I'm housebound for at least this week, with Gimpy McDoodle recovering from surgery, so I'll be taking advantage of the freezer and pantry this week.
for fresh cooking - I made a big batch of chicken broccoli alfredo pasta yesterday, to pick from this week. in a few days, I'm going to roast a stuffed half pork tenderloin for a few more meals. what that stuffing actually is, idk yet. if anyone has recommendations for stuffed pork loin, please speak up! I've got apples, mushrooms, spinach, many different cheeses.
the bulk of the rest will be filled with breakfasty dishes including tater tots and cauli/broc hash browns, frozen turkey or black bean burgers, and some basic salads if friends are inclined to drop off some more produce as the week goes on.

Angel hair pasta and veggie tomato sauce, home canned. I forgot about the garlic bread in the freezer, so didn't have that.

Tuesday night I made a caprese inspired dish with chicken and zucchini noodles. I don't like tomatoes and I didn't have any so I skipped the cherry tomatoes the recipe called for.
I pounded a big chicken breast thin and seasoned with an Italian seasoning mix. I sauteed that then sauteed some garlic and crushed red pepper. I threw the zucchini noodles and some basil in for 3 minutes. Sliced the chicken and cut up some fresh mozzarella and added to the skillet at the end.
DH approved. Trying to get some more veggies in and fewer carbs. I can't physically do low/no carb but we are trying to cut back a bit. Mainly to get more veggies in.

It was hot dogs tonight. Tomorrow will be chili from the freezer since we are supposed to cool down AGAIN! Need to us up that huge container of chili. I'll likely have my normal peanut butter & butter sandwich with my chili. DH just has crackers.

Our chili was good!
It's going to be a Hamburger Helper tomorrow night....beef & noodle since that's the only way I can get DH to eat noodles. I haven't decided on the sides yet. Oh, & it's homemade HH.

last night was a carton of poblano corn chowder with canned chicken mixed in. wasn't very hungry, but still needed to eat something. tonight, I'm making this stuffed pork loin. I've got a 2.5lb piece that I'll cut in half first, freezing the other half. roasted Brussels and maybe mashed potatoes for sides. I need to hit the grocery store today, will plan out the rest of the week soon. ETA: the batch cook meal for the week will use up some roasted garlic chicken sausage I have in the fridge. I added broccolini to my shopping list, I'll toss both with orechiette pasta and a lot of grated cheese.

Grilled steaks, mashed potatoes, salad and rolls. It's a staple, I was gone last week and didn't cook, and my kids love it.
And I have a variety of leftover for lunch the next 2 days. Steak, gyro's, sausage and brisket plus potatoes, veggies, salads etc.
I am in a bit of a rut with meals though. Maybe I'll plan a few for next week since all 3 of us are now home for the summer.
Suggestions??

jelloshots4all, what I find helpful is having a theme for certain days, so it narrows choices down. ie Meatless Monday, Taco Tuesday, a fish night, take out on Friday, etc. It depends on what proteins you have on hand.

Last night I made Carne Asada in the instant pot. It turned out really good. I also made pineapple salsa and quick pickled jalapeños. My son tried to make homemade tortillas. They did not really turn out. He announced this was his summer project and he WAS going to learn to make a perfect homemade tortilla. Power to him!!

I picked up a beautiful piece of salmon at the fish market, a large enough piece that the pups will get some, too. haven't decided what I want to do with it just yet. blackened over a Caesar salad, or over linguine in a scampi sauce, those seem to be the frontrunner options. obv the pups will get plain unseasoned, though.
ETA: I just surveyed the contents of my dishwasher, and I don't have room for more pots and pans in this load. decision made, Caesar salad it is!

I'm debating Chinese takeout, to have leftovers. I also want spicy yellowtail sushi. hmm....
ETA: $35 later, I had sushi and gyoza, and there's a whole order of vegetable rice noodles for quick grab lunches this week. the spicy yellowtail roll wasn't nearly as spicy as usual, but it still scratched the itch for sushi.

I had no plan. DH wanted shrimp salad so we ordered from a local place. I just got a bunch of sides to go with my half of the quesadilla appetizer. Bacon cranberry Brussel sprouts, onion rings and Mac n cheese.
I had salad for lunch lol.

I roasted a pork loin and made fried rice -- enough left over for DH to have another meal out of it. Tomorrow I am going to combined ground turkey and some vegan "meat" crumbles with red kidney beans and make chili. Neither of us loved the crumbles on their own, but mixed with ground turkey I think it should be fine.

tonight, I reheated the rest of Friday's lunch. it was too hot to eat a lot.
this week, I have ground turkey and beef to use up, we didn't end up making burgers today. beef will go to the pups, maybe the turkey too. idk yet.
I'll survey the produce inventory in the morning and figure out the week.

I thawed cooked shrimp, then put them on ice, Yeah, LOL! Made shrimp sauce, with catsup, horseradish, and Worcestershire. Made a salad from new garden lettuce and green onions. Had to use purchased tomatoes though, still good. And hubs loves frozen french fries so I fixed him those to fill him up. To hot from working outside to fix anything heavy.

last week and my inability to get out of my own way resulted in more produce waste than I'd care to admit. but there was a package of mushrooms still okay, and spinach. I picked up a small package of BSCB, and I'm going to make chicken Lombardy tonight. that will mean more leftovers for quick grab meals (this is a good thing). tonight, I'll pair with mushroom raviolis with enough leftovers to repeat the whole meal once more. I think for the rest of the week, I'm going to just do a quick produce run for mostly crunchy pup veggies, and just pull from the freezer and leftovers for myself. there's a lot of frozen protein in there, and I want to organize myself a lot better than it has been. so, use it up and start over.
