Tonight was just a frozen DiGorno pizza and a salad. Since those pizzas are small and I'm not crazy about them, I had a bowl of Campbell's Beef Barley soup, and a small sliver of pizza. We had 2 pieces left that DD will eat tomorrow.
I have ground beef thawing and some ground pork, think I will make a meatloaf tomorrow.

Changed my mind again. DD and I went to town to the bank and post office, we stopped for dinner. I had a chef salad; she had a 7-inch personal pizza. And I bought hubs one of his favorites, tortellini's and a salad. The meat loaf will be for tomorrow night.

Thursday night we ended up going out to a local Mexican place. A friend has been having a tough few weeks so it was good to get her out.
Friday night I made a mushroom parmesan sauce and put that over the chicken and mashed potatoes. I also did steamed broccoli. This used up the last of the mushrooms and heavy cream in the fridge. And 2 sprouting potatoes.

We had carryout pizza tonight...and it was still hot when DH got home. We live rural so it's normally just kind of luke warm by the time he gets back here with it...but not tonight! YUMMY!

Chuck roast is in the crockpot for French dip sandwiches. First time recipe, hope it comes out well.
$30 for 3.5 lb roast, a lot will likely end up in the freezer for future quick meals $2 condensed soups $4 provolone cheese $2.49 discounted garlic rolls (15), many are going on the freezer for future meals $.69 onion
Meat prices around here are getting ridiculous.

Meat prices are definitely up. $105 of my Saturday total at Sam's Club was for 2 big packs of chicken breasts, bacon, 4 steaks and a big pack of beef cubes for stews, and the like. There are definitely fewer marked down packages. I am generally freezing most of the meat I buy there so I am okay with the short date.
Saturday night I made spaghetti in the instant pot and had garlic bread. It takes more prep but it's full of vegetables. I used up the last 2 zucchini, the last of the bag of carrots and the last bell pepper.
Sunday night is dinner out. We have to go to another town to drop my car off to get a new windshield Monday. We'll pick one of the restaurants we don't have.

tomorrow is trash pickup, I need to purge old leftovers I didn't finish. I also know I have some veggies that are going to waste (I hate that). but, there is most of an eggplant in the drawer. I'm going to bread and fry what's left. maybe some chicken as well. lots of options for this week - I have three scala rolls from the bakery, homemade pesto, salad fixings, and I pulled a small container of sauce from the freezer to thaw. last week was all Mexican food, this week appears to be Italian. ETA: scratch that. this OP will be tomorrow night, I can pick up fresh BSCB on a big shop grocery run in the morning. I had more stuff that needed using or pitching than expected. tonight will be Instant Pot risotto. I've prepped pancetta, mushrooms, spinach, and I would have had asparagus if I didn't forget it was in the broiler while I was chopping everything else.

DH and I are both grateful we went in on a half a cow and pig with friends last year. ~Tonight: Speaking of pork, there are country style ribs in the slow cooker, which I'll serve with side salads and leftover artichoke dip and sourdough. Cost approximately $6 for 3 servings. ~Tues: Beef tacos in cheddar shells with sauteed zucchini, yellow squash and mushrooms with leftover rice. $8 for 4 servings. ~Wed: The beer can chicken we didn't get to Sunday, because I forgot to pull it out of the freezer, and a veggie. ~Thurs: Cod (I bought the 2 LB family pack which was $14.03 mid-January) on top of riced cauliflower with breaded shrimp on the side. $7.50 ~Fri: Take out from? ~Sat: Air fryer chicken strips, and side salads. $4.50 ~Sun: Grilled steak smothered in blue cheese crumbles, veggie. $5.50 Have a fantastic week, everyone!

For Ash Wednesday I cooked cheese tortellini. I tossed it in a parmesan cream sauce with peas and sauteed mushrooms. I also had garlic bread on the side. Estimated costs $6.50.

Need to blanch some smoked salmon so it agrees with me, but too tired for that tonight. Discovered I had a pouch of tuna in olive oil, so I made tuna salad w/ some pickle juice and dried parsley in addition to the usual stuff. Going to wash my skillet so I can make bean sprouts with some broccoli for veggies. Went light on the veggies at lunch to be ready for my interview.
And that will be dinner. Already had my sweets so will try to be good or not too bad.

tonight I assembled a small pan of eggplant parmigiana (4-5 portions) and cooked some pappardelle pasta. there's a little bit of red sauce and some pesto left for the rest of the eggplant and chicken I fried last night. and then I can also dice some chicken over salads.

I'm craving salad tonight. I'll reheat a couple pieces* of chicken under the broiler and chop a big salad.
*when I fry cutlets, I slice the huge BSCB into 5 pieces. across the short way, with the triangle end as 2 and the round top as 3.
ETA: nope. I was missing a bunch of salad veggies, and also had to cook ground beef/pork and kale for the pups...after putting out work fires til 6 or so. 👎 I reheated a piece of chicken and some eggplant,and made a sandwich on a scala roll. I'm using the fine china tonight, too. 🤣

I'll have to check lettuce again. The quality was really poor in January. I stopped buying it. It didn't look great at Sam's club last Saturday. I'll have to check the grocery stores.
Thursday night I roasted a bunch of vegetables and chicken sausage. I had mini potatoes, carrots, green beans and broccoli.
I also did a small plate of appetizers. I made mini potato skins using tots. That used up 2 slices of leftover bacon.
Friday night will be dinner out.

I decided to treat myself after a stupidly difficult evening. I reheated a piece of chicken cutlet under the (LO) broiler and made chicken Milanese with some angel hair cacio e pepe. it was fantastic, and I need to do this again.

Pork shoulder was on sale for .97 per pound, so I got one and put it on the smoker. Dinner will be pulled pork sandwiches, barbecue beans, and deviled eggs.

Hubs wanted cheese burgers and went to town to get buns, so hamburgers it is with fries. I doubt I want much just ate some Ramen noodle soup.
May add a salad to dinner we always like that.

Made tuna patties for lunch. Should blanch the smoked salmon to leach out some of the salt tonight. Not sure if I want to eat it tonight, but it needs blanching and assembling. Plan to pair it with penne pasta and some sort of sauce.

I've got boneless chicken thighs in the fridge, dated tomorrow. there's four in the package. I think tonight, I'll use two in a pasta toss with broccolini I forgot I had. we'll call that a nod to orechiette w/sausage and rapini.
I can do something else with the other two tomorrow. suggestions welcome.
nevermind. I decided I wanted mashed potatoes. I still roasted broccolini, but I sautéed the whole package of chicken thighs and made a mushroom pan gravy. there's a bunch of leftovers, I think the pups might get some mashed potatoes with their breakfast.

I'll also serve up some game food including air fried mozzarella sticks and breaded shrimp. $10-ish ~Taco Tuesday: Cod (2-pound family pack) taco salads with leftover riced cauliflower. $3.50 ~Wednesday: Breakfast for supper including pancakes, sausage links and eggs. I buy eggs in the 60-count box, the sausage is a 50-count bag, and I make my own pancake mix. We have 2 large and one tiny bottle of syrup to use up. The tiny one was purchased at the World Market and is from Canada. $3.00 ~Thursday: Anniversary dinner. Steak and fried okra. $? ~Friday: Take out from? $? ~Saturday: Not sure yet ~Sunday: Grill/smoke something

I think I'm going to be bad and have my $2 can of reduced sodium corned beef hash w/ added canned potatoes, onions, and green beans.
Wish I had some decadent chocolate dessert or something. Body does not need it, but my mind is craving something like Ben & Jerry's Nondairy Cherry Garcia.

Grilling out some burgers tonight. I buy the ground beef on sale, make into patties, and vacuum seal and freeze so no idea, but probably about $3 all in for two people.

Monday night we picked up subs for dinner and took them to DH's parents. They emptied their fridge ahead of vacation. His mom paid us back it was $45.
Tuesday night instant pot risotto. I added shredded chicken. Maybe $5? This is one those things that's super hard for me to cost out because it's all things I keep on hand and replace as needed.

I went easy as I'm tired. Made a turkey sandwich with rolls I bought on discount. The roll was 41.5 cents plus whatever the turkey was. Did not even slice an onion, although having to have romaine lettuce made it easy to top my sandwich. $1?
