking would be horrible with only the portable AC unit. It's in the bedroom for night time.

I found a huge russet potato in the cabinet earlier that was starting to sprout, oops. I snapped off the baby sprouts and roasted it via Alton Brown's directions. I topped half with a little shredded BSCB from the pup stash and a steamer bag of broccoli and cheese sauce. I'll try to grab another steamer bag on my grocery run in the am, and I'll have the other half of this on Friday.
tomorrow, I'm handing over the pups for the weekend. I still don't know whether I'm travelling, or the twins are. if I'm travelling, I'm getting Chinese takeout on my way back home. if they are travelling, I'll be making something BSCB for myself and M, meatloaf for mooch, mashed potatoes and roasted veggies for everyone.

Sunday night we ordered pizza.
Monday night was spaghetti and garlic bread. I am finally down to the last package from a Sam's Club size box. I don't like this brand.
Tuesday night Texas Roadhouse take out.
Wednesday night grilled hot dogs and fresh corn on the cob. The corn wasn't the best and it's hardly been on locally for like 3 weeks.
Thursday I'm not sure yet. Probably a repeat of tonight.
Friday night dinner at the baseball game.
Painful restock coming up Friday at Sam's. I hope they have chicken.

Dinner was better tonight. Hubs had 2 cheeseburgers and seasoned fries, all he wanted.
DD and I had the rest of the ground round with oriental veggies with soy sauce added. It was good too.
I bought brand name spaghetti this time and will do the same with bread sticks the next time, The other were store brand. No more of that sausage either.
Hubs cleared the table, I need to clean the dishes and kitchen. Right now we are watching a TV show.

After last night's InstantPot pork loin fiasco - threw the whole thing in the trash - tonight will be cold shrimp, green beans, mini potatoes, grape tomatoes, sliced avocado, hard-boiled egg and some olives. Tomorrow is DH's shot and he decided on Italian bread with Brie and a smoked cheddar, plus Speck.

I think I'll pick up another chicken shish taouk on pita. I love that stuff, and they're big. It's way too hot to cook. 488 calories, so not bad.

I had lunch around 3 today, so I'm calling that dinner. I'm still so full, I might not even snack tonight.
the bill was $30 before tip, for a glass of pinot grigio and a roasted veggie calzone. the menu said zucchini, spinach, artichokes, and caramelized onions. I subbed fresh for caramelized, and then discovered the calzone also had roasted eggplant, broccoli and whole garlic cloves (very good surprise) as well as whole black olives (very bad surprise). at least they were whole and easy to pick out. but what the hell? what if someone was allergic to one of those additions?
anyway, I have food for days, between the rest of the calzone, the vat of extra sauce they packed up for me, and the bread basket that almost all came home. Bertuccis rolls are amazing, but my basket had 7 rolls in it. lol....what?
