Might now sound good to some but we thought it was good.
We had chopped greens, mustard and turnips mixed, boiled shrimp with cocktail sauce, and french fries. Hubs had the rest of the cake and I had a mango.

All of their links redirect to the sign up page, but you can google "Hello Fresh Recipes" and search from there without a login. I do this a lot. Ingredients serving amount 2 Zucchini 1 unit Button Mushrooms 4 ounce Parsley ¼ ounce Shallot 1 unit Flour ½ cup (ContainsWheat) Chicken Breasts 12 ounce Basmati Rice 1 pack Chicken Stock Concentrate 1 unit Sour Cream 2 tablespoon Instructions Prep 1 Wash and dry all produce. Bring ¾ cup water to a boil in a small pot. Halve zucchini lengthwise, then slice into thin half-moons. Trim, then thinly slice mushrooms. Finely chop parsley. Halve, peel, and mince shallot. Set aside 2 TBSP flour for sauce, then place the rest in a shallow dish. Cook Rice and Zucchini 2 Once water is boiling, add rice to pot. Cover, reduce to a simmer, and cook until tender, 15-20 minutes. Heat a drizzle of oil in a large pan over high heat. Add zucchini and cook, tossing, until nicely browned, 7-10 minutes. Season with salt and pepper. Remove pan from heat. Butterfly Chicken 3 With your hand on one chicken breast, cut ¾ of the way through center, parallel to cutting board, stopping before you slice through. Open it up, cover with plastic wrap, and pound with a heavy pan or mallet until ½ inch thick. Repeat with remaining chicken breast. Season both with salt and pepper, then toss in flour in dish to coat, shaking off excess. Cook Chicken and Rice 4 Heat a drizzle of oil in another large pan over medium-high heat. Add chicken and cook until browned and no longer pink in center, 2-3 minutes per side. Remove from pan and set aside to rest. (TIP: Cover chicken with foil to keep warm.) ) Meanwhile, cook rice in microwave according to package instructions. Start Sauce 5 Melt 1 TBSP butter in pan used to cook chicken over medium-high heat. Add mushrooms and cook, tossing, until tender, 4-5 minutes. Add shallot and another 1 TBSP butter and cook, tossing, until butter melts, 1-2 minutes. Add reserved 2 TBSP flour and stir for 1 minute. Whisk in stock concentrate and ½ cup water and let sauce thicken, 1-2 minutes more. Finish Sauce and Serve 6 Reduce heat under pan to low. Stir in sour cream and half the parsley. Season with salt and pepper. If zucchini has cooled, quickly reheat in pan. Divide rice, zucchini, and chicken between plates. Drizzle sauce over everything, garnish with remaining parsley, and serve.

I have 5lbs of BSCB that needs to go into the IP for the pups, I am going to swipe one piece for myself. I IP'd 5lbs yesterday, so I'll be able to freeze two big containers of shredded meat and keep one for current protein.
for me, though? I'm torn between making chicken piccata over mashed potatoes (as long as the potatoes in my cabinet are still good....) or winging something with the small bok choy and jalapenos I have in the fridge. I could serve over rice noodles.
votes? decide for me, please. I'm so tired today, I'm just running on autopilot.

Last night was the first for a crock pot full of stew. I think there should be another couple of nights before it's all gone. I'm still attempting to get my pantry and freezer used up, so I'm making a good start.

Tuesday night we went out with DH's parents and they paid. We would have declined if we had remembered it was their 53rd wedding anniversary. His dad invited us since DH's birthday is this later week and we will be in Florida then.
Anyway my filet was excellent.

I picked a free pkg up and I don't think I'm talented enough to cook them. Never ate them in a restaurant. Would deer or squirrels eat them?

I'm debating. my friend's husband's food truck is doing a pop-up in the development up the street. that's even closer than the nearest takeout place! he makes amazing pizza, but I don't love the few options for this week's events. a basic Margherita is fine, but I like toppings on my pizza. today's options besides Margherita are buffalo or BBQ chicken, pepperoni or Hawaiian - none of which are my speed. decisions, decisions. ETA - I went with leftovers from last night. those are free lol... I need to figure out how to add a pic via mobile app. Tapatalk wasn't cooperating earlier.

I'm hoping I'm up to making rice and putting the cooked pork with it and some veggies. Hope to get some frozen veggies tomorrow. Would like some fresh, but not sure if my body is up to it. Might do something totally different, but don't want my cooked meat

tonight was my friend J's last (regular) day/night working at my favorite local Italian place. she usually works Saturdays as well, but they already called off opening tomorrow in the face of Snowmageddon. I usually go for a late Friday lunch, and couldn't break away from my laptop til almost 4. late lunch/early dinner.....toMAYto/toMAHto. I had a couple glasses of wine while I sat and chatted with the other folks at the bar. dinner was a huge chicken Caesar salad (half of which is in my fridge for another day) and then I got a side of meatballs (2) in marinara sauce to go. before tip, tab was $49. for the weekend, I'll be housebound at least til Sunday midday. my driveway's getting plowed, but idk exactly when. surely more than once with the expected totals, though. I do need to pick up the pups from their weekend sleepover on Sunday eventually. so, being housebound, that's where the side of meatballs came from. I picked up a huge loaf of French bread this morning, I'll have a small meatball sub at some point. oh, and the rest of tonight's salad. this place slices two full BSCB as an add-on. the first thing I do is move one of them over to my bread plate so I'm not tempted. lol... on tap for tomorrow, and the main reason I picked up the French bread - I'm making a small lazy porchetta out of a ~2lb pork roast. I'll roast some potatoes while the porchetta rests, and find a veggie somewhere. the rest of the porchetta will be sandwiches over the next few days, with that French bread.

Tonight was shake and bake chicken thighs and cole slaw with strawberry ice cream for dessert. Chicken thighs - $4 cabbage - $1 mayo and seasonings - $1 ice cream $0.50 Total- $6.50, 2 servings - $3.25/serving

last night I was tired and didn't want to cook for myself after cooking for the pups. so I cleared a bunch of veggies out of the fridge and topped a frozen pizza. today is trash pickup anyway, so that was helpful.
$5 for the pizza.
tonight, I have a BSCB that I kept for myself, from the value pack I IP'd and shredded yesterday. I'm not sure what I want to do with it yet. I'm kind of sick of everything.

I have no flipping clue what I am doing for dinner. I need to buy veggies and actually cut them up for roughage. I need meals that I don't have to think about because my brain is in 1st gear and not going higher right now.
I'll probably do chips and salsa or canned soup like the last few days.
I might just have to get something while on the way home.

Have no idea. Yesterday did not go well because of timing. Don't know if I'll try to do better or go simple. Probably simple. Red lentil pasta $1 serving plus other stuff or lentil soup $1.50 a can on sale.

I grabbed a rotisserie chicken from Costco while I was doing groceries last night. We are going to get at least 5 meals out of it.
Tues - 1/4 chicken each $2.65, Cole slaw - $1, 2 servings, $1.83/serving.
Wed - Chicken salad on lettuce leaves - $4.50 for 4 servings, $1.17/serving
Thursday - Chicken and Cabbage Soup - $7.50 for at least 5 servings, $1.50/serving
2 servings of the chicken salad were for lunch Thursday.
2 servings of the soup will be lunch Friday.

Wednesday night I made unstuffed bell peppers.
Thursday night DH is leaving town so whatever leftovers I want. I'll also make some risotto at some point this weekend.
A little carb heavy but warm, soft things are good while I have sinus pain all the way to my teeth and jaws.
