Tuesday/Wednesday will be southwest chicken rice baked in foil packets. Easy portioning and clean up.
I need something for Thursday and possibly Friday. I may make a batch of risotto to have over the weekend as the hotel meal/snack option. That would use up the remaining mushrooms.

I let my Italian come out tonight, I needed the distraction. I made mooch's mom's bacon-wrapped meatloaf recipe (he took half with him, it was 2.5lbs), lemon chicken, mashed potatoes and broiled prosciutto wrapped asparagus with balsamic glaze. I have two pieces of lemon chicken left over, I sent the rest of the mashed with the meatloaf (I got the 'I'm so full glazed eyes as I gave him another container to pack up the mashed lol...) and I made sure I ate whatever asparagus/prosciutto was left after they were all set.

tonight I need to replenish pup stash. I'm going to boil off a serving of pasta to go with leftover lemon chicken breast from last night. maybe some prosciutto-wrapped asparagus? I have a slice or two left of prosciutto. that's easy enough.

Last night was BBQ chicken in the crockpot. DH was cooking up some egg noodles when I got home. There is enough for leftovers tonight.
3 Chicken breasts = $4 Remnants of 2 open bottles of BBQ sauce from fridge = $0 Package of egg noodles = $2
= $6 for dinner for 2 x 2 nights (will add a canned veggie tonight = $1)

I did a bunch of food prep today, for both my dogs and myself. one of the things I did was mix a very large batch of basil/pine nut pesto. I don't really follow a recipe, so when I adjust for taste, the batch usually grows. dinner tonight is a package of fresh chicken and prosciutto tortelloni (purchased on deep sale) tossed with some of this pesto. I'll toss what I don't finish, there's another package of tortelloni in the fridge for later this week.

tonight, I'm going to mix up a chicken sausage stuffing for some mushrooms. 1 link becomes enough for a few meals/apps. I have some larger stuffer button mushrooms, I'll cook off 3 or 4 for dinner and call it good.

Went with DD and DGD to their favorite Mexican restaurant. Green enchiladas, rice, beans. OMG! it was so good, and I could only eat half so have lunch for tomorrow. Yum.

I made hubs and I chili and DD a cheeseburger and fries. She doesn't like chili at all.
Today I had a banana and glass of milk for breakfast, then drank water. Lunch was a can of vegetable barley soup. And my dinner was a bowl of chili. I ate 6 dried apricots.
Hubs had cornflakes with banana for breakfast, a hoagie from the deli for lunch, DD had a chicken salad sandwich. Her breakfast was a banana and milk too

I think some call tonight's dinner crack slaw. Anyway I browned up some hamburger and tossed in a package of coleslaw mix and a sliced red bell pepper. I was going to add more carrots but I forgot. I froze most of the pulled chicken. I kept one container that I should do something with tonight. tacos, taco salad maybe. 🤷♀️. I still have three big enchiladas, too. almost half the pan.
last night was a pretty thought-free dinner - I tossed some pesto with some rotini and called it good. I made a pretty big batch of pesto on Monday, should probably freeze some of that, too.

Yum. I just remembered the other half of last night's Mexican food that I brought home to have for lunch today. No idea which drive-thru DD will choose for supper, but dessert is in the oven as we speak...apple crisp. It's a good choice for an evening when the cold front will pass through. Just one thing, though...I don't think we have any vanilla bean ice cream. Ack!

I tossed the other half of the package of pork chops in some spices and parmesan and air fried them. Leftover sides from last night for me. I made DH a box of Stove Top stuffing at his request.

last night, I had no idea what I wanted to do after some plans fell through. then someone mentioned bacon in conversation, so I ended up making linguine carbonara. that's a nice treat once in awhile.
tonight, I have thin sliced turkey breast to use up. I might roast some potatoes and broccoli to go with that.

I was going to make a quick stir fry on Friday. DH's parents bought dinner instead. Pizza, subs and wings.
Saturday night grilled hot dogs. I've got some green beans I'm going to try oven roasting. There will also be buffalo chicken dip as the football snack.

yeah, I didn't feel like emptying the dishwasher tonight. dinner was a doctored up frozen pizza, purchased on sale for $3. I added onion and pepper that were on their way out, and some shredded rotisserie chicken swiped from the pups. oh, and more cheese. I'll pack up the other half for quick snacks. turkey breast cutlets will get cooked unseasoned tomorrow, and chopped for the pups. (dated the 28th, but I'm over the idea)

Salisbury steak with mushroom and onion gravy, mashed potatoes and either corn on the cob or a green veggie sounds good. It'll stay just "sounding good" because I'm not about to make it and since DD doesn't cook, she sure won't! I'm gonna think about it from now until our first really cold and nasty day when DSIL has a day off. Then I might act on it.

I made football food last night: Crab cakes, taquitos, small bowls of clam chowder, and a side salad with 5 different veggies with a homemade strawberry balsamic vinaigrette. Four of the veggies were from our garden.

a big green salad tonight, with a frozen spicy chicken patty diced up for protein. I went heavy midday today with a poblano and corn chowder in a small sourdough bread bowl. needed to balance it a little. lol...

Well I'm on a great streak of not cooking.
Saturday we had football snacks.
Sunday we went to our favorite Mexican restaurant.
Monday night DH picked up subs. I had training that ran until 90 minutes after the normal end of my day.

I cooked a batch of chicken broccoli rice on Sunday, using a Knorr flavored rice packet. that's this week's quick grab. the rest of the week is still TBD, and I haven't decided what I feel like doing tonight just yet.
options on the menu: - pork chops w/roasted potatoes, roasted (some other veg I need to buy, so clearly not tonight) - veggie stir fry over rice noodles - tortellini tossed in pesto, with chicken and roasted grape tomatoes - chicken sausage stuffed mushrooms
ETA: I forgot the mushrooms...

DD brought home stuff from the place where they had dinner Sunday. There was a fried chicken breast so I scraped off the breading and turned it into a chicken sandwich. It was tasty. She and DGD went to an Italian place for a late lunch and brought back garlic knots for me. I had one for dessert After while I'm gonna eat the last bit of apple crisp with vanilla bean ice cream. Maybe another garlic knot... Can't say I don't eat right
