that sounds fantastic! and I have to make rice for the pups tonight already. I think I'll do this instead. the only thing I'm missing is an actual lime, for the zest. there's always a bottle of "RealLime" unsweetened juice in my fridge, based on my Cosmo habit. I did save both links, though. I'll try the other one another night Let me know what you think. I keep lemon juice in my fridge too. It's so much easier.

I wish I could keep lemon juice in the fridge. Every brand I've found contains sulfites.
I'm ordering takeout from the hibachi place. Sushi for DH and our niece and something else for me. Total tab likely not cheap but it's fiscal year end and my give a damn is broke.

Drat. I was hoping to be invited to go along when DD took DGD to get something to eat. Tonight is DGD's bowling league, and they always leave early to get something to eat, then to the bowling center. Fooey. Then it occurred to me that I haven't eaten today so supper is peanut butter toast. Gotta put something in my belly, and it was all I could think of that didn't need to be cooked.

thanks, andi! I will def do this again. tonight's complaint is that the chops in the package were unevenly sized. but, I let this little one (right??) rest while the big one finished cooking. I have two meals out of the other chop, easily. depending what I do with it, maybe three.

Made spaghetti in the instant pot. Chopped zucchini, carrots and celery and added to the ground beef. Then noodles and sauce. Leftovers for lunch tomorrow before we get out of town for weekend.

last night, I was just done. I boiled off some rotini and tossed it in fresh pesto I made a week ago. I was in bed by 8pm. cost: free, everything has been here.
tonight, I added fresh croutons and a (sliced) chunk of leftover pork from andi's link to the rest of my Caesar salad from lunch. lunch tab was $48, including tip. 2 glasses of wine and an entree Caesar with chicken.

tonight I brought the pups to the sports bar patio to meet mooch and M, where they made a ton of new hooman friends. they had their typical chicken tenders after having veggies at home with their meds, I ordered a pizza (specifically to have leftovers) and we were there long enough with the baseball game to have had three rounds of drinks. in the couple minutes I wandered over to the outside bar in order to check the score in the 9th, M picked up the whole tab, while we all still had full glasses. 🙄😠 she does that, too often. next one is on me.

I had grand plans to make a tray of pulled pork nachos for football tonight, but I'm still pretty full from what I ate earlier. tonight might just be leftover pizza, doctored up with more veggies and some extra cheese. either way, "free" to me b/c costs have already been absorbed elsewhere. wait, except the $2 bag of chips I picked up today.

Sunday night DH's sister invited us to dinner. I contributed a pan of brownies. Made from ingredients kept on hand so not sure for costs. Somewhere between $5-10?
This week I am trying to use up all the veggies before we go on vacation. And I'm leaving before DH as I am the flight escort for some of my family who've never flown.
Monday lunch I roasted a sheet pan full of veggies and added sliced chicken sausage halfway through roasting. Veggies were zucchini, carrots, broccoli, green beans, bell peppers and mini gold potatoes. Seasoned with oregano, basil, onion powder, garlic powder, red pepper, salt and pepper.
Monday dinner Budget Bytes unstuffed peppers. That will use up the last 2 bell peppers in the fridge.
I have a big package of mushrooms left and 1 zucchini. I'm thinking I will make a batch of risotto and that will use half of mushrooms. I need something to use up the other half of mushrooms.

I need something to use up the other half of mushrooms. do you have any spinach left? or, a small clamshell package won't take long to use up. but garlic spinach, mushroom, and Swiss are all a really tasty combination in things like omelets (I know you don't eat eggs, but DH?) or for a topping on burgers or chicken sandwiches. the other thing I've done to use stuff up is to make quesadillas with whatever is left. doctoring up a frozen pizza (or using a store-bought ball of dough) is another good option.

I'll probably have a portion of it for dinner, maybe with a small green salad? idk. it reheats really well, and will be my "batch cook" for the week. ETA: the painter wants to put in 4h today, which means he'll be here til 730. I'll assemble and bake the casserole in the morning. he's taken over my kitchen counter near the sink with all his stuff. I'm not getting in his way. dinner tonight will probably be 2 more slices of pizza. or a can of soup, idk.

andi, I finally used up the last piece of the huge chop with those spices - I thin sliced it and put it in some ramen, with bean sprouts, spinach, and fresh jalapeno. it was really good!

Last night DH baked Cornish hens in the Trager. MNF tonight: Grilled bacon wrapped asparagus and shrimp, little smokies in blankets, and whatever else I'm in the mood for. Tues: Cod and mashed cauliflower cakes on top of riced broccoli slaw Wed: Something on the road as I have a work function Thurs: Something using locally raised beef or pork, side veggie(s) Fri-Sun: Not sure yet

I lucked out in the grocery store when I ran in for pup supplies over lunch - the hot bar had rotisserie turkey breast and thigh packages. I picked up a thigh package, it had 2 for $6. I'll roast some Brussels sprouts and probably some tiny potatoes rather than making mashed. the dishwasher will be full already from the cooking I need to do for the goobers this afternoon. two meals, costs: $6 - turkey thighs $1.50 - Brussels ? the potatoes have been here for awhile.

DD had a can of spaghetti, hubs and I had canned veggie soup and he finished up the chili. Not much of a meal but noone really cared tonight. Probably have a good one tomorrow night.

My husband went to Costco last week and they gave him a sample of orange chicken. He said it was delicious and bought a huge box. It is frozen, so I forgot it was in there. Tonight, we try it.
I suspect he was pretty hungry when he had the sample, although I am pretty hungry now. So, I hope it is good!!

Wednesday night I finished off the risotto I had made for lunch before getting on the road for a 5 hour trip. It was the first time I added zucchini and it was good.
Thursday night I took my grandma to her favorite local Italian place. $42 with tip and we both have leftovers for another meal.
Friday night probably take out.

The fries were SO creamy! ~Wed: I ended up picking up a pizza, stuffed mushrooms, and an impulse purchase cannoli and cream puff. ~Yesterday, I neglected to pull out pork chops to thaw, so we had leftover pizza, MNF food, and the rest of the fries. ~Tonight is a pu pu platter from a local joint ~Sat: I'll make a Fathead crust pizza in order to use leftover odds and ends from the freezer and fridge. I finally caved and started an inventory of kitchen freezer contents after discovering small, random items under other items in the bottom basket. The garage freezer and deep freeze aren't as difficult to navigate. ~Sun: DH will grill/smoke something in the Traeger Have a fantastic weekend, folks!
