Biscuits and gravy tonight, DD was thrilled, hubs was happy. But I look at all the things you folks eat and wish my hubs would eat a variety like that. DD and I eat anything and everything. DD and I like a simple recipe of frozen veggies in about a quarter pound of hamburger with soy sauce on it. I top with the canned noodles. He doesn't like fish, chicken, lamb, not crazy about pork. DS is like that, even though he ate everything as a little kid. He loves pasta. The other night, I made couscous and he refused to eat it. I told him that pasta is 100% semolina wheat and couscous is 100% semolina wheat. He still refused, as it's 'too small.' It irritates me to no end.

My hubs won't eat couscous either and lots of other stuff. Yes, it's aggravating.
Tonight we had hotdogs, I had one of the kind from Sam's, they are really good. My grill is out of gas and we didn't want to change the tank, so I put them on the griddle on my stove. It has a grill gas burner in the middle.
I stopped at the deli in town and bought some bean salad, vinegar slaw, mermaid salad, and had some leftover potato salad. Added cottage cheese and heated up the potatoes and carrots from the roast. Not bad at all.
Purchased sweet slice ham, thinking of chef salad for tomorrow night. But I may also make a pot of bean soup for the next day.

I made some really good carrot muffins for breakfasts for the rest of the week. Very little sugar or sweetener in them. Tasty! We'll be alternating having chili and a rotisserie chicken this week. With salads and brown rice. By Friday, we should be out of food. So I guess DH will need to take me out for dinner

last night, I made pizza from a dough ball I found in the freezer a couple days ago. pesto sauce, a bunch of veggies that needed to be used, and the last slice of prosciutto. I tossed some arugula in lemon juice and put that on top of my slices with some balsamic glaze. it was fantastic.
tonight will be something with thin sliced BSCB. I have the rest of a package I opened on Saturday, to use up. maybe chicken Lombardy, as that will use up spinach, mushroom and some shredded cheese as well. scratch that, I'm saving that chicken for tomorrow late lunch with my sister (she's having a small ribeye) before we head out to a concert. I picked tonight to cook off the Bertolli meal in the freezer. I am still using up the spinach, and I added a sandwich baggie of shredded rotisserie chicken as well.
also on the menu this week at some point - stuffed mushrooms. I found some chicken sausage links in the freezer when I found the pizza dough ball.

Major using up what we have on hand going on these past few weeks. I bought a surplus of crackers and baking ingredients over the Christmas holiday, and expiration dates are drawing near. Three boxes of crackers went with DH to the shop. I used the two Suddenly Salad boxes by making pasta salad for an event over the weekend. 6 dozen cookies and a batch of air fryer brownies used many baking ingredients. I've been focusing on using up a bottle of apple cider vinegar, open BBQ sauces and salad dressings. Yesterday I made a faux potato salad which used a bit of the vinegar. Last night: Cornish game hen cooked on the Traeger with air fried eggplant fries and some of the aforementioned salad. The next few weeks: Tonight: Avocado tuna salad with apple cider-based dressing an update here, too. I'd forgotten DH offered to pick up take out from a local wings place tonight. I ordered a beef taco salad w/ no tortilla shell. Taco Tues: Ground beef tacos with toasted cheddar shells, and a tomato, avocado cucumber side salad Wed: Spaghetti squash, baby spinach and canned chicken with the walnut pesto I've been meaning to make for at least a month Thurs: Crock Pot pulled pork or beef using some of the vinegar Fri: Doctored up Caulipower pizza (didn't get to it last week) baked in the Traeger Sat: Out Sun: Sugar free (imitation) honey walnut shrimp Mon: Cobb salad Tues: Cod and shrimp skillet with veggies Wed: Keto beef stroganoff stuffed in portobello mushrooms, served on zoodles Thurs: Take out from? Fri: Teriyaki Crock Pot chicken, riced cauliflower Sat: Leftovers Sun: Breakfast for supper including homemade country style gravy Have a fantastic few weeks, everyone.

relatively easy week this week.
Tuesday, like I said my sister was here. she's got a whole host of food restrictions, and everything was K-friendly. I roasted 2 ears' worth of corn, tossed with diced jalapeno and onion, and chili seasonings. I also chopped 1 romaine heart for a tossed salad with tortilla strips and a blazing chili lime vinaigrette she mixed up. I sautéed the thin sliced chicken I mentioned on Monday, and she got to play with my Blackstone for the ribeye I picked up for her. it all was fantastic.
last night, I reheated the last two slices of the pesto pizza.
tonight, I finished off the tossed salad with some added shredded cheese and some of the leftover chicken. the vinaigrette is better a couple days later after the spices have sat in the oil. 🤤
tomorrow, I need to make the stuffing for mushrooms and use up the bruschetta I mixed. so, my two meals tomorrow will be some arrangement of stuffed mushrooms and bruschetta toast. I picked up a baguette this afternoon, that I will slice and broil.
good news is that there really isn't that much left in the fridge and freezer. over the weekend, I'll do what I can to wipe out a black bean burger, a bag of butternut squash ravioli, some frozen turkey burgers, and some veggies to roast. this is totally doable!

Thursday was cold and gross so I made beef stroganoff in the instant pot.
I'm going away for the weekend. DH is on his own.
I need to go rearrange the chest freezer before I leave. He's meeting my dad on Saturday to pick up the half cow we got.

stuffed mushrooms tonight. maybe a small salad too, idk.
I got through most of the freezer, and I'm going to just pack up whatever's left in each section in my reusable grocery bags. then I can just grab them quickly when the new fridge is delivered. I can't just pull the old fridge out b/c it would block an egress, so it will stay plugged in til it is removed.

Picked up a broccoli crown at the farm market Friday, steamed it yesterday and added some cheese. Cooked up some potatoes (mashed) that were nearing end of life, and added a large BSCB and finished off a bottle of Stubb's BBQ sauce. Ended up with enough for 4 meals, when I added some chicken stir fry that I had leftover in the freezer. I think I mentioned here before that I eat my largest meal as lunch and rarely do dinner, outside of something light. Need to compile a list of freezer friendly meals so I can be better prepped.
BSCB = $2 Potatoes = $3 Broccoli = $1.69 Cheese = $1 1/4 bottle bbq sauce = $0.75
= $8.44 = $2.11/serving

Thursday's pork shoulder was 8 pounds, so I rearranged a few meals. Last night we had pork stuffed portobellos cooked in the air fryer. I'll make the walnut shrimp after next month's grocery pickup. I froze some of the pork to have for taco Tuesday next week, DH and I will have some for lunches this week, and I gave a neighbor a large quantity. And tonight, instead of cobb salad, we're having spaghetti squash, baby spinach and canned chicken with the homemade walnut pesto I've been wanting to make for a while. The reason is I want to get to the baby spinach before it turns, and there's just a few more cups of walnuts to use up. This month's grocery bill is less than half of May's. I organized the back pantry shelves, tossed two expired things, oops, and brought a few things into current rotation. ETA: Last night's marinade used about 1/4 cup of the apple cider vinegar. Am actually making a dent in it, LOL.

today was expensive. I started restocking my new fridge/freezer. 😳🤢 almost $200 at Walmart, for mostly bulk stuff. and I need to go actually shop again tomorrow afternoon. oy.
tonight was focused on setting up the pups, with chopped produce and cooked rice. for myself, I cooked and chopped 2 BSCB, nuked a bag of frozen broccoli florets, and tossed it with half a box of rigatoni and half a jar of Alfredo sauce I won't buy again. I'll add more veggies to leftovers, and will add cheese to mess with the sauce flavor as well. it's sweet for some reason.

DH bought dinner tonight. I flew back from a long weekend this morning. My early morning flight was delayed.
We went to a local Mexican place. Two chicken bowls plus strawberry margaritas were $80 with tip. The prices seem to have gone up a few dollars.
I'm too tired to care today. We've cut back on eating out.

I'm glad I didn't fully stock back up, bc the new fridge is going back. I woke up this morning to a full layer of frost in the freezer and the separate thermometer showing -23C. that's not even close to okay. so, a replacement has been ordered, and I'm just waiting on the new delivery date.
so, dinner tonight is a frozen pizza. I picked one up yesterday as part of the basic restock. the fridge works fine, but I'll just keep working on "just in time" mode til the replacement lands.

pups are crashing with M tonight, I'm dropping them off after I get them from daycare in a little bit. dinner tonight is going to be takeout Chinese from the place I love. there will definitely be pork fried rice w/bean sprouts, but I'm not sure what else yet. will update later.
ETA: it was too nuts to special order something that's standard with shrimp included, so I went with known favorites. PFR, garlic bok choy, teriyaki skewers. and a cocktail while I wait. I'll get to catch the start of the Sox game while I'm here, too. yay!

I've been working from those Chinese leftovers, and last night was another easy dinner. I swiped some white rice from what I cooked for the pups, and topped it with a reheated pile of bok choy and a teriyaki skewer.
tonight, I'm going to fire up the Blackstone for pork chops and grilled peaches. will probably roast some Brussels in the oven to help clear out the fridge. the replacement arrives tomorrow.
thin pork chops were $4, so $2 for tonight. Brussels were $5 (I think?) and I'll cook half the bag.
ETA: nevermind. I had the last of the Chinese leftovers tonight. pork chops and peaches will be later this week, if the peaches are still good.

Last night: Grilled andouille sausage with sauteed yellow squash, zucchini and baby spinach. Air fried breaded shrimp and a leftover sauce packet from the freezer were on the side. Tonight: Pulled pork tacos using frozen leftovers with romaine leaves as shells. And, hopefully, finally, the rest of the queso will be used. A bed of zoodles for both of us, riced cauliflower for me, regular rice for DH. Wed: Air fried pork chops in an apple cider vinegar and BBQ sauce with leftover yellow squash, zucchini, and baby spinach Thurs: Leftovers Fri: Take out from? Sat and Sun: Not sure yet.

Making taco salads here. The tomatoes are from the back yard, so they'll be very fresh. For tomorrow I have a pork tenderloin but haven't decided what to do with it yet.

tonight I handed off the pups for a couple nights, and we met mooch at the sports bar patio. chicken tenders for them, he got a toasted Italian sub w/fries, and I got a pizza with onion/pepper/mushroom/prosciutto. I brought 3/4 of the pizza home, to pick from the next few days. tab was $80, with a pair of drinks each. spoiled pups, they got all of the love from the other parties on the patio. I could have done without the old guy that tossed his wing bones in Punk's general direction. mooch went in almost to his elbow to dig them back out of her throat. but, crisis averted, and everyone's still alive....including the old guy. tomorrow, I'm going to Fenway for a Sox game. I may head in early to meet my friend N. if I can, we'll do an early dinner somewhere snazzy for the same price as ballpark concessions. lol...

For leftovers night, in the Traeger I baked the last Cauliflower pizza crust (I love those things) topped with a ranch drizzle, a tiny bit of garlic salt, the rest of the shredded and mini ball mozzarella, half of a zucchini cut into half-moons, and the remaining baby spinach and pepperoni. It was SO good! It smelled fantastic and the crust was crispy. Have a delicious weekend, everyone.

the past couple days have been super low-key. last night was a box of Kraft Dinner that mostly got pitched, and tonight was a can of soup. tomorrow, I've got a pork cut for the crockpot for this recipe - link I don't have much else planned, the new replacement fridge is supposed to arrive Tuesday. if anything goes sideways, y'all might read about MA Woman... because I'm over all of this.

last night and Saturday were the same thing - linguine smothered in pizza cheese and red sauce. I looked at my options on Saturday and decided I hated all of it, so I made a tiny batch of red sauce with a single can of crushed tomatoes. there's still enough for another linguine bowl, but I'll likely just pitch it tomorrow when I pack up the remaining fridge contents. I do have a delivery window of 10-2 tomorrow, so there's hope I actually get this thing this time.
dinner tonight is the carnitas casserole, I cooked the pulled pork yesterday and just need to assemble tonight. I may roast some corn and jalapeno, if the corn is still good. this will be 6 servings I can pick from all week, and easily portable during the fridge swapout. I did pretty well this time, there isn't a whole lot left to worry about.

It's been a challenge trying to meal plan while being gone so much. I've been gone every weekend since Father's Day and was gone all of last week as well. The fridge needs restocked but that's a struggle because of my stupid job this week.
Tonight we had the first grilled hot dogs and corn on the cob for the summer. Total costs $7. I picked up a package of 24 hot dogs at BJ's and broke them out into sets of 6 and froze 3 for later this summer. It worked out to $2.12 per 6 for my future costing reference.
I have a plan for the rest of the week but it is highly dependent on me finding 30 minutes to get to the grocery store tomorrow. I have gobs of proteins frozen but no fresh stuff in the fridge.

I also need a solid restock. the good news is that the replacement new fridge seems to be a solid unit. no crazy frost in the freezer, and temps holding where they should. I picked up a few things this morning on a Walmart run, but it's still a sparse selection.
tonight's agenda includes cooking off two family packs of ground beef with kale for the pups. most of it's going in the freezer. I've already sauteed off a package of thin-sliced BSCB to make myself a baguette sandwich. I think dinner for me might be a chicken Caesar salad.
