I went to the Jewish deli. Supper will be hot , fresh bagels with a shmear of Jewish chopped liver.Organ meat is part of your new heart-healthy diet? What? I always liked organ meat. I grew up with it.

I'm craving salt tonight, happens once every 4w or so 🙄 I debated takeout, but I figured I'd clear some crap out of the freezer. dinner so far has been a package of PF Chang mini chicken egg rolls (~450cal for the whole pkg). it's salty enough, but these things suck. the store brand veggie spring rolls are way better. bigger, more veggies. I'll probably snack on something later on.

seeking ideas for a package of turkey breast cutlets. sell by date is Tuesday, and we're in a heat wave til well past that. TIA!
I just made chicken piccata, which is normally what I do with turkey breast cutlets. I plan to make a cuke/tomato/mozz pasta salad with a lemon vinaigrette in the morning, to have the next few days. even just grilling the cutlets would be a nice addition.

I caved and turned on the AC this afternoon, the house was 84 degrees when we got home 2h ago. we are down to 82 now. 🙄 I cooked a few things for pup meals, and now I don't want anything to do with prepping the eggplant cutlets I pulled from the freezer for myself. so those will go in the fridge for another meal. tonight, I'm boiling off a package of chicken and prosciutto tortellini and pouring over some store bought pomodoro sauce. I'm done with today.
ETA: this sauce kind of sucks. as in, I'll thaw out some of my own for the eggplant tomorrow and throw out the rest of this $4 container. New Englanders, don't buy the Tuscan Kitchen pomodoro from the cheese dept case at Market Basket.

pasta salad is made for the week. cuke, tomato, red onion, lemon vinaigrette, (serve with) pearl mozzarella. bad news - the turkey cutlets turned overnight, I felt like I got punched in the chest when I opened the fridge this morning. so that's a waste, oops. tonight, I'm going to bake off a small pie plate of eggplant parmigiana. will likely make a sandwich on toasted ciabatta and pair with a side salad. for the rest of the week/heat wave, I've got a few things to grill to go with that pasta salad/green salads for quick meals. Morningstar spicy black bean burgers, fresh turkey burgers I will mix up, and a fresh eggplant to thick slice and grill.

I am going to be working on emptying down my stores. I plan on moving sometime late next year so I don't want to deal with lots of extra foods.
I know that I will be doing caesar salad with cheese tortellini for dinner this week. I also plan on pulling out a fish fillet from the freezer and having that with couscous and salsa on the side.
I need to thaw ground turkey so I can make taco's.

the sauce I thawed yesterday was just water, so I did something else entirely. I just finished frying off some chicken cutlets (2 non-mutant BSCB), and I refreshed the eggplant in the fry pan as well. I've got a batch of basic red sauce hanging out on a burner, to build a small eggplant parm stack. I might parm a cutlet as well, idk.

Jambalaya with andouille sausage, chicken and shrimp. I have Famous Dave's corn bread muffins and a salad to go with it. I had all the ingredients and it sounded good (smells great simmering)!

I miss jambalaya, but with an adult-onset shellfish allergy, I know what I'm missing sometimes. this is one. I haven't been able to figure out the right seasonings for this dish, just curious what you did.

I sort of followed this recipe www.allrecipes.com/recipe/220126/chef-johns-sausage-shrimp-jambalaya/For spices I used no salt Tony Chachere's (you can buy it from Amazon), cumin, paprika, red pepper flakes, minced garlic and onion flakes (I didn't have fresh onion). I used Rotel tomatoes and royal blend rice (texmati, brown, wild & red- it's what was in my pantry). I also used 4 c low sodium chicken broth (again what I had) You could absolutely make it without shellfish. It had just the right amount of heat and great flavor. Plus it was super easy!

thanks! I saved the link, will definitely try it out. I used to do a boxed (Zatarain's, low sodium) dirty rice a lot a few years ago, adding ground pork. I haven't seen the l/s version hardly anywhere, so it's been awhile. lots of similar seasonings between the two.

The recipes aren't difficult, but you do have to do some dancing on some of the menus. We'll have the siracha talapia or the ginger chicken tonight. Both of them use fresh ginger which is new to me.

What do you mean by "dancing"? Last night we had a creamy pasta shrimp thing from Home Chef. Later this week I bought one of the "oven ready" things. You just all the ingredients into a provided pan and bake it. It is a Asian noodle sesame thing.

You just all the ingredients into a provided pan and bake it. It is a Asian noodle sesame thing. Where there are multiple things going on and they all want to be ready around the same time. So you're back and forth between burners/oven/cutting board to get it all done.

Something involving pork steak. Anyone got any ideas? this pork schnitzel with mushroom sauce is pretty solid. I wasn't a fan of the red wine in the sauce the first time I made it. subbed in some dry white wine next time, and that's how I make it.
