I'm stuck in a rut, need to shake things up a little. I ended up freezing that single BSCB the other night and mixing up a quick bruschetta to toss with tortellini. while I was out yesterday, I picked up a filet of salmon, some sliced turkey and deli tuna salad.
last night was salmon tacos with a side salad. I flaked a small piece of chili seasoned baked salmon, with all of the taco fixins.
tonight I think will be a sandwich with a side salad. maybe tomorrow, too.

um. save this link - food court bourbon chicken copycatsomeone shared this in a home cook group a few weeks back, and I saved it. I finally found a package of B/S chicken thighs yesterday that wasn't 15lbs, so I'm making it tonight. I've got about 1.5lbs of chicken, white rice, and steamed broccoli. I've sampled a couple of the tiny pieces while I wait for the sauce to thicken, but wow, is this spot on! I worked in a mall food court in HS, but a pizza place. I ate bourbon chicken over white rice with steamed veggies, pretty much every long shift. and, if I could trade slices that were a little old for selling in order to get my chicken fix for free, I did. this is going in the regular rotation for sure.

Thursday night I had leftovers.
Friday night instant pot risotto.
Maybe I'll get myself take out tomorrow. I'm tired of leftovers.

I went simple, but still want some rice or noodles. I really need to replace my skillet. Using lots of water to keep things like cabbage, etc. from sticking to the bottom while heating everything through. This time used up some frozen carrot/broccoli clumps along with cabbage, onion with the protein.

I made a pot of autumn soup...it hit the spot since our temps are heading down. Tomorrow I'm going to make a big pot of chili...more for the freezer.

I realize funds are low right now, but if you can swing it, Amazon has a 3 piece non stick skillet set (8", 10" and 12") for $27.57. It's called "Amazon Basics" and are terrific. I expected them to be so-so considering the price, but ordered them anyway and am thoroughly impressed. Best non stick skillets I've ever owned. Just a thought either for now or later on when finances get better

Tonight was home made keto pizza. I do the fat head dough version. Mozzarella Cheese - $4 cream cheese - $0.75 Almond flower - $1 Egg - $0.25 sausage - $1 Pepperoni - $1 onion - $0.25 Red Pepper - $0.50 sauce - $0.50 Total - $9.25 3 servings- $3.12/serving

Tonight, I fixed a salad, filet mignon, sauteed bell peppers, red and yellow, with onion. Then baked potatoes with toppings of green onions, shredded cheese, and sour creme. Was pretty good. We had a big piece of steak left, I will thin slice it and add to something tomorrow, sure won't waste that.
DD is at 130 and she didn't eat much, I hope they reduce her meds this week when we go in. I am back at 162 from 161, have to watch it, actually need to be eating a bit more. Need to bake some salmon with steamed veggies with some butter on them, yum. I will put sushi ginger on the salmon.

I was craving some comfort food tonight, after a couple days of a wonky tummy. I swiped some canned pumpkin from the pup stash, and made a half pound of pumpkin mac&cheese that I topped with roasted Brussels. I definitely need to grab a box of rotini to keep in my pantry, because that shape carries so much more tasty sauce than the penne I had in the cabinet. leftovers will last a few quick lunches this week.

I've been picking at small bites of leftovers all day. "dinner" tonight will be more of the same, if I get hungry later.
tomorrow I am doing a Walmart grocery run. I've got either pork chops or turkey breast cutlets on the list, based on what's actually available. 🙄 so, tomorrow will either be turkey piccata or a pork schnitzel with mushroom gravy.

I don't know what I'll do for dinner. Lunch was already cooked turkey sausage, fresh seedless cucumber and ? The cuke is oversize from the farmer's market for a $1. Local grocery store has them on sale 2 for $5.
Hmmm ... IDK.
I've already snacked, but I need veggies and hydration.

Tacos on lettuce leaves Hamburger - $3.60 cheddar cheese - $1 Sour Cream - $1 Lettuce - $1 Spices - $1 Total - $7.6, 4 servings, $1.90/serving In case anyone is wondering, I figure a serving is as much as one person eats for one meal. My servings are not skimpy.

It was a rerun of autumn soup tonight...and will be a rerun of chili tomorrow night..then the rest goes into the freezer. I found some really nice looking t-bones last week...may have to break down & do one of those on Wed. with baked tater & caesar salads. We had hot dogs & chips last night...those were really good with mustard & chopped onion! I need to make some beef stew...I really like 1 pot meals during the cooler months.

a friend's food truck had a pop-up tonight in the development up the street. a brick oven pizza food truck. 🤤 game on, yes please! I picked a spinach and mushroom on a white pizza with garlic, oil, and ricotta.

Maybe it will go on sale soon, and be under 5.99/lb or higher. I went simple tonight because of last night's indigestion. One link of beef sausage with bean sprouts and sesame oil. Under $2 for the meal.

I need to get a few more things out of the freezer so I am thinking of toasted pita with hummus and veggies for a lite dinner tonight.
I got some brussel sprouts and intend to roast some up with carrots and potato and have a side of something protein based. Going to pull some ground meat from the freezer and cook it for a base in tacos and spaghetti sauce. Add some mushrooms and onion to bulk those up. I bought a large bag of stir fry veggies and after starting to use it realized that they added squash to bulk it up. So I have been picking the squash out before it thaws. No way I want to deal with a allergic reaction right now. But tonight I am really thinking about getting take out. I probably won't I'll hold off but it's been in the back of my mind for the last week+.

takeout is a nice break once in awhile, snapdragon. I just picked up a bowl of Chinese chicken noodle soup on my way back from walking the pups just now. wasn't the greatest, but it saved me from cooking! ($7) this isn't as much of a problem with a dishwasher. I'm still waiting on my new one to come in. tonight, I'm not sure for myself. maybe a big green salad with a chopped spicy chicken patty. I had a small plate of leftover turkey piccata and capellini with my coffee this morning, and I also need to cook rice for the pups and make croutons this afternoon before the baguette on my counter gets too stale. I don't want noodles for three meals in one day, and the only other leftovers option is pumpkin mac 'n cheese. clearly I need to plan better.

If I can figure out the cost I do try. Anything with ground beef is hard for me. I am still working through that from when my family bought a cow and split it.
I think at one point maybe I was using $3 per package and I allocated all the costs to the ground beef. There are still a few roasts and steaks in the freezer from that. I don't remember anymore what my share was that I paid my dad back for. And at one point we got additional packages of ground beef due to a mix up, apparently we paid for a heavier cow and got the meat from a lighter one?
Tonight's instant pot lasagna is a great example of one that's hard for me to cost out. It uses a certain pasta shape that disappeared from local shelves back in 2020. In 2021, I gave up and ordered 6 boxes from Target. I don't remember what the pasta itself costs.

I stopped and ordered us a pizza tonight, mushroom cheese, bell pepper, onion, and was sooooo good. Also, a small chef salad. I ate it and 2 pieces of pizza. I will package the rest and DD can have some for-lunch tomorrow.

I'm not sure what dinner will be. I signed my self-up for an online class to learn Zoom which starts in less than a half hour. I also have virtual choir, but I might skip, or show up for only part of it. I'd like to make Tuna patties again. I splurged on scallions, $1.30 for a pack. I think my borderline egg is dying, so not sure how well this will work. Tuna patties - Two cans of chunk tuna from food pantries (some are borderline on use date) 1 paid for egg (.20 or .10) scallions ( .25 to .40?) paid for lemon or lime juice paid for panko bread crumbs. ground pepper or if I run out of time or get tired Already cooked turkey sausage with ? Cooked sausage .60 to .75 ($3.49 for 6 perhaps) might do stir fried bean sprouts (.40) and cabbage ( .25?) with whatever protein I've got. Need to use up the fresh bean sprouts. Hate when they get limp. So tired.

I made way too many mashed potatoes the other night. We still have a ton left.
I made copycat KFC bowls tonight. I had all the stuff on hand and it was quick and easy. Not the healthiest for sure but I am over cooking.
I made mine with mashed potatoes, chicken bites, corn, gravy and a little sprinkle of Colby jack cheese.

today I ended up stopping at my friend M's house with the pups for a few hours. I decided to detour on my way home to pickup takeout at thr Chinese place I love in that area. I ordered in person and ordered an adult beverage while I waited. I paid $50 including a 25% tip, for my drink, chicken teriyaki, baby bok choy in garlic sauce, and a huge pork fried rice w/bean sprouts.
tonight I had bok choy and chicken teriyaki over some leftover white rice. the PFR will be lunch all week on its own.
