Biscuits and gravy tonight, DD was thrilled, hubs was happy.
But I look at all the things you folks eat and wish my hubs would eat a variety like that. DD and I eat anything and everything.
DD and I like a simple recipe of frozen veggies in about a quarter pound of hamburger with soy sauce on it. I top with the canned noodles. He doesn't like fish, chicken, lamb, not crazy about pork.

Our neighbor cancelled their BBQ yesterday due to illness, so DH grilled up some hamburger patties. I had mine on an iceberg bed topped with broccoli slaw, queso, a drizzle each of mayo and mustard, and dill pickle spears on the side. A side salad consisted of baby spinach, half boiled egg, kalamata olives, and blue cheese dressing. Everything was SO good.
~Tonight: Nachos for Taco Tuesday consisting of parmesan and pork rind breaded cod on top of homemade low carb tortilla chips. I'll top them with broccoli slaw and queso. (Trying to use up the two latter items.)
~Wed: Snack at the office before an appointment.
~Thurs: Spaghetti squash, sauteed baby spinach and canned chicken mixed with homemade walnut pesto. Walnuts are another ingredient I am trying to use up.
~Fri: Take out from?
~Sat: The low carb Navajo tacos I haven't gotten to yet. They'll consist of locally raised ground beef, iceberg, avocado, and queso.
~Sun: Grilled 50/50 burgers (cheddar and blue cheese), side veggies. Perhaps air fried zucchini fries for the latter?

I bought a new fridge over the weekend, expected delivery is 6/27. so for the next month, I'll be doing what I can to work through the freezer as much as possible to have less to move over on delivery day. a quick inventory showed a package of Pepperidge Farm cheesy garlic bread (why...?? lol...) a couple containers of Sunday sauce, some various ravioli/tortellini, some uncooked meats, and containers of cooked proteins for the pups. I've got a month, it's fine. after doing a bunch of prep yesterday and the dishes that came with that, I don't want to make a mess tonight. I'll either do quesadillas or French bread pizzas with that garlic bread. whatever I do, it will include some leftover marinated chicken breast. pizza will use up some veggies, and will have leftovers.

Went to Fresh Thyme, they had strawberries for $.99 a pound! I bought 8 pounds. Just started cleaning and slicing them and not a rotten one yet. They are pretty ripe, guess that's why they are reduced. Told hubs if I thought I could, would go back tomorrow and get about 12 more boxes, apparently was no limit on them. Think they just wanted to sell them before they went bad. That would be enough for the freezer. Going to clean and cut the rest tonight. I need to get some containers from downstairs and wash them, then freeze the berries.
Gas here at many places is $4.89 a gallon, I got it at Sam's for $4.35. When I went in the sign said $4.45, I was telling the one that checks your cart and she said oh no, it's $4.45. I went to the car and looked at the receipt yep $4.35, so guess I got a bargain. Probably a new delivery that didn't get the price raised on it.
Bought 3 pounds of bacon, almost $17, but I've seen a pound for almost $10.
It didn't look like they got much but the folks in front of me spent almost $350, ouch, mine was only $155.
Got my 8 pounds of berries cleaned and I'm washing them, ready to wash my containers. Not much work to them.

it's pretty cold and gross here for June 1st, so I went with comfort food. I sautéed fresh spinach in EVOO, with garlic and crushed red. set that aside and made a small batch of mushroom cream sauce in the same skillet. the sauce got poured over some pappardelle and a piece of black peppercorn chicken. there's more sauce to do something else with later, and a few pieces of chicken still to work through.
mushrooms and spinach were approaching 'use or pitch' and everything else is basically pantry staple.

Korean braised short ribs. Pain to prepare but short ribs are a favorite. Served with white rice and the cucumber kimchi. My belly is full.

I'm having a crap-crap day. Luckily, I left a note for my (non-working) kids that they needed to figure out dinner, cook it and serve me (done before I knew my day would be shit). I came home to my son making pasta with hot sausage, mustard, cream and peas (with basil). Such a kick-ass recipe. And I didn't have to think, shop or cook. 😀

Must have been something in the air yesterday, because I didn't feel like cooking either. Plus, it's been in the mid-80's this week. Blegh. So, I made a deconstructed caprese salad consisting of shrimp, half an avocado, diced cucumber, halved cherry tomatoes, mini mozzarella balls, a drizzle of strawberry balsamic, and a few leftover homemade tortilla chips. Refreshing and delicious. Topped it off with a shot and vodka cocktail.

more freezer diving this weekend. tonight I baked off a spicy chicken patty and chopped it over a green salad. I also used up some Mexican blend shredded cheese, some Walmart pico de gallo, and the other half of an open 100cal tub of Wholly Guacamole. Friday night, I used up the Sunday sauce, eggplant, and chicken cutlet I pulled from the freezer the day before. I made a big tray of what a local restaurant calls "mess" - the day before's leftover pastas of all shapes (including busted lasagna pieces), eggplant, ricotta and sauce all mixed up and baked. when I would order this, I'd get the version that added chicken cutlet to it, so I've been totally at home with this. I've still got a bunch left, that I'll be picking from for a few more days. sorta why I wanted a salad tonight.

I ended up making the grilled 50/50 blue cheese infused burgers last night and served mine on top of a grilled portobello and bed of iceberg, topped with cheddar cheese, and mayo drizzle. Asparagus sauteed in olive oil with diced bacon and an extra bacon slice was on the side. ~Tonight: Spaghetti squash, sauteed baby spinach and canned chicken with homemade walnut pesto Alfredo and a side of air fried bacon wrapped little smokies ~Wed: Cajun smoked sausage and vegetable skillet with air fried artichokes ~Thurs: Crispy cod tacos topped with broccoli slaw and a side of air fried zucchini fries ~Fri: Take out from? I've been craving carne asada so..... ~Sat: ? ~Sun: Grill smoke something ETA: Just remembered I don't have any fresh basil on hand, and I'm not stopping at WM for just that one ingredient.

I repeated that taco salad the next night, and last night was leftover "mess". I had a small bowl of that again for lunch today, too. I might just pitch the rest, I'm tired of it.
dinner tonight will probably be a burger cooked in a fry pan. could be turkey, could be spicy black bean. I've got pico, guac, and pepper jack cheese for either option.
ETA: I found deli turkey in the fridge that forgot I had. I ended up throwing some in the fry pan and melting a slice of cheese. still dresses as described. the burgers are frozen, I'll get to them at some point.

Tacos tonight. We had tortillas, chips or hard shells in a make your own taco bar.
DH and I made tacos for us and 3 kids. We sent our friends out by themselves for a date night and kept their 2 kids and our nephew at the beach house.
The hamburger needed cooked up and I was not impressed with last night's dinner out. Not worth the money.

Thursday night grilled chicken, grilled squash and zucchini and salad.
Our nephew had tacos again.
I grilled the squash and zucchini in a foil packet. That is a keeper that will be repeated at home.
We'll go out for ice cream later.

I had some chicken tenders that needed to be cooked, from what I kept out of the package I bought for the pups. I also wasn't up for any more red sauce tonight, I'm definitely pitching what's left of what I thawed last weekend. but I'm also still freezer diving.... so pierogis it was tonight. I don't like sour cream, at all. when I make pierogis, I saute onion, jalapeno, and garlic in butter and then toss in the boiled pierogis to brown up.

Chicken casserole that ended up tasting a lot like turkey divine except with artichokes and cauliflower. It called for havarti cheese. I couldn't taste the cheese. So waste of money there. I also heated up a bag of frozen rice. I wondered why I froze a bag of rice. I ate just a dab. I've been trying to reduce carbs. I'm doing much better with calorie and carb reduction but still have a way to go. I totally cut out cool whip and chocolate animal crackers and cool whip and fruit cup. I should be a mere slip of myself with those reductions but NO.

Ahem. I forgot to take the cod out of the freezer Wednesday for last night's tacos, so we ended up eating leftovers with the freshly air fried zucchini fries. Dredged in egg then breaded with parmesan and pork rinds, they are crispy and delicious every time I make them. We'll have cod tacos tomorrow.

I have a package of thin sliced pork chops to use up. I think tonight I'll cook two of them for pork chop Milanese. I can roast some tiny potatoes as a side
I'll figure out something else tomorrow for the other two. suggestions welcome. these are bone-in, but I can take them off the bone as well.
ETA: when I was mixing dinner for the pups, I noticed the sell by date on the chops was the 9th. 🤦♀️. they look okay, will have to see if they still smell okay when I open the package. if they do, I'll cook off all of it tonight as cutlets. no suggestions needed.

last night, I cooked off an entire bag of spinach ravioli I pulled from the freezer. I'd pulled a large Ziploc bag of individually frozen portions of pesto to thaw earlier. I'll be picking from the leftovers for a few days (like dinner tonight). there's also still more pesto to use this week, I'm thinking breakfast or deli sandwich spreads. I'm okay tossing what doesn't get used, it's been in there awhile. I had originally frozen the pesto in my XL ice cube trays. tonight, after striking out on finding BSCB at the grocery store for the 2nd day in a row, I pulled a container of black bean pulled chicken to thaw. I'll use this for breakfast/lunch options of quesadillas/tacos/omelets until I get sick of it. it's a small container. tomorrow, I need to make a BJs run over my lunch hour. we're out of water jugs. while I'm there, I'll grab four rotisserie chickens to shred. I'd hoped to to IP some BSCB for the pups since it was on solid sale, but not today. I can use the rotisserie birds for that, and pack a few "snack bags" for myself to use in smaller portions for whatever. new fridge delivery is 6/27. I'm looking forward to getting back to normal operations. and my own stocks. ETA: I've got a pair of HUGE zucchini, that I picked up specifically to make this zucchini pie so that will happen in the next day or so. probably Wednesday, when I have the windows closed/AC on for tree work outside. I so hate running the oven in the summer.

it really does! I'm going to swap in broiled asparagus for the corn, because corn just seems weird to me in that. lol... anyway, I'm going to make that tonight, it's cooled off some. I'll report back on how it turns out. dinner tonight is going to be baked cod with some zucchini pie. I had some errands this morning that brought me Cape side, so I hit up the fish market. pups will get treated tomorrow morning, but I think I'm coating my portion with seasoned bread crumbs to go with the flavors of the zucchini pie.

Tuesday night DH picked homemade hamburger helper. I had thawed hamburger so we were using that for something. He loves it. I figure at least making it from scratch I know what's in it.
I also made homemade strawberry shortcake. I bought local strawberries to do cheesecake stuffed strawberries but they weren't big enough for that.

I got 5 chicken and thighs for a little over $5. We had those for dinner. I didn't have any stuffing mix or I would have sided that. Mashed potatoes and gravy. I like the stir fry mix veges as a side without any sauce.

Stopped and picked up a package of Romaine, and some deli chicken. Add in some parm, and I will be eating caesar salads today and tomorrow. I will likely get 4 meals out of it. (No croutons, as I am not really a fan, and do not need the carbs.)
deli prepared chicken = $7 romaine hearts = $3 parmesan cheese = $3
= $13/4 $3.25/serving
Need to do this more often. Also need to start eating out the freezers so that they can be cleaned and reorganized. Need to look into some sort of freezer bins.

so the zucchini pie will definitely be joining the rotation. the asparagus was a solid substitute for the corn, too. I don't think it needs 4 eggs, though. it was more like a crustless quiche or frittata bake than I think I'd like. next time, I'll use 3 and see if it can even drop to 2. but the flavors were excellent.
tonight, I'll do something with the black bean pulled chicken. what, exactly, idk yet.
ETA: basic tacos was the winner. I found way too many tortillas in the cabinet when I looked for some to tear up for the starch in pup bowls tonight. works for me!
