last night turned into leftovers, b/c I had no brainpower to deal with cooking or finding takeout. tonight, I'm using up stuff that needs to go before I leave for vacation. it's not as critical this time, since my mom will be here with the pups. she can dole out whatever veggies she won't eat, when she feeds them meals. but, dinner tonight is a chicken sausage stir-fry with a quick light sauce. I've got onion, peppers, scallion, and I'm going to swipe some pea pods from the pups. I haven't decided yet what to serve with it, noodles/rice/potatoes.

This will be dinner with the VA guys ...the ones I used to volunteer with. Every Friday night we meet at Golden Corral...get to talk VA, and our children, and other things guys (and a couple ladies that are always invited) My nickname has been "golden girl).

Sunday night I had a late lunch of homemade broccoli cheddar soup. Dinner was a cupcake after trick or treat.
Monday night I made southwestern chicken packets. I added some zucchini this time since I had it. There are 2 packs left for another meal.

I've been in and out with allergies resulting in asthma issues, but I am back in action! Hope everyone had a fantastic week. Monday: Cannot remember Tuesday: BBQ chicken breast shredded into romaine leaves, locally grown mashed potatoes and carrots. I glazed the latter with brown sugar, a ton of butter, and half a can of beer Wednesday: Nachos w/ leftover BBQ beef, beanless chili, cheese, and homemade avocado crema Thursday: Leftover nachos Tonight: Take out Sat: Spaghetti squash locally grown pork sausage bowls Sun: Grill/smoke something Have a fantastic weekend, everyone!

Last night we went out for what I call "American Sushi". Several places around here have done things, like add cheese or deep fry sushi. They also doubled the size of the roll. We had a surf and turf roll last night - sushi with steak on top. I don’t really like the overall trend - as sushi was delicious and healthy and didn't make me hate myself. But we can just destroy anything. 😒

~Last night we grilled locally raised T-bones, bacon wrapped asparagus, and stuffed portobello mushrooms ~Tonight: I have some locally made apple butter to use up, so this is in the slow cooker: Slow Cooker Apple Butter Pork Chops. There's a spaghetti squash that's been around for a while, so I'll cook it and stuff it with spinach and bacon bits. ~Taco Tues: Ground beef tacos in cheddar shells, riced cauliflower, breaded shrimp ~Wed: Homemade chicken tenders, veggies ~Thurs: Shirataki noodles w/ salmon cakes ~Fri: Take out from? ~Sat: Perfect Potato Soup using potatoes from our neighbor's garden ~Sun: Grill/smoke something, hopefully ribs Have a delicious week, everyone!

I have no idea but I know that I am sick and tired of soup right now. Maybe a stir fry will liven things up and I believe that I will pull a piece of fish and a burger from the freezer for later this week. I went grocery shopping so I have plenty of things to make up I just need the mental capacity to figure things out.

Now DH is sick, so last night I made him chicken noodle soup, and we split a doctored up Caulipower pizza. Tonight: Game food! Little smokies in blankets, chips and dip, breaded shrimp, sautéed asparagus and bacon bits Tues: Nicoise salad ETA: Using smoked salmon, not tuna Wed: Salmon, shirataki noodles, shrimp Thurs: Not sure yet Fri: Steak Sat: Something at one of our favorite breweries Sun: Hopefully the smoked ribs we didn't have last night Have a fantastic week, everyone!

thanks for pulling this thread back out, Iggy. I couldn't find it last night. I'm home from vacation, and working on a bit of total system detox. my voice is shot, and I'm trying to flush out the salt from the boat food. yesterday, I made a small pot of chicken fricot, there's probably 2 more big bowls leftover for the next day or so. I'm doing a big shop tomorrow over my lunch hour, with plans for salads and roasted veggies this week.

I will do something with chicken and sides are green beans and sweet potatoes. I'm trying to figure out the rest of the week. I need to get to the grocery store.
ETA: I was freezing so changed up the plan. I made a pot of chicken noodle soup. I will do chicken on Tuesday and black bean beef tacos on Wednesday.

Tonight is going to be baked fish with roasted veggies and couscous.
Pulling out a pork roast for the crockpot later this week -- yummy meals for the weekend to look forward to.
I have stir fry veggies that I will make up tomorrow for dinner with some shrimp and baked rice.
Craving Chicken Phad Thai so I might order that next week and have leftovers for a few days.

tonight, mooch and M came up for dinner and for mooch to hook up the sink in my new (a fee weeks ago) bathroom vanity. I paid for parts, and cooked mooch's late mom's meatloaf for him. mashed and broiled asparagus for sides, and I reheated the marinated grilled chicken for myself. M had a bit of both protein options, and we all shared the sides. I sent all of the leftovers home with mooch.
costs I can quantify tonight 🤷♀️ $4.99 - 1.25lbs ground beef $1.75 - 2.5lbs Yukon Gold potatoes $1.50 - half a bundle of asparagus ~$2.50 - bacon wrapping on the meatloaf

We had pinto bean soup, seasoned with leftover ham and bone. Then I made cornbread, DD had Spaghetti O's.
I have ingredients for spinach lasagna and could find no lasagna noodles, thought sure I had some. Then started to make carne asada and no lettuce!! So tomorrow to the store and pick up both so I can make both. Have filets also but the porch is such a mess may have to freeze, hate to do that. I think they taste soooooo much better cooked on the grill outside, may just freeze them till next week.

last night, I roasted a turkey breast so that I could have leftovers for sandwiches this week. I also made stuffing and mashed potatoes (with leftovers.) last night's veggie was roasted acorn squash, seasoned with cinnamon and nutmeg, and I've got Brussels, broccoli, and asparagus to roast the rest of the week. I'm not sure what dinner will be tonight, but it won't involve any of the turkey or other leftovers. I'll pick that back up tomorrow.

I feel like I've somehow upset the universe, but I kind of don't care. I had reasons, other than just tasty food. (sorry for the TMI...)
I found spicy black bean burgers in the freezer, which went well with the open packages of guacamole and pepper jack cheese I had in the fridge. the heresy comes in where I fried up a few strips of bacon first. I needed to share with the pups as well as topping my burger! lol... I eat black bean because I actually like them. I also enjoy bacon, though. and luckily for me, bacon and black beans might help uhm...counter all of the carbs I had last night. 🤷♀️🤦♀️🤭

last night, I got creative with leftovers. open faced turkey sandwiches on sourdough, with cheddar cheese melted under the broiler. tasty!
today/tonight will be about creating fridge space as I'll need it for the cheesecake I have to make today. it's not huge, 7", but the fridge is pretty full at the moment.

Tuesday I grabbed some chicken strips in my travels. $4. When I got to my grandma's, my dad had made beef vegetable soup. I had a small bowl as I was still hungry.

I didn't get the stew meat in time, so will go ahead and put it into the crock pot this morning. I have some soup in the freezer and as cold it is I think I'll warm some of that too.

I tried a bit of white chicken breast and plain rice for lunch. It did not go well. I have long-standing chronic gut issues due to PTSD. It's never been this bad.

last night was a HS reunion, and I crashed back in town. this morning, I came home and realized I had nothing in my fridge except an open package of bacon, some eggs, and a bunch of cheese options. I didn't want to cook anything before driving to pick up the pups. so, I picked up takeout on the way to my friends house - pork fried rice w/bean sprouts and chicken fingers. there are leftovers for days.... $34, including tip and the drink I had while waiting on the order.
I just threw a frozen pizza in the oven, doctored up with a pile of fresh veggies and a little more cheese. that's dinner tonight, with some leftovers maybe. I'll packet up, but it may not get eaten. 🤷♀️

We made roast beef sliders. We used hawaiian rolls. We made a horseradish sauce with sour cream and mayo. I caramelized onions with some balsamic. We used lunch meat roast beef which we got from the deli, but we put a pan of beef broth on the stove and warmed all the roast beef before making the sandwiches. Yummy!!
