Last night I made salmon cakes, and spiralized sweet potato in brown butter. And then I made green beans. I made so many green beans. I got tired of chewing there were so many green beans. Why can't I just buy the amount I need? Why are they packaged with so many green beans?

I'm all about easy tonight, I can already tell that my injection arm will be dead weight tomorrow. I am definitely glad I thought ahead to fry a bunch of chicken cutlet earlier this week. as soon as the ground turkey and chopped kale that I cooked for the pups cools enough to pack up, I'm heading to bed.
dinner tonight was the last two small pieces of chicken parm, paired with roasted tiny potatoes and broccoli that were tossed in pesto.

Tonight is pizza. I just want something simple and easy with leftovers for lunch tomorrow.
The weekend will take care of itself but probably I will do another stir fry but add shrimp to the veggies and have breakfast for another meal in there.

Tonight: Doubling this recipe in order to give niece1, aka new mommy, half. I'll use ground beef and pork: Easy Beef Queso. She and her DH already ate the chicken Alfredo and lasagna I made them. Wed: Out with the family Thurs: Graze night
Fri: Cod, shrimp, veggie Sat: Out w/ DH at our favorite Irish place
Sun: Grill/smoke something, veggie Mon: Shirataki noodle shrimp w/ veggie and caul rice
Taco Tues: Ground beef enchiladas, leftover cauliflower rice Fri: Take out from? Sat: An early neighborhood Easter potluck, including a smoked ham in our Traeger, and my au gratin potatoes
Sun: Grill/smoke something Have a fantastic next few weeks, everyone. Checking in to confirm the above two bolded new-to-us recipes were tasty. Am going to aim for two fish/shrimp days a week, and one meatless. DH is being a good sport, especially because he knows this is a healthier way of eating. ETA: Apparently links don't bold, but you get the idea.

tonight I am using a turkey breast tenderloin in the chicken Lombardy recipe. I had a package of two with a date of tomorrow. I froze the other, whole. will broil some asparagus as a side. there will be leftovers.
tomorrow, I'll grill the beautiful piece of swordfish I picked up today from the fish market. it's about 2/3lb, so I will get two meals from it. will pair with some pasta salad and a roasted veggie.

Happy Monday, everyone! For the next week and a half: Tonight (Go Zags!): For supper, boneless pork chops with cherry chutney sauce and spaghetti squash. For a game snack jalapeno jelly poured over cream cheese. Taco Tues: Tostadas made of cheddar cheese, with ground beef, riced cauliflower, and avocado Wed: Shirataki noodles with shrimp served over a veggie stir-fry Thurs: Fish and chips
Fri: Vegetarian salad wraps
Sat: Chicken tenders, skinny tots (made of cauliflower)
Sun: Grill/smoke something Mon: Crock Pot boneless ribs, veggie Taco Tues: Catfish tacos, veggie Wed: Shrimp two ways (sauteed and baked)

I think tonight I'll be doing burgers with a salad for dinner. The weather's supposed to turn crappy and rainy tomorrow, so will make lamb stew out of the grilled lamb we had for Easter, serve it over noodles or rice? Thursday is eye #2, so am going to punt that off to TD if he wants to make something. If it's anything like eye #1, I'll be out of it for the better part of the day. That is, unless he wants to go to SLAP and get me takeout when he leaves. Friday, I'm thinking pork tenderloin sandwiches might be good. We have one in the freezer, and will have leftover hamburger rolls from today. I'm thinking this weekend I'm going to do Butter Chicken, it's been awhile since I made that. I'll need to send him for some garam masala for that though, for some reason it was not 'pick upable' with my grocery order.

Sunday we had late lunch early Easter dinner. I contributed desserts, rolls and an appetizer.
Monday night takeout hibachi.
Tuesday night spaghetti and meatballs. I pulled meatballs from freezer from last big batch DH made. Easy dinner.
Wednesday is TBD based on how I feel since we got vaccine #1 Tuesday.

Last night I baked some chicken and had roasted carrots and brussel sprouts to go with. I also finally managed to cut up some veggies for snacking.
Tonight I will roast some more veggies and finish off the chicken.
Thurs -- veggie stir fry with shrimp
Friday -- chicken tacos
Saturday -- baked fish with couscous and veggies - Asparagus I believe.

Twice baked potatoes with a vege tray.
We have Easter candy, ice cream and will be making popcorn for movie night - so I am expecting a lot of lwft over potatoes, which is cool, because they are amazing for lunch.

last night, I met a couple friends for the late game at a new-to-me sports bar. we had a basket each of fries and onion rings, and couldn't finish the pizza pan spread of pulled pork nachos. three heartily poured drinks apiece, and the bill came to $35pp including tip. football season is now over for me, so its backto work on purging the house. last night was a nice break, even if the end result wasnt what I wanted. I wish I could remember where this was, this sounds fantastic. would love to remember who I met, too... mooch and M don't do pulled pork. but then again,, I wasn't really talking to mooch at the start of 2020. 🙄 for some reason, clicking on this thread rn brought me to page 2. 🤷♀️ and, pass on GrubHub. I don't do regular delivery, I'm sure not going to pay upcharges for a third party to deliver for me out here in the sticks.

funny that I follow up the quoted post last night about avoiding mooch with one saying I met up with him tonight 🤷♀️. the dog-friendly patio where my pups basically held court last summer has opened back up for the season. pups and I met mooch there and made a couple pup friends. we were there close to 3h, and my bill was a hair short of $60. that included 2 drinks, a chicken tenders appetizer for the pups to split, and a very large BBQ chicken pizza that came home entirely minus one slice. this will be quick eats for a few days.
tonight was all about getting pup social time, and we all needed it. ❤🐾

I told TD that I needed to get out tonight, not sure where we are going for dinner though. I'd like to go out to The Corner in Bow. It's a bit off the beaten track, but they have very good pub food. Otherwise, the club I guess.

I have one more frozen package of Olive Garden soup, so will have that and some croissants that I'm still working through from a QVC purchase. It's cold and windy today so will be a good choice.

I'm tired of cooking, can't go out yet, DD has not been vaccinated long enough yet. And hubs says I don't really like eating out anyway, say what? He has gotten to used to me cooking.
We had fried potatoes with ham salad. DD was hungry, so she ate quite a bit. I think she does need to eat a bit more then she is. I am having her eat a yogurt when she gets up in the morning, to give her something in her tummy. I don't get up early as she does. Hubs offers to fix her breakfast but she eats it sometimes, and other times doesn't. But she does like yogurt and a glass of milk.

I had grand plans to make veggie egg rolls tonight, and test casing freezing raw vs cooked. oh, and having the rest of the batch for dinner tonight. well, the coleslaw mix had turned, which I didn't discover til after I shredded four xl BJs rotisserie chickens for the freezer.
dinner tonight was Kraft dinner, basic elbows with no add-ins. and half the box went in the garbage.
