last night, I added some fresh veggies and some cheese to a frozen pizza and called it good. today I need to head Cape-side for some errands, I definitely intend to hit the fish market. will update this post when I figure out what I'm getting. ETA: I brought home a beautiful piece of salmon. I split it in half and baked, my.half was coated in Cajun seasoning and tossed into a Caesar salad. pups will split the unseasoned tomorrow with their breakfast.

It's my Monday. And here's to an upcoming 3-day weekend. ~Last night I made my first fish and veggie stir fry. It wasn't too bad. I also used a premade packet of cauliflower rice for the first time. It was tasty, and is low in sodium and carbs. A bonus is I didn't have to use the food processor. ~Tonight: Thai shrimp soft tacos (I'll use low carb flour tortillas) with broccoli slaw, avocado, and diced home grown tomatoes with breaded shrimp on the side Thai Shrimp Tacos~Wed: Bachelorette food as DH will be out of town. Am thinking cocktail hour munchies. ~Thurs: Out w/ friends ~Fri: Take out from? ~Sat: Finger food night such as taquitos, bacon wrapped shrimp, and crescent roll wrapped little smokies ~Sun: Grill something ~Mon: Grilled burgers consisting of locally raised ground beef and locally raised ground pork infused with blue cheese with home grown yellow squash and cherry tomatoes on the side Have a fantastic week, everyone.

Thursday black bean pulled chicken
Friday leftovers or take out
It's going to be cooler on Wednesday and Thursday due to the rain coming from Ida's remnants.

I shopped today for the week/end. I have a package of BS chicken thighs (5 or 6pc) and another of thick cut pork chops (3pc). between the pups and me, we're good for the stretch. what I have planned...
- Friday night dinner at a favorite Cape seafood restaurant, with more drinks and dancing to live music. not sure if I'm pitching in for the tab, my birthday is Thursday and the friend who shared the calendar page made a point to mention it being a birthday thing. 🤷♀️. I'm fine either way. lol... - garlic spinach and cheese stuffed pork chop, with roasted veg. maybe asparagus? - marinated grilled chicken and pork - I'm going to mix up a packet of my favorite black peppercorn marinade for ~2lbs of protein. this is versatile in salads, wraps, as a quick taco with a slice of melty cheese.
and as I sit here now, I realize I never got around to cooking more rice for the pup stash. going to nuke a "quick cup" now and leave in the fridge overnight. I'll cook a batch in the morning. oops.

I made a Costco hot dog (yah, completely unhealthy but gramma loves them and at her age I'm not going to argue). On buns for her and DH with chips and a baby arugula salad for me. Making chili for tomorrow with leftover black beans and veggies. I've got to get back on my limited gluten and sugar diet. I've been good at staying off dairy products but keeping the gluten low is hard. I've let myself slip over the past few weeks. That's bad. Why do you have limited gluten diet?

I made a Costco hot dog (yah, completely unhealthy but gramma loves them and at her age I'm not going to argue). On buns for her and DH with chips and a baby arugula salad for me. Making chili for tomorrow with leftover black beans and veggies. I've got to get back on my limited gluten and sugar diet. I've been good at staying off dairy products but keeping the gluten low is hard. I've let myself slip over the past few weeks. That's bad. Why do you have limited gluten diet? Because I've given up so much already that I can't quite go full gluten free yet so I'm limiting it greatly. I have lupus. My rheumatologist is a big believer in life-style changes in support of helping medication work correctly/more efficiently. And my lupus doesn't react in a typical manner with the medications anyway. So he had me try going dairy-free, which helped a lot but we're still struggling. His next recommendation was to eliminate white and refined sugars (which I don't eat anyway) and gluten (which I DID eat a lot of). I don't have the desire/willpower to go completely gluten-free yet. But I've greatly reduced the gluten I eat. I eat about a quarter or less of what I used to eat. My plan is to use up all the gluten items in my house that are open. I have a lot of open bags of flours as I mostly cook from scratch and I love different types of flours (I know, I'm weird). I already sent all the un-opened gluten foods to the food bank. Once the gluten foods are gone, I won't restock them. I'm researching non-gluten and low gluten flours. I stay off gluten for a couple of months. If it works, I can try adding back in small amounts. If my lupus starts to act up, I reduce the amount again. We did the same thing with dairy. Turns out, I can't have ANY dairy. So, there's that. I'm not actually allergic to these foods. They are foods that can cause an inflammatory response in the body apparently.

I have some arugula that's 'on its way out'. Any ideas on what to do with it besides salad? My salad greens have to be beyond perfect. Cooked, not so much.

I toss it with lemon juice and fresh cracked coarse black pepper and top a flatbread pizza with it after the latter is cooked. but you're trying to limit gluten and dairy, so I don't think that will help you much. unless you've found GF/DF substitutes you like? re: inflammatory response, that's exactly what it is. my sister has an autoimmune disorder and is also GF/DF with an added complication of nothing that's been brewed or fermented. so, no beer/wine, no vinegar, no soy sauce, no yeast extract. that last one is the royal PITA, because it is in everydamnthing that's out there. she was already a mostly scratch cook before this diagnosis, but now it's out of necessity.

A number of 4th of July's ago, I attended a party at a co-worker's home in rural west Tennessee. She and her neighbors all raised very small herds of belted Galloway cows. As I am eating my cheeseburger I overhear two of the neighbors speaking about what one of them had for dinner the other night. The neighbor stated "We had his liver for dinner. It was delicious." The neighbor was speaking about a young male calf born earlier that year which she had had slaughtered. Male calves don't live long when one only needs one bull to impregnate all the female cows.

Hubs is getting us tortellini's and garlic bread, me a chef salad. I baked a cake going to ice half with coconut pecan icing and the other half with butter creme. A lot cheaper then $18 to $20 for a cake we don't even like, maybe some ice cream? Up to hubs if he wants to get it.

I baked porcupine meatballs in the oven. On the stove, the skillets are a mess to clean up. I tried my instapot and ended up with a jumble of meat. The oven wins but I will cover it so the sauce doesn't get all soaked up.
I added frozen green peppers and onions to the side.

Doing a big dinner with the neighbors to celebrate football season, Labor Day, etc. Grilling steaks, chicken, chicken sausage and corn. I made loaded potatoes, mac and cheese, salad and brownies. There's plenty of beer and beverages. And I made buffalo chicken dip to snack on all weekend.

I ended up going out the last two nights. birthday dinner Thursday, last night was to see a band I like at a seafood restaurant I love. Caesar salad with added swordfish, plus 3 glasses of wine over a few hours, $60 including tip. I wasn't allowed to pitch in for birthday dinner or lunch the next day at the same place (dog friendly patio).
tonight, I was definitely staying in. I did a bit of prep work in slicing BSCB for marinating. I also dunked some boneless chicken thighs and a thick pork chop that I froze in marinade for later. I'll cook the chicken tomorrow, most of the BSCB going into a chicken broccoli Alfredo pasta for the week's quick grabs.
tonight's dinner was the spinach and garlic stuffed pork chop I planned for a couple days ago, with some roasted tiny potatoes. I also cooked the 3rd chop in the package, plain for the dogs breakfast tomorrow.
$7 - 2.5lbs BSCB $3 - thick boneless pork chops $4 - boneless chicken thighs (I kept 2 out for another cooking option) $1 - Weber marinade packet ? everything else.

Hope everyone had a relaxing long weekend! ~We ended up BBQing T-bones last night because when I pulled them out of the freezer, I thought it was ground beef. Oh, darn. Served them with 4 different veggies from DH's garden. ~Tonight: Ground pork nachos with all the fixin's, using Hatch chili tortilla chips. ~Wed: IDK yet ~Thursday: Dinner out ~Friday: Kielbasa, veggies ~Sat: Steak, veggies ~Sun: Take out from a local wing place Have a fantastic week, everyone!

Taco Tuesday tonight, I may have two extra for dinner. if so, they will bring their own ground beef since they won't eat the chicken thighs I have.
between this and leftovers, the batch-cooked chicken broccoli alfredo rigatoni I made on Sunday, and the extra marinated chicken I didn't chop for the pasta, I'm set for the week. I'll use that extra chicken in salads and quesadillas as needed.

Tonight is a large caesar salad. Than I am whipping up some tuna fish for the next few days and chopping up veggies to snack on.
I plan on making bean soup w/ chicken but the weather is too warm right now so I am holding off.

Wednesday instant pot risotto that I'll bulk up with chicken.
The instant pot is getting a work out today. I made taco shredded chicken for lunch, will use it for risotto for dinner and I need to make plain shredded chicken to freeze.

great minds think alike, snapdragon. Caesar salad will be happening here, too. I'll use up some of the leftover marinated grilled chicken for protein. last night was, in fact, Taco Tuesday. the twins brought ground beef and a hard shell taco kit. I cooked up the ground beef with the seasoning packet in the kit, my chicken thighs were Adobo and a light taco spice blend, then diced. I used the last couple of hard shells and some leftover fillings for breakfast this morning. easy week around here, for sure.

A tuna sandwich sounds good. So does an egg salad sandwich. I was trying to decide when DD showed up with a Reese's DQ Blizzard. Still haven't decided but only ate half the Blizzard; the other half is in the freezer.
It's probably going to be tuna because I'd have to boil an egg first, and I don't feel like "cooking" right now.

I threw a grilled chicken thigh and some fresh croutons into the leftover Caesar salad I brought home from lunch. it's hitting the spot. the last piece of grilled chicken will probably get pitched tomorrow, as I cooked them last Sunday.

We ended up eating at a new to us place last night instead of the wing place. It is an interesting menu, focusing on both American and Taiwanese food, in addition to an ice cream bar. I had the buffalo shrimp fries with peanut sauce. Unique, but good. We dined in and they were steadily busy, especially for a Sunday evening. Tonight: MNF food including kielbasa, bacon wrapped shrimp and little smokies. I'll add some cherry tomatoes with mozzarella balls for the token veggie. Go Raiders! Taco Tues: Lightly fried fish tacos in low carb tortillas, with breaded shrimp and crispy turnip fries on the side Wed: Grocery night! I'll toss a doctored up Caulipower crust pizza in the Trager Thurs: Ladies Night out! Fri: Take out from? Sat: Teriyaki Glazed Chicken and ShrimpSun: Ground beef and pork burgers infused with blue cheese crumbles, veggies

plans changed when the grocery store didn't have large stuffer mushrooms. they did have a display of the really good French baguettes. though. dinner tonight is a breakfast sub with bacon, onion, pepper, mushroom, egg and cheese.
tomorrow, the twins are coming up. mooch requested meatloaf, I'm debating a couple chicken dishes for M and me that will pair well with mashed potatoes.
