I just discovered that my local grocery store has a marked down shelf for produce bearing the end of their prime. I scored a bag with 2 green peppers 1 aloha pepper, 2 banana peppers, and 2 poblanos for $1.07. The poblanos with end up stuffed tomorrow. Unsure about the rest, but I can throw them in anything (or the freezer). They don't look too bad to me, so I think they would last a couple of days in the fridge yet.

yum, stuffed poblanos! those are actually my favorite for breakfast. stuff them with scrambled eggs and whatever else you want to mix in. it's fabulous.
tonight, I'm in the middle of a couple batch cooks. zucchini pie is cooling right now, and there's chicken tenders in the saute pan. those will get shredded into a chicken broccoli rice skillet meal, involving a Lipton rice packet. I doctor it up with fresh onion, garlic, chicken stock, a whole chopped head of fresh broccoli, and fresh shredded chicken. it turns into a huge container of leftovers I can pick from all week.
dinner may be a small portion of the zucchini pie and the rice. the pie is cooling now, and I've been drooling haha.

We had shish kabobs, made with filet mignon. Corn on the cob, cucumbers from the garden. Potato salad and cottage cheese but ate little of that. I had Hawaiin Rolls and grandson likes those too. He is trying lots of different foods and likes most of it. I'm so glad he will try almost anything.
We have some watermelon left, but tomorrow I'm getting a red one.

tonight, I'm cooking off a package of boneless chicken thighs and roasting plum tomato and mozzarella slices for a caprese salad. I'm debating toasting some fresh sourdough to make an open-faced sandwich of it all.
the other four chicken thighs will be up for grabs for salads/sandwiches the rest of the week with what's left of the zucchini pie and ck/broc rice.

Monday night I made homemade Hamburger Helper at DH's request. Maybe $7?
Tuesday night I used the recipe for honey garlic shrimp from Sally's Baking Addiction. I dumped a bag of steamed stir fry veggies in at the end and served over rice. Maybe $12? The veggies and the end of the bag of shrimp have been around in the freezer.
I'm continuing to work through the older stuff that was shifted to the fridge freezers.
Wednesday night is TBD.
Thursday night will be carnival food in support of one of the local fire departments. We enjoy going to the various fire department carnivals but are definitely going to this one. The department had a run of bad lack and two of their vehicles are out for repair through no fault of their own.
DH is on his own for the weekend. I'm going to visit my family.

I had to dig for this thread tonight, looks like it's been a few days! my fridge is really empty tonight, and it's weird. the pups aren't here this week, and I'm leaving for a couple days.
tonight was chicken Lombardy, with some bucatini pasta. I sliced four cutlets from a package of two BSCB, and have three more meals. I'll boil pasta or make a sandwich as I need to. if anyone is interested in the recipe, lmk and I'll update the post.
OOP costs $6 - BSCB $7 - Marsala wine (I needed a new bottle) $2 - pasta $2 - pkg of cremini mushrooms
on hand/use or pitch - clamshell of baby spinach - chicken broth - scallion - shredded mozz/provolone - garlic

tonight I'm meeting my dogs (and friends) at the sports bar patio. their heartworm meds came in from Chewy after I dropped them off for the week, so I need to hand those over....and snuggle them for a bit. dinner tonight will involve an order of chicken tenders for them to split, and probably a chicken Caesar wrap with fries for me. ETA: the rest of the week, I'll be in a hotel near work. lots of eating out for a change.

Home made pizza. I had lots of good toppings and fried ground beef. I will buy a premade crust next time. Or a refrigerated one. My friend made the jiffy crust look so easy to make--not for me!
I froze part of the meat. I do have enough toppings for a pizza tomorrow. The really good stuff we had this week were Philly Cheesesteak sandwiches on hoagie buns. The left over roast! ! ! I bought precut up peppers and onions. It costs the same as whole peppers and onions. Then lasts longer in the fridge. I'd been off bread for a long time. Back to no bread and shrinking me!

I am going back and forth on either finishing off the tuna fish or having fried chicken and sides. I guess it just depends on how the day ends. I really can't go wrong with either choice.

I went with the enchiladas last night, and two blood orange margaritas while we sat and chatted.
tonight, I'm tired from peopling most of the day. I'm already sitting at the bar (where I can watch the baseball game on tv) at a Bertuccis near my hotel. I've got a glass of chianti while I wait for my half salad and small pizza - roasted chicken and broccoli with a lemon pepper cream sauce base. the leftovers will be tasty for breakfast before I hit the road tomorrow.

I just had regular frozen corn so I added some frozen peppers and onions from a bag I had in the freezer. I also added some cumin based on the comments. I had to pick up some things (Spanish rice, cotija cheese and green chiles) and it used up some stuff hanging around like that block of pepper jack and the limes that had been on the counter forever.

Maybe you could add more cream cheese if you are okay with that chiver78? I would make it again. It was pretty creamy. I will likely cut down on the mayo/sour cream next time. The black beans were a good addition. I would probably add more rice too. If I had any shredded chicken in the freezer it would have been a pretty quick mix and in pan meal. I've been working through the freezers and I'm all out of shredded chicken. I had to thaw some chicken breasts and instant pot them and shred.

last night, I had to scramble for pup dinner after spending the day out for some much needed time with friends. I picked up a rotisserie chicken, some blueberries, and a package of instant rice cups (cooks in 1min in the microwave) to go with some canned stuff I keep for exactly this situation. we all had some of that chicken for dinner, and I finally did a big shop this morning.
last night for me - rotini with shredded chicken and a package of broccoli with cheese sauce (there's leftovers for a couple small lunches)
this week, I don't know which nights will be what. but this is what is on tap with what I picked up this morning.
- pork chops with mashed potatoes and broiled asparagus (will also be making mooch's meatloaf this night while he does some work here) - pesto chicken and pasta with roasted grape tomatoes - roasted caprese salad with pesto and balsamic glaze, maybe with grilled chicken. - pork ramen with a sliced leftover pork chop and a ton of added veggies.

We had a leftover filet for hubs, cheeseburgers for the kids, and a hamburger for me. Fried potatoes, corn, greens, and baked beans.

Porcupine meatballs baked in the oven decorated with left over sliced peppers. Salad. The ground meat I have is in 3/4 lb. pkgs and the recipe calls for 1.5 lbs. The recipe worked out just fine.

Friday night we went out for an anniversary dinner. My filet was excellent.
Saturday night we had leftover street corn skillet.
The street corn skillet wasn't too creamy in the leftover rounds. I liked it better leftover. I guess it's one of those things that needs to meld and marinate.
Sunday night we had the leftover chicken thighs, leftover green beans and I did Mexican corn off the cob with the last of the fresh corn. I baked the corn because it rained all afternoon and evening. I had planned to grill it but a rain cloud settled over the area Sunday afternoon.
Monday night we had bacon cheeseburgers. I had bacon left from Friday morning so added those to the cheeseburgers. Discovered the jar of pickles was still in my car under the seat from that shopping trip.

Last night was a chicken and cheese quesadilla made from some pulled chicken I had cooked in the crockpot Sunday, with some sour cream and salsa (in a 100 calorie wrap). DH had pulled chicken sandwiches. There is enough left for dinner tonight. DH wants a quesadilla tonight.
I am embarrassed to say this - I love quesadillas, but this was my first time making one myself. It is so easy, I'm not sure why I haven't tried doing it before. It was easy and delicious.

I think I got the idea to fold the tortilla in half when making quesadillas from Budget Bytes? So much easier! Before I was using our biggest skillet and trying to get the spatula under the edge.

change of plans today, I realized the package of pork chops was dated yesterday. those won't survive til mooch comes up on Friday, oops. I'll get to the other package of BSCB later.
I just cooked off the four chops in my Dutch oven, two plain for the pups and two crusted in Penzey's Northwoods seasoning for me. I sliced one seasoned chop over a big green salad, and this is my big meal today. I'll snack at the concert tonight (I was offered a free ticket, Tesla is playing)
