Happy Monday! Let's do this! Last night's smoked Cornish game hen were SO good! Tonight: Shirataki noodles with veggies and shrimp Tues: Chipotle fish tacos, mashed avocado, eggplant fries Wed: Crock Pot meatloaf and turnips Thurs: Take out Fri: Salmon, breaded shrimp, veggies Sat: Neighbor twin boys BD party so . Their mom said they want hamburgers and mashed potatoes, LOL. Sun: Grill/smoke something Memorial Day: Surf and turf featuring lobster tails Have a fantastic week, everyone! Here's to gorgeous weather. I wanna come to your house for dinner. You always have such a great variety and always sounds yummy!

DD wanted to go to a local Mexican restaurant. She only likes quesadilla's from them. The last time we went wasn't very good. Oh my, have they improved, the salsa was excellent and I had a pork rib special with lettuce, beans, salad, and lots of onions and peppers. It was so good. Hubs said lets go out for dinner other then Friday and Saturdays so it won't be crowded. Doesn't matter to me.
And hey we sold the boat today, so good day. And the one renter paid their rent for May and June, so a good money day!

I just signed up for home chef. I just can't do the whole decide, buy, cook, clean cycle anymore. Maybe pre-deciding and having the food delivered will help me.
I chose Home Chef because my friend said it was her favorite (she has used 4 different companies). So, I will use this one for a bit and if I like getting boxes, I can always try another company.
I suspect it won't be enough food for my hungry, hungry teenagers.

I have never been able to pull the trigger on a service like that. I've been close.
I do have several recipes/prep methods I got from browsing Hello Fresh recipes.
Bbq chicken, hashbrown stuff leftover from Sunday and green beans for dinner tonight.

For the rest of this week, I've got burgers for tonight, stuffed peppers tomorrow night, we are meeting people Thursday night and Friday, if I get to Costco sometime this week I'd like to make the Cliff House's Whiskey Crab soup, with fresh baked sourdough. Maybe this weekend Cook's Illustrated seafood pasta, I need to make a trip to a local fish monger to find out if they have calamari available.

I bought a Boboli thin pizza crust, to use up some leftovers. I'm torn rn on how I want to use it. I could mash leftover black beans for 'sauce' and make a chicken fajita pizza. or, I could roast garlic, spread it on the crust and top with cheese and top it with a Caesar salad after baking. votes welcome. 🙃 How much garlic do you roast when you use it on a pizza crust?

I would roast a whole head. it spreads like butter, it's amazing. 🤤 I ended up doing the fajita pizza. I am tired from being in the sun all day, and didn't want to wait to roast the garlic. next time, for sure!

Bbq chicken, hashbrown stuff leftover from Sunday and green beans for dinner tonight. In this one you can skip weeks - I don't know the rules around skipping. Could I skip every other week? That would reduce the commitment to 1 meal per week. (You have to get a minimum of 2 meals per week for 2 people.)

I usually go in once a month and pick meals or skip. If you have a stock of groceries, you can always add more meat, veggies, or sides.

Went to the restaurant where my nephew works. He waited on my and quickly introduced me to his new girlfriend. Indicated I was the first to meet her since his parents did not allow her to visit because of their covid concerns.. (unfortunately I do not think I would recognize her if I saw her again that is how brief the introduction was)

We tried Hello Fresh tonight. It was paprika chicken with roasted carrots and rice. DH and I both enjoyed it. We're having a different one tomorrow.

tonight I heated up a can of soup. just one of those days.
tomorrow, I am going to mix a batch of pasta salad for the long weekend. diced cuke and red onion, grape tomato, and a lemon vinaigrette with a bunch of seasoning. I've got pearl mozzarella for serving, I don't want to leave it sitting mixed in.
I'll hopefully finally break in the Blackstone griddle this weekend. I'd like to get some fish, I think.

We're enjoying Hello Fresh because of the new dish ideas. The paprika chicken was easy and I could do it with more pieces at a later time. I'm out of ideas, so I needed something different to cook.
We may not stay with them for very long, but I can see us starting and stopping every couple of weeks for new ideas.

I've got the most new ideas from Hello Fresh. You can browse the recipes from most of the services. Hello Fresh seems to fit our tastes the best. There are several sauces/prep methods I still use. It helps to break out of the rut.
Thursday night leftovers.
Friday night cube steak, mashed potatoes and broccoli.
Saturday night chicken alfredo and garlic bread. This is going to be my celebration meal for passing a certification.
Sunday night cookout at my sister in laws. My contributions are TBD but at a minimum a cocktail, hot dog sauce and some sort of dessert.
Friday and Saturday are forecast to be cool and rainy.

I feel you on being in a rut, thyme. I'm looking forward to grilling/griddling this summer and changing it up.
that said, I've still got leftovers to work through this week. tonight, I'm going to roast some broccoli to go with some chicken Lombardy. maybe a little pasta, idk. but there's three small pieces of chicken left. whatever is left at the end of tonight will get pitched.

DD and hubs had a cheeseburger. I fixed 3 chicken thighs marinated in Italian dressing and baked them. Took all the skin and fat off, and cut the bones out. Made yellow rice, steamed carrots, and green beans sauteed in a few slices of bacon.
I had fresh strawberries, noone else ate any.
The steroids are kicking in as I'm already hungry, really have to watch it with all they have given me. Will gain weight like crazy if I don't.
Time to hit the sack, need to get some sleep.

I've got leftovers from lunch that I will repurpose, but I haven't decided which way I'll go. lunch was a blackened salmon Caesar salad, with leftovers of both fish and greens. tonight I will probably refresh the salad with some fresh chopped romaine and some shredded rotisserie chicken. the salmon can wait til tomorrow, I'll reheat and flake it for some fish tacos.
ETA: scratch that. I'm using up the rest of a huge broccoli crown and a BSCB from an open package, with some other seasonings and a packet of Lipton rice. I don't want more salad tonight, and this will also leave leftovers to pick from this weekend. win-win.

After today’s trip to Costco, I made some adjustments. I got the crab to make the soup, but also picked up a rotisserie chicken. I’m thinking green enchiladas sound good, and I’ll make stock with the carcass. Tomorrow will be grilled strip steak with baked potatoes and green beans.
However, tonight we are getting TD’s birthday meal so are going out.

I'm bringing a blueberry French toast bake and a batch of strawberry pico de gallodinner: Carnitas casserole (I'll be eating this for days. it makes a LOT)

it's pretty amazing, not gonna lie. the first summer I found the recipe (don't believe the publish date, she must have re-posted the blog entry) I had some in the fridge all summer long. it is just so refreshing.
