1/2 baked potato, chili from the freezer on top with cheese. Cauliflower and broccoli. Dessert was macaroni salad. It's like candy for me!

Panzenella
I was craving panzenella the other day, and apparently no one sells it on a menu. I found a place that had one and I picked up an order of it. Either I don't know what real panzenella is, or that restaurant does not know what real panzenella is. I just got a salad with a few dry croutons. So, I had to make my version. Cause I don't suck.

last night was Kraft dinner, probably should have just heated up a can of soup to be healthier. oh well. it fit the bill - mindless dinner.
tonight, I've got mushrooms that need to be used up, and an open carton of chicken stock. I'm thinking about making some loaded risotto. that would also use up the last chicken sausage link from the freezer and some of the block of parmigiano cheese as well.

Made unbreaded chicken parm with real spaghetti noodles tonight, mostly for DH. He still can't taste much, but he was appreciated. I had half a cup of cooked noodles and half a chicken breast, which was too much for me to finish.
Apple crisp in the oven for dessert. I will make room for that. 😀

risotto will wait til tomorrow, i got caught out in the start of overnight being rainy, and I want soup. so, there is a pot of minestrone simmering on the stove. I'll cook off (and package) some shells separately, and I picked up a crusty baguette for dipping. nom ETA: risotto will be cooked, and I mixed up some bruschetta this afternoon. I'm going to toast off some crostini from that baguette, and I'll snack on that while I cook the risotto. which means, dinner tonight is most likely going to be bruschetta toast with a little bit of risotto. between the leftovers of tis and the big pot of soup, I'm done cooking for the week.

Yesterday DH smoked a locally raised rump roast in the Trager for hours. We had steamed broccoli slaw and Tattooed Chef's ratatouille on the side finished with freshly shaved parmesan. Tonight: There are locally raised pork chops in the slow cooker, along with teriyaki sauce, and 4 different spices. I'll serve them with sautéed spinach and sliced portobello mushrooms. Tues: Cod and mashed cauliflower cakes, steamed and riced broc slaw underneath, with shrimp and avocado on the side Wed: Leftovers/grazing Thurs through Sun: Not sure yet Autumn nesting has begun. Over the weekend, first I made mulled wine, and then a savory bread in the slow cooker. In the oven I made a peach cobbler using locally raised peaches that I froze over the summer, and a batch of oatmeal pie cookies. The latter used up the rest of the marshmallow cream bought for camping purposes this summer. The jammy wine choice was perfect for the mulling spices: Flatbed RedFor the freezer project I mentioned in a prior page, switched large protein items in the top basket with smaller items such as baggies of frozen fruit and veggies in the lower basket. It wasn't as bad as I originally thought, as far as old, hidden items.

Last night it turned out the baby spinach was wayyyyy past it's use by date. I'd forgotten about the other two potatoes a neighbor had given us, so I peeled, boiled, and mashed them with heavy whipping cream and a ton of butter. They were perfect with the pork chop and sautéed portobello.

this recipe is from a FB ad I just clicked. I'm kind of drooling now. Easy Garlic Chicken Pasta
it's not happening tonight, I'm seriously debating takeout. but, I saved the link for another night. report back if any of you give it a shot. I would absolutely take the suggestion to wilt a bunch of baby spinach into the finished skillet, too.

I'm making burrito bowls. I have some cilantro that is starting to look a little sad, so I'm making guacamole. Plus, for T2 guacamole is a food group. She'll be pretty happy about it when she wakes up.

pups and I met up with mooch tonight, out on the patio. we met another pup, and a bunch of new hooman friends, and the tails were wagging all night. ❤ pups split an order of chicken tenders, and snarfed a bunch of fries off both our plates. mooch got a burger, and I had a chicken Caesar wrap. oh, and a couple drinks each. tab was split up the middle, $45pp including tip.

tonight I am having a bowl of jambalaya out of the skillet for this week's quick grab.
1 box Zatarain's jambalaya 1 chopped onion 1 chopped jalapeno minced garlic ~1.5lb boneless chicken thighs 1 can l/s chicken broth plus water to make 2.5c liquid
tomorrow night is a surprise dinner for my friend's 40th birthday. pricey Italian restaurant with huge portions, so I'll have leftovers.
Tuesday is Taco Tuesday.
after that, idk...

last night was a fabulous night with friends I haven't seen in way too long. we celebrated M's birthday, had amazing food and drinks, and it all felt so normal and missed. I somehow ended up with the itemized bill for the four of us that were on one tab. $289 plus tip. we'll put this in the bin with thyme's steak dinner a few weeks ago. obv not an "every week" thing. I had chicken scampi over fettucine, the other three had chicken marsala over angel hair, penne alla vodka with sausage, and cavatelli Bolognese with burrata. there was wine, martinis, dessert and dessert martinis. most of the table of 15 had leftovers, I've got two more meals easily. tonight will be Taco Tuesday, M and mooch will be up. I think we're all doing chicken tacos tonight, so that will be easy.

Back from 5 days away. Dining out breakfasts included corned beef eggs benedict, a blueberry waffle with crispy bacon, and biscuits and gravy. Suppers consisted of a lobster queso appetizer, fish tacos, a smoked turkey sandwich, and a steak quesadilla. At the sports bar Friday, we ordered a side of fried pickles and something called Banger Balls. The latter were a blend of cheese and jalapeno rolled into a ball, then battered and fried. SO good! The cheese pull was incredible.
Last night I made shirataki shrimp noodles Tonight: Slow cooker drumsticks in a Frank's Hot Sauce marinade Tomorrow: Salmon, breaded shrimp and veggies Thurs: Pizza Fri: Take out from? Sat: Ground pork lettuce wraps Sun: Grilled steaks, veggie

5pm ALCS game means a good excuse for game day food. nachos tonight, with leftover fixins from last night. there's a ton of taco seasoned shredded chicken left, and most of a tub of guacamole. I'll pile on more veggies under the melty cheese, too.

I made shish taouk on pita with hummus, toum, lettuce and tomato.
DS thinks he doesn't like yoghurt or hummus. The pitas were loaded with both. He had two.

last night, I finished off the chicken Caesar salad that mom and I split for lunch. legit, three meals out of a takeout salad.
tonight will be chicken piccata, likely over fettuccine. I found some lemons in the fridge that need using up.

I made lobster alfredo on spaghetti squash for supper last night. It's even better today! I'm the only lobster lover in the house so I have enough for tomorrow too. I'm in heaven. ☺

We are having penne pasta with ground beef and topped with some home made spaghetti sauce, and mushrooms. Thinking of topping with mozzarella and baking for a bit. Of course a salad with it.

pups and I are meeting M at the patio, they are crashing with her tonight while I head north for the day tomorrow. menuI'm likely going with a black bean burger, I've been craving that for a few days now. tomorrow night will either be takeout if I'm heading down to pick up the pups, or tacos if M brings them up to me.
