I don't want red sauce again tonight, after having an eggplant parm sandwich for breakfast. I'm glad I left a bunch of chicken cutlet unsauced, I'll chop one over a big green salad tonight. has anyone ever frozen sliced raw eggplant or squash? I'm not sure I'll get to cooking the other halves of them. right now, they are in a ziploc bag with a crumpled paper towel sheet (to collect moisture). if they last til Saturday, I could fry them and send them home with my Dad on Sunday. that just seems like a long time since slicing.

I have actually dried them in a dehydrator, but only used them to doctor up store bought spaghetti sauce. Came out pretty good.

hmm....maybe I can fry them tonight, then. these slices are a lot bigger than anything I'd use in a stir-fry, so that's not ideal. I chopped ends to make them flat and sliced everything the long way. the painter won't be here long this afternoon, just a quick coat on three drawer fronts. I'll check and see how mushy they all are when I go back inside. I've been changing out that sheet of paper towels in the bag, so hopefully it's doing its job. thanks for the answers!

I decided I didn't feel like cooking for myself tonight, even repurposing leftovers, after cooking for the pups. I called in a very large (for me) Chinese takeout order, and it will last nicely through the end of Hurricane Henri that's due to hit South Coast on Sunday.
$48, including tip - chicken teriyaki - lg spicy string beans - lg rice noodles with veggies - spicy yellowtail roll (I was craving sushi in the first place, this scratched the itch just enough for now. 😉)

tonight, I reheated some chicken cutlet under the broiler and topped a big green salad with it. tomorrow will be back to Chinese leftovers.

Tator Tot Casserole. I found a 10 minute recipe on allrecipes. I didn't see that a round microwave size baking dish was needed. I followed most of the instructions like thawing the tator rounds in the microwave first. It's in the oven baking now. I'm sure it will be yummy.

DH and I went out to an Irish pub and restaurant last week for our anniversary. We split corned beef eggrolls (yum!), and I had the fish and chips.
Tonight: Shrimp and shirataki noodles with eggplant tempura Taco Tuesday: Crispy chicken burritos with guacamole and broccoli slaw. Home grown cherry tomatoes will be on the side with mozzarella balls. Wed: Something with pork Thurs: Take out from? Fri: Something with beef Sat: IDK yet Sun: Grill/smoke something

Monday night I thawed the last package of homemade meatballs. Salad and spaghetti and meatballs.
Tuesday night teriyaki chicken, rice and steamed broccoli.
Wednesday leftovers to clean out the fridge. Trash night and we are taking a short trip to visit family and celebrate our anniversary.

last night was a flatbread pizza with a pile of veggie toppings. I found the flatbreads near the tortillas, they are the same Mission brand as my favorite tortillas so I figured I'd give it a shot. tonight I'll reheat some of the spicy green beans from my epic Chinese takeout night and pair that with baked fish. not sure what kind of fish yet, depends what looks good at the market when I get there

Tonight a packaged casear salad, some small pork tenderloin steaks, baked potatoes with sour cream and green onions. I forgot bacon bits, but have a few slices I can fry and crumble.
In town they have added a couple of dessert places. DD and I had an apple and cherry danish in town and brought hubs home a pecan one. They were delicious, made from scratch I'm sure.
Dinner will be around 6.
It is so hot here, the towels and clothing I hung out dried in short order. Just a pair of my heavy socks and hubs jeans which will be dry shortly. It's 92 and 65% humidity. Hubs and neighbor started early and came home early, said even with his huge fan got to hot to work.

I was going to make a Cobb salad but didn't have blue cheese so I just had a bunch of veggies. Lettuce, tomatoes, carrots, celery, BSCB, cheese, hard boiled eggs, and bacon with dressing. Yum.

Salad for DD and I.
Fry kielbasa and cabbage with bell peppers if I have any for hubs.
Some rice and a tiny piece of salmon not enough for me.
Rice for DD and what else, have to dig in there to see. I will find something for her, think I have some chicken nuggets and some cheese sticks and other items. I rarely cook them, don't like processed foods for us.
I ended up fixing her elbow macaroni and some of the new batch of spaghetti sauce I made.
I had the tiny piece of salmon, the rice and quinoa with garlic, and some of the macaroni. So we all got full.

I had some girlfriends over this evening, and nobody was hungry, including me. I figured I should eat after some wine, so I baked off some frozen chicken egg rolls to finish out a box and clear freezer space. I didn't love what I've already cooked, so tonight is the perfect time to use that and not waste food. 😉

DD took DGD to get her nails done. The salon is right across the street from a DQ. My supper tonight is going to be a $6 meal deal that DD is going to pick up on the way home...double cheeseburger, fries, Coke, hot fudge sundae.
I've reached a point where I don't really give a crap what or whether I eat. It doesn't have to be healthy.

I ended up putting one and a half of the turkey tenderloins in a baking dish with some chicken broth, and I'll slice/shred it for the pups. the other half, I sliced into cutlets and I'm going to make turkey Lombardy. that will let me use up some fresh spinach that is on its way out, as well as a package of fresh mushroom ravioli. dinner tonight and one meal of leftovers. that's a win. 🙃

I made a Costco hot dog (yah, completely unhealthy but gramma loves them and at her age I'm not going to argue). On buns for her and DH with chips and a baby arugula salad for me. Making chili for tomorrow with leftover black beans and veggies.
I've got to get back on my limited gluten and sugar diet. I've been good at staying off dairy products but keeping the gluten low is hard. I've let myself slip over the past few weeks. That's bad.
