as much as I just want takeout, tonight will be leftovers like lunch was. last night, I picked up takeout for my parents and myself. Mom painted a bathroom, and Dad was my extra hands for a few things on my to-do list, before we melted into the couch to watch hockey for the night.
last night, I picked up a lg meat lover's pizza, an order of onion rings, and a grilled chicken Caesar salad from a local Greek pizza shop. Dad and I split the onion rings, Mom and I split the salad with enough leftover for me to have lunch today. Dad ate half the pizza and took the rest home this morning. $37, that's solid.
leftover dinner will be turkey, mashed/gravy and some fresh roasted broccoli.

Today I am hoping to fire up my new/used grill and make some salmon, grilled zucchini and chicken hot dogs for the 4th. Most will be for repeat meals this week because I am hoping to eat at home until I leave for my business trip.
I may also make and freeze my new favorite: red curry mac and cheese which is amazing and I've made it twice in the last few weeks. I have all the ingredients to make it again and would love to have it waiting when I get back from my trip.
I also have a breakfast casserole to assemble. The based is sliced sweet potatoes which get baked until they're soft. Topped with sausage, sautéed onions and peppers and mixed in with about a dozen eggs. It all goes in the oven until it stops jiggling and makes breakfast for 6 or 7 servings.
Now I just have to go make these things instead of planning them.

We had ceviche for lunch today, so are going to trot down the street to the ice cream shop and have ice cream for dinner tonight.

The ribs looked fantastic at Sam's Club today. I brought a package and dropped them off to my brother in law to smoke. There were 2 slabs in each package and the bottom slab was huge.
Sides so far scalloped potatoes, salad and cornbread. Red velvet cake for dessert because I deserve a proper birthday cake.
We may invite the parents and we may not. They don't like red velvet cake but it was my birthday yesterday so I'm making my favorite.

last night, I shredded a BSCB and wilted an almost full container of baby spinach into a big saute pan with a package of Bertolli pasta. the bowtie pasta, chicken and spinach one. there's way too much pasta otherwise. there's a ton leftover, I'll have some of it for dinner tonight.

I got a recipe for rice pilaf that I am going to try out. Found it on the back of a dry apricot bag. But i believe that might not happen until tomorrow. I keep thinking of Thai so I will probably order some on the way home.

Last night I made risotto in the instant pot. I am likely to have everything I need for that, so it is a quick pantry meal.

We've been enjoying the 1/4 locally raised beef purchased recently. Last night's carne asada was delicious. This week:
Tonight: Chicken Alfredo over spaghetti squash noodles Wed: Fish, shrimp, the portobello we didn't have over the weekend Thurs: A doctored up Caulipower pizza baked on the Traeger Fri: Leftover pizza Sat and beyond: Not sure yet

I didn't have a clue, fixing some taquitoes, and tamales, canned, made rice and refried beans. I have lettuce, tomatoes, cheese, onions, salsa, figured we can make tortillas or just eat as is. I also cut a watermelon.

lazy night tonight, after being awake since 2am with no nap. 💤 I also am trying to work through the freezer and pantry for protein. tonight, I chopped a broccoli crown and dumped an XL can of chicken into a packet of Lipton rice. lots of leftovers.

Grilled steaks, salad and leftover scalloped potatoes. I'll say $16.
There's 2 steaks left from the package to be grilled. Probably will be grilled for Wednesday lunch and served over salad. I may also turn some of the leftover cornbread into croutons to go with it.
The big fridge freezer clean out is Wednesday night. Something happened and stuff melted and refroze while we were away for a weekend. Parts are on order.
I got marked down ground turkey at Sam's Club so I'm going to make up turkey burgers for myself. DH probably won't eat them.

tonight is roasted Caprese salad with grilled chicken. basically, I roast the tomato and mozzarella slices, then dress normally as a Caprese salad - thin sliced red onion, capers, basil, balsamic glaze. tonight, I'll broil the sheet pan b/c it's cooler than turning on the oven. I might add a ciabatta roll to the sheet pan and 'toast' it with some garlic butter, too.

I'm all about easy tonight, after the unnecessary stupid today. I'm waiting on water to boil, for some linguine marinara.
I'm using up the end of a box of linguine, and taking a little off the top of a jar of marinara I picked up in order to make my dad meatballs for the weekend. I might shred some mozzarella for my bowl, idk.

Porcupine meatballs with peppers and cauliflower. A win for more vegetables in the nutrition. EDIT: I had been looking for dry tortellini. I found 16 ounce bags at Target. Bought 2. I am so delighted to be able to fix one of our favorite salads when it's hot.

We are swimming in produce right now. Tonight is burgers with leftover potato salad and corn on the cob. Tomorrow is spinach salad. Tuesday will be butter chicken with leftover rotisserie chicken. Wednesday grilled brats with potatoes, peppers and onions. Thur is Happy Hour with SLAP. Friday, have invited friends to the club for prime rib dinners. If they bail, I have shrimp cakes with ceasars salad on the menu.

Friday night we went out with friends. First time in a long time. We tried a new place and it was good.
I had a Caesar salad and DH had wings. We split a pizza. They have a wood fire oven, it was all excellent.
Saturday night we had a very late lunch/ early dinner at the baseball game. We went out for ice cream at a local place when we got home.
Sunday night is taco salads.
I have some ideas for the rest of the week. Getting back in the swing of cooking.

I pulled some pork strips from the freezer yesterday, intending to make pork fried rice. there was way more in the package than I thought - almost a full pound! so I cooked it all, and set aside most of it for PFR tomorrow. tonight, I mixed a quick stir fry sauce and chopped veggies. that poured out over some microwaveable noodles. easy peasy.

last night's pork stir fry used up the last of the bottle of tamari on my counter. I went to the grocery store to buy another to use in PFR tonight, and it seems to be one of the casualties of the store reorganization (lots of things I would regularly buy are no longer available there. I already hated that store, this didn't help anything). but, I did find a vegetarian "oyster flavored sauce" that has no seafood in the ingredients list. I'm not going to question how they make it work, but I don't know what the real thing tastes like anyway. consistency looks like the real thing, which is what I need for recipes. I put out a request on FB for friends to share their faves that'll for oyster sauce, and I'll ask the same here. this is definitely my favorite find in awhile. 🙃

Oyster sauce makes a good glaze. I make something similar to this: linkIt also adds flavor to any Asian noodle dish. One of my favorites (I add a teaspoon of grated ginger): Pancit BihonThe uses are endless: Asian salad dressings, marinades, veggie dishes, add to soups, it goes on and on. If it is like actual oyster sauce it does not take a lot to add big flavor, so start sparingly.
