I was checking furniture loaded on my Son’s Truck, when I jumped down, I landed wrong on my ankle. I iced it and elevated it. My ankle seems ok, but I am afraid I might have an issue with some other bones in my foot.
My dogs are keeping me company. Watching Virgin River, Season 2. Kids should be back in about an hour. DH is painting at his office if I need him, he is a phone call away.

hugs,bean. dinner tonight was not the planned carnitas casserole, I'm too damn tired. I ended up making myself a double decker black bean burger, with guac and pepper jack cheese. these burgers are tasty, similar to a recipe I found awhile back. just without the work. 😉

We had 3 pork chops, end cuts, with fried potatoes, steamed cauliflower, and I made cheese sauce. It was good, very little left. I had cauliflower and pork no potatoes.
I may make lemon bars later, will see.

Making the chicken alfredo I didn't make Friday night. We went out instead.
Tuesday night I'll do something with chicken and we'll eat the leftover mac and cheese I made for Sunday's cookout.
Wednesday night we leave for vacation.

I was undecided, with a few options. my sister picked ramen, so I went with it. I added cooked chicken and roasted garlic, and not nearly enough veggies. oh well, it hit the spot.

I went to the Jewish deli. Supper will be hot , fresh bagels with a shmear of Jewish chopped liver.

I made so fabulous pozole! The red kind, not the green one. can you share your recipe? I saw earlier you had said IP, which is even better. TIA! I don't measure when I cook, so take everything with a block of salt. I use about 3 pounds of pork, 4 or 5 cloves of minced garlic, a half an onion, 2 bay leaves a dozen guajillo peppers with no stems or seeds, 3 tablespoons of chicken bouillon, a tablespoon of salt. Put everything in the IP for 20 minutes. Let the steam out and set on saute. Blend the peppers and some of the liquid to make the red sauce. Discard the bay leaves and onion. Rinse 2 cans of white hominy and add to the pot. Add the sauce back into the pot. Add salt/bouillon to taste. It will change your life. ETA: crumble a tablespoon of oregano into the pot and stir after the soup is done.

thanks. I've never used bouillon before, I thought it was a solid or a thick paste. no?
tonight, I've got options. I have a package of BSCB that I need to break down for the freezer. I could keep one and cook that (how, TBD. suggestions welcome). or, I could just pull a portion of carnitas casserole and reheat. or, I picked up a package of turkey breast cutlets for some reason. I could make piccata with that, and just freeze all of the BSCB. I have a bunch of veggies that need to be used up soon, too. things I roast, so that needs to happen *before* the heat wave later this week.
what say y'all here? pick my dinner, please.

Tuesday night leftovers to clear out the fridge.
Wednesday lunch copy of Outback's Alice Springs chicken in quesadilla form. I have a package of baby Bellas to use up and some bacon.
Wednesday dinner at the airport.
Quesadillas and chicken alfredo are what I've made from the big pack of BSCB. The rest will be frozen.

update: I discovered some corn cobs I forgot I bought last week, and they were still salvageable! I ended up roasting what I cut off the cobs, with some diced jalapeños and seasonings. 400 degrees for ~20min.
for dinner tonight, I tossed some of that roasted corn with some fresh diced tomato and red onion, with a little lime juice. that went nicely with the leftover carnitas casserole.
while stuff was cooking, I did a bunch of pup food prep, so I'm now done for the night.. I'll deal with the chicken tomorrow.

Leftovers. I made pozole on Monday. Last night was taco Tuesday. There is plenty leftover, so I'm not cooking tonight. I'll cook something bigger tomorrow so my kid has leftovers while I'm gone this weekend.

We made our first "Home Chef" meal last night. The portions were not stingy at all. Granted, we ate a bunch of chips and guac while cooking - but dinner was plenty filling, with leftovers.
It was pretty tasty. Better than fast food, so we were all happy.

I've returned from a productive and relaxing 4-day weekend. Last night: Ground beef burritos in low carb tortillas, topped with an avocado mayo mash, with seasoned riced cauliflower. Tonight: Blackened cod, seared scallops, sautéed asparagus. Possibly breaded shrimp, too, depending on my mood. Thurs: Slow Cooker Crack Chicken with veggies on the side Fri: Food truck fish and chips Sat: Brisket and trimmings at a graduation party Sun: Grill/smoke Traeger something And, I will add, Monday's ribeye turf and lobster tail surf with bacon wrapped asparagus was divine. DH did a good job.

We are finishing a roast that has been going into Philly Cheese Steak sandwiches for several days. The different sides have been broccoli cheese rice, macaroni salad and mashed potatoes. Both of us choose fruit we like. I had frozen mango a couple of days. Finished the frozen blueberries. He likes the small fruit cups.

I made a chicken stir fry tonight, with half of one of the BSCB from that huge package, and swiping some rice from the pot I cooked for the pups. winged the sauce, and don't love it. oh well. protein and veggies, and no processed crap.

Hubs said he and DIL were going to IHOP for breakfast. That's good.
She said yesterday she was walking the dogs and another attacked them. Their one dog Basil is a good old dog, he wouldn't both anything. The other Yoshi, is a high spirted Korean dog. She said she got scared and tried to get out a pocket knife, sounds like she cut herself. Man they are having a time right now.
