Last night: Grilled sirloin pork chops and mozzarella stuffed portobellos Tonight: Slow cooker meatloaf using locally raised ground beef, tempura eggplant fries Taco Tues: Baja shrimp tacos in bibb lettuce "shells", broccoli slaw, breaded shrimp Wed: Slow cooker pork chops, veggie Thurs: Out w/ friends Fri: Take out from the local rib place Sat: Game food. tonight I picked up an order of spicy string beans from my regular Chinese restaurant near my house, and am enjoying some with leftover PRF w/bean sprouts from yesterday's takeout on Cape. delightful.
cost tonight- $14, including tip.

Finally at home for a few days with no stuff to do.
Monday night teriyaki chicken and vegetables. Roasted in the oven on a sheet pan and served over rice.
Tuesday not sure.
Wednesday night spaghetti or something simple for DH to cook. I have a pedicure appt.

an errand today brought me over to my old neighborhood, so I stopped in at the fish market. I kind of wanted salmon, but wasn't feeling it after seeing a bin of scallops in the case right in front of the salmon....all the best to drip over the salmon when the clerk reaches for it. but, the cod looked great. I bought ~2/3lb, and will be sharing with the pups - they'll get theirs in the morning. I'll roast some tiny potatoes and some other veggie. I forget what's in the fridge. cost today? $11 for the fish.

Tuesday night beef cabbage stir fry. I added carrots, red bell pepper, zucchini and green beans to the bag of coleslaw mix.
Wednesday night spaghetti.

tonight was a pasta toss to use up some lingering fridge stuff. cost - free to me. 👍 I roasted broccoli and mushrooms on a sheet pan, added some shredded chicken breast swiped from the pup stash to warm up. all of it was tossed with curly pasta, a little chicken broth from an open carton, and some fresh grated parm cheese. I've got two more meals for the leftovers.

Last night we finished off the last of the Autumn Soup from the freezer...tonight will be homemade pizza...LOTS of It. sausage, pepperoni, bell peppers & onions. DH gets some black olives on his half.

after a heavier lunch than typical, I'm thinking a salad is probably a good idea. I can bake off a spicy chicken patty for protein.

I get a 3pk of romaine hearts for $2.99 usually. I think I just paid $2 for a head of iceberg. not terribly unreasonable here.

For last night's activist group dinner, I had two appetizers consisting of shrimp satay with peanut sauce and tempura calamari (ate a few of the latter and brought the rest home to DH). tonight I cooked a package of Zatarain's dirty rice, made with ground pork. I always doctor this up with fresh onion, jalapeno and garlic, and use chicken stock instead of all water for simmering the skillet. this will be my quick grab meal.for the week.
the only other meal I have planned for the week is pork chops with roasted Brussels and tiny potatoes. I'll have leftover pork chops bc the package has four. suggestions welcome, TIA.

We had a cheeseburger each for DD and hubs, I had a plain one with pickles. Also corn I put up, baked beans and a salad. For dessert tonight I baked a pineapple upside down cake, it was really good.
Just can't give $10 or $15 for a cake that I can make for a very few dollars.

Tonight it is ground beef stuffed with cheese, simple stuffing (it's a Kraft cheese recipe). Also is potato casserole. Both of these recipes have been ones that that make in batches and freeze. I have some asparagus in the fridge, so may add a few of those.
Chelsie & I will add a little ice cream for dessert.....not chocolate.

Sun: Grilled steak, side salads Last night was shrimp stir fry with yellow squash and zucchini on top of riced cauliflower, with a side of breaded shrimp Taco Tuesday: Ground beef tacos in cheddar shells topped with broccoli slaw. For the shells, I do something similar to this: Cheddar Taco Shells, only I use a wooden spoon balanced between two large glasses to form and cool them. Wed: Not sure as I have a meeting with the Forest Service Thurs: Slow cooker beef (we have several roasts from the locally raised cow to tend to) and bean chili Fri: Take out from? Sat: Doctored up cauliflower crust pizza, mozzarella sticks Sun: Grill/smoke something, bacon wrapped little smokies Have a fantastic rest of the week, everyone!

We had a T-bone last night, split a HUGE baked potato, DH had pinto beans & I had snap peas. Tonight is going to be leftovers from a couple nights ago...ground sirloin patties, mac/cheese & sliced home grown maters. DH may add the rest of his pinto beans too.

Tonight is the last of the Frittata out of the freezer I will pare it with a salad for extra wholesomeness. Tomorrow will be roasted veggies with a side if pita and hummus.
Need to pull and defrost some ground turkey or beef for soft tacos on Friday.
Thinking about soup but not sure when I will make it.

batch cook for the week is happening today instead of tomorrow. I got my booster shot this morning, so tomorrow I will either be couch bound or visiting my current Wish kid with his pretty awesome Wish setup - a gaming computer with all the accessories!
my veggie lasagna has a layer of sautéed broccoli, mushroom, green and summer squash, and thawed out frozen spinach. it's so good. the smaller glass dish I use works out to 8 servings. dinner tonight will be 1 serving with a small salad.
